I mean seriously...why have I been wasting my time driving all the way to Bozeman? We loved it here! The entire staff is so incredible and friendly. Nothing like a little small town hospitality and good eatin'. We started off with the bar pretzel. My husband was a huge fan. It's not a traditional, doughy pretzel. It kind of reminded us of a light, fried donut. One that you would get at the carnival - a little sweet, a little savory. The queso that came with it wasn't my personal favorite but it was okay nonetheless. What's better than a grilled ribeye? One that's smothered in mushrooms and onions, of course. Our steaks were tasty, no additional seasoning needed and worth the price. The veggies were okay. I try to avoid bell peppers. I opted in for a baked potato and my husband ordered the fries. Both were great. Our meals also came with a slice of Texas toast but it wasn't quite toasted enough for me. I also ordered a lemon drop martini and let's just say the bartender wasn't shy on the pour. Not sure what they use as their well-vodka but it came with a burn. A few small notes to consider but overall, we had a great time and will certainly be back.

At a near century old establishment serving steaks the whole time is a hard thing to do. There are lots of restaurants that pivot and change and use burgers to get by, but steaks the whole time is a work that needs to be celebrated. Sure Texas is known for their cattle production and Nebraska for their grain grown to feed cattle, but the beef here, is grass grown, local that could have walked here and there is something to be said about that. That's more than dance with who brung you, but rather eat em where they lay. Apparently this used to be a Butcher Shop / Bank, interesting combo before 1937. Family owned and operated for generations. I came here 3 times while I was passing thru they do alot of things well. The BYO burger upgraded to Bison is a rarity and a must. The Fried Chicken sandwich is hearty and balanced with the horseradish, tomato, pickles. It doesn't even need cheese. Rocky Mountain oysters and tender with just enough chew. The breaded cheese curds hold up well to dipping sauces which most normal curds dont. Rocker sauce is good, but never figured out what was in it. Tangy, sweet. Loved the Wedge salad, the ranch was outstanding. Prime rib after 5pm, upgrade your sides to loaded baked potato and a wedge side salad, it's worth it. The 10 oz is more like 12 and the 16 oz is more like 18. Great crust and seasoning, zesty horseradish. Wall to wall pink, tender, juicy. No sauces here like au poive or a bernaise. Save room for dessert their carrot cake is moist, soft and sweet. the peanut butter pie is a downhome classic and the oreos, my god. Service is great, prices are good for the area. Ambiance is excellent. It's a great representation of what an area can do without trying to be like someone else. I actually had their shrimp which is odd being so far from water here, they obliged me to get them all 3 ways if I ordered 2 orders.

It's especially nice when some other local steakhouses are no longer around. The ambiance definitely had a country western theme. We ordered Rocky Mountain oysters as an appetizer. I've had them in numerous other places and I thought these were the most "Stringy" or "tough" kind of like there were strings of meat that didn't want to let go... so it wasn't incredibly mouth pleasing but I know it's probably more the bulls fault than the restaurants fault! prime rib I had was cooked very well and the au jus had good flavor is probably the reason for the 4th star. They did forget my mushrooms though so it keeps it at a 4 star for me. We will be back though to try it again. The bar next door has a large dance floor with the live music so that is nice.

The place is "underground" so to speak - so it had a very attractive setting for dinner. The bar area is HUGE. Great selection of local MT brews which is always a plus in my book. My daughter ordered the Cooper Burger ($19), SIL ordered the Bison Ragu ($29), my bride ordered Brussel Sprouts ($16) and I ordered the Pan Seared Trout ($29). Everyone was very pleased with their selections. I personally loved the trout - it's seasoning and was cooked to perfection...along with the broccolini and sweet potato hash it was a great choice. Service was super friendly from Kendra. We recommend and would definitely come back again!

For dinner I had the special which was short ribs with a huckleberry sauce, served with potatoes and broccolini. The short ribs literally fell off the bone and the steak knife wasn't needed. Highly recommended. The basement/speakeasy vibe was cool and several locals were dining beside me (good sign!). If you are headed to Big Sky country definitely put Copper Whiskey on your restaurant list. (There are many excellent options!)
