They way it works is they make a huge pot of soup and serve it until they run out. I went today, and they were done by 1pm. I have snuck in later before, but this place has been really busy lately. These guys have been make birria for generations. I think one of the reasons that they have such great birria is the 'tatemado' oven. They give the meat a little searing on the burner before it goes into the broth. There are a lot of fatty cuts and the searing really brings out the flavor in the fat. It is really affordable, but not cheap. Birria shouldn't be cheap because it is primarily meat and you want good meat. I am pretty sure this is a goat only birria place which means that I don't think that they have birria de res. There is a bomb juice place right across the aisle so get a pineapple/orange mix and get your birria on.

It's a Guadalajaran classic that is as messy as it sounds. Literally translating into "drowned torta" you'll likely need a fork and knife to attack this yummy monster. The spicy sauce adds a nice kick and keeps everything moist and delicious. Once you're done, opt for the classic Guadalarajan style flan/creme brulee called Jericalla. It's a little different than your traditional flan in that it has a burnt top similar to creme brulee. The flavor and texture is quite nice! Definitely make La Gorda your first stop if you intend to bar hop in the area. You won't be sorry!
