I needed to wash up so I headed for the bathroom and was pleasantly surprised they have gender neutral restrooms. I ordered the Chipotle Chicken Cavatappi. It had cavatappi noodles in a chipotle alfredo sauce with grilled chicken, roasted red peppers, corn, spinach and gouda. It was topped with parsley, chipotle seasoning and came with two lime wedges to squeeze on top. This I would order again. It was tasty, the seasoning was nice with a kick, it had a good variety of flavors coming together. My daughter chose Garlic Bacon Crunch Mac & Cheese. It consisted of elbow noodles in a garlic cheddar sauce with bacon and white cheddar. It was topped with crispy onions, parmesan cheese and fresh herbs. That was a winner as well. She ended up boxing some up to take home for lunch the next day. We enjoyed our mother daughter time and had a great dinner. I would stop here again.

Paris Bahn Mi is the best of their kind, hands down in their Asian food and their service. Their food is great for lunch or dinner. Consistence is the key of their success - in their exquisite Asian flavors and great customer service. Their Asian food is never too salty, and never bland. If you got a little-miss-red-riding-hood in your family, she will make herself right at home in this wonderful restaurant where everything is "just right." I see tons of people coming in for their savory chicken dish, for their Pho dishes, for all of their Asian-meat-flavored sandwiches on a delicious croissant or light bread, and people flocking in here too especially for their dessert slushy drinks and boba teas. Here are the only two problems i can find with this place: 1. Their dining hall is a bit too small for their popularity; and can get crowded in here, but i see how many people get it "to go." 2. Majority of Pho in NoCo has been salty & bland. Since then, I've tried at least 5-6 places already that serve Pho...and I'm going to say...this is a Top 3 in CO, #1 in Loveland (per my taste buds). Here at PBM, there's balance issue in pho broth. I'm looking & savoring the backbone slow-simmered beef richness (usually from marrow bones, oxtail, brisket), with aromatics like star anise, cardamom, cloves, and cinnamon acting more like background notes--not the main show. Maybe it was an off day, which that would be good...that would give me hope that the broth is being made in-house! I will come back again, in hopes that PBM will validate being THE BEST in Loveland!

The gyoza came out perfectly pan-seared -- crispy on the bottom, tender on top, and packed with flavor. That dipping sauce had just the right balance of salty, tangy, and savory. You could easily crush two orders without trying. The pork belly steamed buns were next-level. Soft, pillowy buns wrapped around rich, melt-in-your-mouth pork belly. The balance of fat, sweetness, and sauce was perfect. Messy in the best possible way. And then the star -- the Tonkotsu Ramen. The broth was deep, creamy, and packed with flavor -- that slow-simmered richness that tells you it was done right. The noodles had the perfect bite, and the pork was tender and seasoned beautifully. The Gyoza was also a fan favorite with a light crispy bottom and a good filling. We tried two different ramens with two different proteins. The beef was a bit, tough and dry, but the chashu was nice and soft like melting in your mouth. The broth was also good and the noodles were nice and thin. Overall, I felt like this was a nice bite to eat and definitely filling. The only thing I felt that was lacking was the service on refilling water.
