Got a grilled catfish to go for lunch. The catfish fillet was cold, raw and not edible. Only part that was cooked was the outside which was the thin portion of the fillet. I'm very picky with my Gumbos and this one really hit the spot. Got a generous amount of the meats and shrimps (super flavorful and fresh in every bite). I would give 3.5 stars as an average of my total of 3 separate visits. Initially tried them prior to COVID and found them to be similar to other fish places. I recently decided to re-visit this past April and was happy I did so. This particular time I was greeted by non-A staff who processed my order throughly. I always request double Cajun seas and prefer grilled as opposed to fried. My order was well seasoned, grilled perfectly and was NOT DRIED OUT. This visit made me eager to return soon and introduce family to the Fishbone establishment. Unfortunately, my return visit was met with major disappointment. My order was not processed correctly as I requested half grilled and have fried. Further, my grilled options were SUPER dry and lacked the double Cajun seasoning I requested. Staff were respectful and seemed to be working efficiently however, the quality of the food was lacking and I am utterly disappointed. I feel that a return is unlikely unless that specific manager is present to avoid a lack in overall quality. If you do not enjoy a thin cut fish (the sole), go with a thicker catfish filet. The potato salad is a great accompaniment because it has a little crunch throughout. And the tartar sauce and pickle/lemon/banana pepper side are perfectly bright/delicious condiments to lighten up a fried meal. Though the cornmeal batter is light and not greasy at all!
