The duck was roasted to perfection. The skin was so crispy and the meat just fell off the bone. Same goes for the braised veal cheeks. There was no bone to fall off of, but the meat was so tender and just came apart as soon as I pressed down with my knife. They have several of them in this place and I have found one of my favourite in Quebec: The Tribale IPA. It has a nice bracing bitterness, a well balanced hoppy flavor, strong but not overpowering, not malty, and with a nice subtle grapefruit taste that is what I usually look in an IPA. They also sell it in a can in their store, so I bought 4 cans and that same night had it taste to another IPA hunter and was very happy with the new discovery.

The brewery offers brewing classes in cooperation with Institut Brassicole du Quebec that I may try as something new to learn in 2019!

Large portion and i couldn't even finish half of it. But it wasn't dry and the veggies had a nice crunch and the lentils were very filling and healthy. The flavour notes all went together but i'd definitely say the dish was more on the healthier side. The chicken supreme on the other hand .. although healthy it was still cheesy and buttery.
