We tried 6 of the pastries and found some of them to be more style over substance. They use more…read morestabilizers or gelatin substitutes than needed in the mousses and it makes them more gelatinous than creamy. Also many of the mousse cakes slid off their cake bases in the boxes which is poor construction. The worst was a berry mousse that was in a cute bubble cube mold but lacking in flavour. The best ones we had were the opera cake that was gluten free but tasted pretty much spot on and had the texture of a gluten traditional opera cake, the mango mousse entremet which was both beautiful and tasty. The pecan turtle cake was also good. All of them are vegan and most of our choices were gluten free but if you do have a allergy to legumes chickpea flour is used as a thickener and in the cake mix for many of the desserts. We did like that the desserts weren't too sweet and the ingredients did seem high quality.
