We receive quality cuts and packaging, all the parts we ask for, with nothing missing and nothing from someone else's meat.

I am typing this review with still some ribs flavor on my hands…read more We hat their smoked salmon yesterday, plus pickled carrots, and it was awesome. I am a smoker myself, and I am usually very skeptic about any ribs I have not smoked myself, but I wanted to give this guys a try. And I'm so happy we did. The ribs are delicious, on Tuesday they are served right off the smoker. A-ma-zing. The best smoked ribs I've ever bought. This small store is a gem in Ouray. If you are camping, picnic-ing, or your hotel has some BYO dining area, don't think twice!

The name speaks for itself - great selection of meat and cheese. The lady who helped us was very…read moreinformative and friendly. I got a bit too excited and bought a few different types of fish jerky without looking at the ingredients (assuming it would be pretty healthy) but when I looked at it later besides fish it had lots of other ingredients that I am trying to avoid, so not so healthy after all. They do have some unique stuff, like locally pickled jalapeños and garlic, some meat, etc. A lot of the cheese they sell can easily be found at a regular store in Denver but, of course, at a muuuuch higher price. I understand it's a pretty remote location, which means tons of added costs. Overall, it wasn't too exciting to me but I really appreciate the fact that they source so many different things so there is something for everyone!

Me and a friend both killed an elk on Tuesday. We quartered them and took them to be processed on…read moreWednesday morning after I personally called and asked if they could have them ready by Saturday when we left They told me bring em on no problem so we did I had them cut steaks out of the back strap and burger the rest. I took them 2 hams 2 shoulders 2 30-36" long backstraps and a bag of next meat and various meat I had cut off the carcass Out other buddy killed one on Friday and our outfitter called and asked could they have it ready Sunday morning and they said yes so they took it there in the same shape as the other 2 we took Wednesday. When we picked up out meat Sunday morning I only had 6 packs of steaks and 63 packs of burger. I called them and asked about my steaks in case they forgot a basket in the cooler which they didn't. They told me the steaks packed for 4 had 8 steaks in them which they didn't !! They also told me they trim a lot of neck meat off the back strap when brought in already cut out ! So I took let's just say at least 60" of backstraps and I got 24" of steaks from them. Thai was by far the worst part of my first elk hunt and I would not recommend them to anyone especially if you are from out of town. On the flip side the elk that our outfitter brought to them I feel like they treated him a lot better than they b did us because he got 3 baskets more meat than me and my buddy got. I read basically this same review about them from 2012 so it must be a thing with them ripping out of owners off. I hope God deals with their hearts and they quit doing people this way !!!!

I would not recommend this butcher/processor ever. I just picked up an elk I dropped off (october…read more2012) that was deboned and had two full back straps. I told them to cut back straps into steaks and grind up the rest and add beef fat. I didn't weigh my dropped off elk but it was around 130# (cow elk) deboned clean meat. I got back 6 packs of steaks and 38 one pound bags of ground meat. My buddy dropped off a bull the day before and we picked his up at same time and his meat situation was same as mine. When we questioned them they said they trim the meat. I can understand some trimming of meat but not losing half the meat. Total rip off.
