It was a fun and informative tour where you learn about how much more to pasta there is, especially when made the traditional Italian way, than the stuff from the supermarkets that we grew up with. read more

Ettos little store attached to their restaurant. We come here to buy the big big bag of dried pasta. It lasts us the whole year and it's delicious. We only wish they open a little later since we always miss the time window. We would also like dried pappardelle. They have the refrigerated one, but not dry. I loved Etto's restaurant, and their homemade pasta available here in store. Alas, I've gone from being one who orders straight from the menu, no substitutions, trusting chef's palate, to someone who has to watch...everything. For now, it's cooking at home while I learn to manage this disease-induced lifestyle, but I stopped by Etto Pastificio yesterday to see if they had any (gasp!) gluten-free, dairy-free, nut-free, seed-free options. (SO much to ask!) I thought they'd scoff at me, laugh me out of the place. I was so, SO wrong! Instead, I was welcomed with open arms, walked around the store and shown all sorts of options. Having cooking skills helped, too, so as we wandered, my mind expanded and creativity kicked in. I hadn't even THOUGHT about gnocchi! They had several Italian (not homemade) gluten-free pasta options I brought home to try out. We also talked proteins and I picked some up to experiment with. Tonight's dinner at home, completely on the doc-approved plan was scrumptious: gnocchi, shrimp (also purchased here) sauteed in PasOlivo garlic-infused olive oil, and grilled asparagus. I really want to like this shop, I've been there several times & NEVER gotten any help. Considering the cost of ingredients to make pasta the mark up is exorbitant. Oh well. Except it isn't as tender as they claim. Overworking makes it tough, even at al dente. The lady fingers we bought last trip were incredibly stale. (No best by or use by dating) Even after soaking for Tiramisu, the taste was off & ruined a very special dessert for a birthday celebration. A cordon bleu trained chef suggested I leave a review, so here it is. Unfortunately, the birthday celebrant received an Etto gift card (post poor lady fingers) and likely won't use it based on repeated bad experience with Etto. Save your money folks. This is my go to for the perfect pasta. When I have friends coming into town, I always stock up on their sauce see what they have fresh on hand. I'm partial to their ravioli and pappardelle pasta. Fresh and frozen options. There are so many foody items to experiment with and always turns out great. Hopping between wineries in Paso Robles, needed to find a place for a quick bite during lunch time before heading to the next tasting appointment. Recommended by Maury of Caliza winery ( a very good winery in Paso ), we went to this Italian Deli. Ordered 2 sandwiches and 1 flat bread to share. They were all delicious, especially the flat bread. You must stop in Etto Pastificio when in Paso Robles. It's kinda a checklist item, to be frank. If you arrive there early enough from out-of-town or want to sample their pasta first hand, then try out Etto Pasta Bar which seems to be connected to the market. I didn't get to eat there when we visited, but my friends did, and they swore by it. However, it seems like the other local restaurants that we ate at might be sourcing their pasta from this market as well because the freshness of the pasta we had could not be beat. I imagined what being in Italy would be like since I've never been yet. I also love how things are organized in this market. You can purchase dry or freshly made pasta in their refrigerator. They are labeled if you're an amateur eater like me. They also offer various sauces that you can use from tomato based, cream based, pesto, etc. with fresh produce you can add to enhance the flavors of whatever you plan to cook. This store is especially great if you're renting an AirBnB and want to take a break from eating out. Even if you want to buy some olives or make your own charcuterie board, you can definitely find your essential items here. We wanted to keep our Paso Robles experience going so thank goodness we had a cooler to transport our fresh pasta, cheeses, and pasta sauce in to enjoy that evening. When you're married to an Italian, and one who loves to cook, a shop like Etto Pastificio is a MUST! My hubby and I were visiting Paso Robles for a few days and made a point to visit this awesome Italian specialty shop/pasta factory/market. We were instantly transported to Italia, and missing the culture and amazing food there! Well fear not, because between the fresh pastas, sauces, San Marzano tomatoes, olive oils, wine, desserts, and more, we could at least eat like we were back in the beautiful country! Etto is more than a pasta factory (which is what "Pastificio" means in Italian for those that don't know). This is a very cool and inspiring Italian product store located in the Tin Alley development. It has all types of pasta, sauces, spreads and treats; unique and interesting. Having read about