The young woman at the counter let me know they're soft because of the ricotta. I appreciated the heads-up, since the texture is different from a regular pancake and someone might otherwise think they weren't fully cooked. They were absolutely out-of-this-world amazing! I ordered the three pancakes and only afterward noticed that you can order them individually. Three was definitely too many for me--I made it through two and was stuffed, so I left one lonely pancake behind. I also ordered a side of bacon to add some protein. They also have the cutest little French market inside, with a whole freezer full of items you can take home and bake yourself. And they just introduced some new menu items today, which will be around for the next couple of months: pumpkin chocolate chip pancakes, braised short ribs, beignets, and a savory Dutch baby.
