    Cant wait for this spot to open! Located in the Palm City Farms & Produce amongst a few other trucks, I found my way in front of an inconspicuous white catering trailer parked next to a seasoned drum smoker smellin mighty good. On the menu for today were ribs, pulled pork, jumbalaya, burgers and some conch fritters. I was intrigued by a BBQ type truck churning out some jambalaya and greens, so I went with that, though the fritters were also calling my name. Behind the closed screen was Chef Terance. Got my order and let me know would be about 10 minutes as my food would be cooked to order -- good for me! I heard him mixing, chopping, stirring and the sizzle going as I waited. I took an opportunity to peak my head into the smoker where there were a few pork butts, I believe, hanging out with a wonderful deep delicious bark resting. Chef let me know food was almost up, and that he's also working on a birria grilled cheese -- my ears perked up. Then, he sang beautiful words to my ears: would you like to try it with me? Ab-so-freakin-lutely, I would like to try that with you! He presented to me damn near half the sandwich on a plate w/ a cup of consommé, which I was expecting maybe a tiny bite! So, lets talk about the grilled cheese (dont forget, I also have jumbalaya and collars goin!). The sandwich was a pressed grilled cheese w/ a skirt of crispy cheese on the outside, which was great as it gave some pleasant crunch amongst the gooey-chewy inner cheese. Oh yea, more cheese was inside. Not just cheese, though. Pulled pork mixed in. And a great amount. Chef even said he thinks it needed more, but I disagreed. Its a grilled cheese, and had a great element of the meatiness to go along with it. The consommé was great, too. Rich and smoky. Chef asked what I thought could be done to take it up a notch, and I said its a great sandwich as is, but maybe something bright to liven it, maybe some cilantro or green onion for a hint of freshness and color pop. I would absolutely order it, and the next time I find my way in that parkin lot, even if its not on the menu I may just ask if he has it available! Once finished with the sample (again, half a sandwich!) I took my box of food and headed back to the office, all while contemplating: Can I drive my lifted jeep w/ a manual transmission, amongst the lane shifts, uneven lanes, in traffic, along Martin Hwy while theyre still doing the ridiculous lift and paving? I opted to wait, albeit difficult. Fortunately I work right off 42nd, so it was only a mile or so to drive. I sat down at my desk, ripped open my utensils and immediately hit the greens. And man, do they hit. Delicious! Cooked just right. Not wilted, not soggy. Nice tang. Nice bit of chew left. Only thing I wish I had was a bit of Texas Pete pepper sauce. Dont need it for sure, but they'd bring me back to my childhood in Georgia for sure! Next, the jumbalaya. Fresh made, man. How can you beat that? Rice was on point, thank God, as there was no shortage. Nicely cooked, not soggy and not just plain-jane white rice. Nice flavor, and a great char for more texture -- Chef gets it, ya'll. Food isnt just flavor, its TEXTURE is just as important. The peppers and onions, you'll never guess, perfectly cooked. Not crunchy and raw. Not soggy and overdone. Even after being in a togo container. Slices of sausage. I can still count 10+ shrimp and I already ate about 5 (I'm sittin here stuffed, guys...).. Shrimp arent tough, which as you can guess, isnt the easiest thing to do. Tons of flavor. This isnt box mix for seasoning. This is Chefs mix, and Chef gets it. Chef said he's doing his grand opening the 2nd week in December, and I am sure he'll do great. I know that I'll def be hitting it back, be hard not to when he's so close. I didnt mention above, but he has plenty of sides to pick from. He started listing them off (probably could add these to a board), but there was dirty rice, black beans, beans and rice, greens, mac and cheese, and at that point I cut him off and went with greens. Worth mentioning, a co-worker just came in with a question, stopped dead in tracks and went: WHAT IS THATTTTTTTTT, it smells amazing!

Honestly I don't think I'd recommend my friends or family to go here just because of how dry the meat was and it was that dry every time I ordered- I also don't trust the fact they smoke it- I'd love to see the process- no visible smoke rings and extremely dry- for a bbq place to have dry meat. Plenty of parking. The pavilion is set far back enough from the road, which I appreciated! The person who took our orders was super friendly and personable and left us with good spirits. The brisket was pretty incredible - tender and deliciously seasoned, and I ordered it the way I like it - with crunchy slaw on top. I would definitely return for another! The sides were incredibly small portions, in what I usually see dipping sauces places in at other takeout places, so this was disappointing.