their pasta I purchased several boxes plus a bag, but yet to try them. They are available in a variety of sizes from small to humungous bags. They also had a very intriguing pistachio spread that I can't wait to try out. They have a woman walking about answering questions she said the spread is good on biscotti and other sweet desserts. The shop is a treasure trove of imported legumes, assorted dried, canned, bottled products including mushrooms, anchovies, clams, peppers, oils and so much more! The tin of assorted mushrooms from Italy are unbelievably delicious and unlike anything we've ever found in US (think pizza, soups, sauces). The coolers are bursting with highest quality cheeses, meats, olives and other charcuterie. They even have pre-rolled porchetta! (I have one on "stand by" in my fridge for unexpected food emergencies). We also always buy a package or two of Pinsa, Roman flat bread ready to take home, sauce up and add mozzarella and bake for a delicious quick appetizer or meal. Yum, yum, yum! This is my new favorite go to spot for a delicious meal in PR. Their pastas are amazing, the staff is always great, and they are dog friendly (patio in the back). If you want to get something to go, they have a delicious array of sandwiches at lunchtime that you can get for a picnic or snack. What's da matter u? Why u not shop here yet? Having grown up with Italians in Brooklyn, this place is a must for fresh Pasta & more. Since I have been busy, going all over the county as a MRC Volunteer giving out vitally needed vaccines, I look for almost any excuse to stop by both here & nearby Negranti's, one for my Pasta/Meatball fix, & the other for my Sheepsmilk Ice-cream addiction. The owner, Brian, and the other ladies who work here are quite nice & very helpful with tips. I needed to double check the proper way to cook fresh Pasta just to confirm what I read & did on my own. If you do not do it right, you will end up with a sticky starchy overdone mess. Brief guide to Pasta cooking: 0- Take Pasta out of fridge to warm to room temp. ideally. 1- Use ample water & do not place too much cold pasta in the water. 2- Water should be at a rolling boil & not overly cooled by cold pasta. 3- Cook fresh pasta for only 4 minutes or so, while stirring. 4- Drain & immediate put into pan with your choice of sauce. 5- Add some extras like chopped veggies/herbs & more garlic/cheese. 6- Plate it & add their meatballs or choice of sausage. My fav sauce type: Various amounts of butter, heavy cream, tons of garlic, onion, fresh ground fine pepper, Applewood/Alderwood smoked salt, Parma cheese, touch of lemon/ EVOO, Options: Shitake Mushrooms [or powder], White Anchovies, Red/Yellow peppers. Of course, Etto has a whole bunch of other stuff that will go with your meals, such as wine, anchovies, veggies, canned, or bottled dried goods. They have been doing a good job with being COVID-safe & please follow the stores safety guidelines, since some of the staff need to be extra-careful. Please respect that no matter what you believe. Also just down the block in Tin City there is a fine local Award winning EVOO Olive place that grows their olives in nearby Creston. Whatever you do, do not add oil to your boiling pasta, since it then blocks the uptake of sauce. The only other Italian Deli style places in SLO county that I am aware of, is at Guiseppe's Express or De Palos in Pismo Beach. GE has great NYC Pizza by the slice or whole pie, & some nice Deli items, but do not make fresh pasta. DP has quite a few ready made Italian dishes & soups for take out, and makes some nice sandwiches, but again, do not make fresh pasta. While some may think that they are getting fresh pasta or raviolis at some area supermarkets or TJ's, they are not. It is far from fresh and is merely un-dried pasta. While may be better than dried, it is generally too chewy & does not have the tender mouth feel of Etto's fine pasta. WARNING: Etto's Fresh Pasta is HABIT forming! Thanks Brian & crew! read more

Well, after going to this place, I read the reviews later. Seems like most people went to the store and bought pasta and food to go. I had done a little drinking nearby so I had to get something to eat. I didn't realize this was basically small plates and you should get more than one item to mix. I ended up with three meatballs, which were good but no pasta and my husband had a small bowl of pasta. We both like the food, but didn't really realize we should've ordered some more. Also, I forgot to take pictures. When we got there, it was probably 530 on a Friday night. Wasn't too crowded then by the time we left, it was crowded. The service was fine. I didn't get the service name as I opted out for a receipt. The ambience was OK. Lots of tables. read more

