We had such a great experience at Fiora Pizzeria! We showed up on a very busy day with a party of 5 and no reservation, and they still went out of their way to accommodate us. We really appreciated that, especially considering how busy they were! Everything from start to finish was amazing. The drinks were delicious, the appetizers were incredible, and our entrées did not disappoint. Honestly, there wasn't a single thing we ordered that we didn't enjoy. We finished the meal with dessert, which was just as amazing and the perfect way to end dinner. What really stood out to us, though, was the service. Everyone was so friendly and attentive, and even though they were busy, we never felt rushed or overlooked. They made us feel genuinely welcome. Good potential, but the overall experience did not justify the price. I wanted to give this restaurant a fair review because it is only about three minutes from my home, and I was hoping to find a great local pizza spot. Overall, I would rate it 3 out of 5 stars. There are definitely some things I enjoyed, but there are also several areas that I believe need improvement, particularly when considering the prices. I'll start with the positives. The meatballs with sauce were excellent and were probably the highlight of the meal. The sauce was especially good, and I think using more of that sauce on the pizzas would make a noticeable difference. The bread was also good, although the butter was fairly ordinary and didn't add much to the appetizer. The plain pepperoni pizza was good, but I wouldn't consider it exceptional. The pepperoni had good flavor, but the pizza had quite a bit of flop in the center. My biggest concern, however, was the wait time. It took over an hour for our pizzas to arrive, which was difficult to understand considering the restaurant was not particularly busy. The Calabria pizza had a similar issue with the flop and was also noticeably greasy. There was also a significant amount of ricotta. I think the pizza would benefit from keeping the ricotta closer to the crust because, as it was, the ricotta would slide off whenever the slice was picked up. The service was the biggest area that needs improvement. We waited approximately 30 minutes for our appetizers and more than 20 minutes for a single beer. We also had to find our server ourselves to request silverware for the meatballs and bread. When you're paying more than $20 for a small pizza, I think customers should be able to expect more attentive service and reasonable wait times, especially when the restaurant isn't busy. I was also surprised by the beer selection. It seems heavily focused on IPAs and specialty craft beers. Offering a broader selection, including more traditional and mainstream options, would make the beer menu more appealing to a wider range of customers. Overall, I don't think this is a bad restaurant. There were definitely things we enjoyed, particularly the meatballs and their sauce. However, the combination of the prices, lengthy wait times, service issues, and pizza quality made it difficult to feel that the overall experience was worth the cost. It's disappointing because the location is extremely convenient for me, and I would have loved to have a great pizza restaurant just minutes from home. I hope these are areas the restaurant considers improving because I do think there is potential here. For me, this is a 3-star restaurant: good enough to have some enjoyable items, but not yet at the level I would expect for the prices being charged. read more

Came here with a group of about 20 and was impressed by how accommodating the staff were. Everything came out quickly and everything we tried was delicious! I ordered the El Ranchero with added chicken -- basically an elote/esquite-inspired pizza with corn, pickled onions, and tons of flavor. Always a pleasant time at Fiora. Service was attentive and gave good recommendations for the dishes. We stuck with calabria pizza- this is a must! Creamy ricotta paired with spicy sausage and hot honey, the flavors all complement each other so well. The spaghetti and meatballs tasted good too. The ricotta dish was a big portion. Our first time here, their hours are not convenient but we happen to be in the area and Friday is one of their early days. It was worth the stop. When I saw the wood fired pizza oven I had to pick a pizza for lunch. They have many topping options with a few standard choices. The sausage i picked was very tasty and the dough is everything. I'm really impressed with what the new ownership has done here. The previous owner moved into a barren strip mall, but created a spot to build community. The couple that bought it, was the right team to steward this gem. They've built upon the previous owners