Bought the baguette, cheese and salami. $28 for a small stick of salami but it was sooooo worth it. My mistake was not having a knife to cut the salami. Update: I still LOVE ETTO! If you are looking for the perfect meal you must check out their frozen ravioli in the back. Each bag is around $15 (It's about 4 servings). They have rotating flavors like lemon, Kansas City BBQ, Korean Short Rib, Mushroom and more! Cook the ravioli at home with one of their compound butters for a few cents or just top it with olive oil, salt, and pepper! Came here on the second day of the soft opening thanks to a referral from Nick at Union Sacre. Etto Pasta Bar is next to Etto, the original pasta / fine Italian food shop in Tin City. We walked in to the restaurant, which they flipped in just 5 weeks from the previous restaurant in the space. It's clearly new, the shiny metal is mostly gone and the staff are super friendly and well informed, impressive for the second day of a soft opening. I ordered waaaaaaay too much food. I ordered the local beef ragu radiatori, vegetable sandwich, polpette, and focaccia. The pasta was cooked super nicely and the flavor profile of the sauce was great, I just wish there was a tad more beef in it. The vegetable sandwich was quite enjoyable but I wouldn't get it again unless I'm a time crunch, the other dishes stand out too much. The focaccia was nice but not the best I've ever had. My wife looooved the olive tapenade that accompanied it. In my view it was okay, but not the strong olive flavor that I expected, The meatballs were great, I have no idea what's in them but I thoroughly enjoyed them and the red sauce they were in. Etto makes my missing trips to Italy just a little bit better. When we do at home date night, we often find ourselves coming here for their delicious sauces and homemade pastas. Pair that their mini cheesecakes and you're good to go. Etto was also my first introduction to Mighty Cap Mushrooms, which are one of my favorite local purveyors. Picked up the yummiest fresh pasta and chili sauce from Etto this weekend. My son and I absolutely adored the squid ink pasta. I called myself making a bianci & neri at home done in a shrimp, garlic, butter, oregano, salt, pepper, chili flakes, spinach and the calabrian chili sauce (from Etto - soooo good!) and it was perfection!!! I wish I'd purchased more but I have a pasta maker at home that I really should be using to make our own pasta that I swore I'd start doing since I last visited Italy. I'll surely return to Etto each time I'm in the area and I'm super curious about their ramen set, really wish I could have got my hands on one of those kits - sounds delish! Great service, perfect shop, and really just the icing on the cake after our tasting at Giornata. I see how the two pair perfectly with one another although when I had both bookmarked I had no idea the relation. I picked up a couple bottles of the Giornata's Sangiovese and Barbera which would really be nice with the fresh pastas from Etto and many other meals, so be sure to visit both! The pesto and tomato bucatini was very under seasoned and I had to ask for Parmesan which looked like it came from a green container. Italian sausage had no char. The lasagne was average. What a fantastic find! Heard about this place on the Where Wine Takes You podcast. Made a point of stopping to buy pasta. So many choices. I bought two boxes of dried pasta and some frozen ravioli to bring home, and I am anxious to try some of it. They also sell wine that they make and sell in their Tin City store (Giornatta), antipasto things, olive oils, vinegars, fresh meats such as pork sausage, pasta sauces, deli things. After several years of frequenting and taking for granted Etto's wonderfulness, it finally dawned on me to share my opinion with more than just my friends. Aside from being my number 1 go to spot for food and gifts as I do alot of food gifting and shipping for family and friends, I have recently stepped out of my personal comfort zone as a home cook and actually purchased Etto's prepared, ready to put in the oven Eggplant Parmesan. Whether out of curiosity or hunger pains I cannot remember but I was delighted! The simplicity of the light tomato sauce itself was perfection. The eggplant is sliced thin and beautifully rolled and nestled in the sauce and cheese. Nicely balanced and fresh the Eggplant Parmesan had just enough sauce that I prepared a few Etto cheese ravioli, a staple in my freezer, to serve alongside the Eggplant Parmesan. Naturally, I served a simple salad of butter lettuce, purple onion and yes, fresh tomatoes also from the local farms sourced by Etto. The Etto shop has much to offer aside from food and gifty food items. Iti is a place which nurtures food ideas and information exchanges with the like minded food people "minding the store" or even another customer. Recently, Etto the shop was out of the Eggplant Parmesan in refrigerator and staff figuring on doing me the favor of getting an order from the Etto restaurant next door but the chef who prepares the eggplant was coincidentally in the store. He actually went back to his food prep site across the street and within 15 minutes I was holding the freshly prepared dish ready for my oven - hand delivered. You walk up to the register to order and food is delivered to the table. Highly recommend sitting outside! There's a little waterfall that creates a quaint atmosphere. Absolutely order the lasagna!