foundation, yet made it their own. The staff is cross trained and you will see them doing everything, usually not a fan of this because it means slower service, but the ambiance here is meant to slow you down and connect to the food and moment. Service was amazing everyone was friendly, explained the menu very well, & since it wasn't busy our server checked up on us frequently. The real candlelight dinner provided a very romantic date night. Started off with their specialty cocktails and a seasonal cocktails which was perfectly made. Received a generous portion of food for the entree. Highly recommend the Rigatoni Alla Vodka! The more things change, the more they stay the same. Fiora Pizzeria is the former La Volata (which has been successfully around for years). The décor and layout are the same, even the pizza oven - which is a good thing. The menu (this evening we only ordered one item) is, also, basically the same (and also just as pricey). We didn't have reservations and so we were seated at the bar. (Note to self, one will still need reservations: as in the past.) We enjoyed their Charcuterie Board (full size). Even though the Full Board only comes with 3 cheeses and 2 Salumi, it was more than enough for the 2 of us. We really enjoyed the variety of the cheeses and salumi: ranging from soft and sweet to dry and savory. The accouterments provided an abundance of enhanced textural and palate combinations. Unique for Redlands, their oven house toast added a crunchy texture and earthiness with each bite. We've enjoyed the prior establishment and really enjoyed this new one. read more

When we sat down, our server took our drinks and appetizers order pretty quick but then things seemed to slow down. Drinks took a while to come out. I ordered a pizza to go and it was fantastic. It was so flavorful, so crispy and had so many toppings! I literally ate a piece before I was even able to take the picture as seen below! Everybody I met while I waited, from the hostess, to the servers, to the bartender, and even their spectacular head chef were friendly and so welcoming! We really REALLY love this place. My family and I have been coming here since before the ownership change, back when it was La Volata, and it's still our absolute favorite restaurant in Redlands!!! Every time we go, we're reminded why we keep coming back. The staff is so kind and welcoming, it honestly feels like you're being taken care of by family. The service is always amazing, just consistently thoughtful and warm. We always start with the wood fired confit garlic with house toast. Garlic lovers will be in heaven!!! Then we usually get the classic pepperoni pizza, which is hands down the best pizza in Redlands. Everything tastes SO fresh and perfectly made. My go-to is the spicy fusilli vodka pasta with Calabrian chili, parmesan, and basil. I always add sausage and mushrooms, and it's honestly my favorite pasta in ALL of Redlands. It has spice to it, but they'll adjust it if you want, which is nice. You can tell they care about the food, the experience, and the people coming in. Let's get a few things out of the way first. 1. Service wasn't perfect but very good and friendly. 2. I really like the revamped interior of Fiora. 3. Our Caesar salad was fantastic, the best I've had in ages. So. What went wrong? The pizza. The signature reason for Fiora. When this place was La Volata it was very difficult to decide if this was the best pizza in town or Bricks and Birch. B&B won by a nose, but Volata won for the fine dining/date night experience. But now the pizza at Fiora isn't quite what it once was. Due to inflation and tariffs, importing the proper flour is rather pricey. So Fiora opted for a domestic (?) sour dough flour which reduces cost and even nudged the pizza pricing down a bit. The problem is that Fiora's pizza is no longer competitive in Redlands. It's okay (which is what 3 stars means on Yelp) but I've had better, including the pizza served at the Food Hall by the slice. When that pizza is just out of the oven it is four times more savory than this pizza. Understand I'm talking about the dough. The toppings on our pizzas were oddball delightful, a signature of such pizzerias. And these days I have to avoid red sauce, and both 'white sauce' pizza offerings didn't disappoint. But I'm afraid that I can't return to Fiora for pizza, which is sad. I know they offer some pastas and such but seriously I can get those at ITALIA BELLA in Yucuipa. So my apologies to the new owners but this is just what my Italian tastebuds are telling me. I make pizzas at home and know dough. The place was packed on a random Wednesday night with an undeniably SOUTH Redlands vibe. The staff seemed a little overwhelmed but they were still pleasant.
