My husband said his was good although they put too many onions on top (if I had to guess it was 1/3 of an onion chopped-a little rediculous). He also had a Catalan margarita that was tasty. Our waiter was friendly and efficient. He talked to us about how he came to Denver from the east coast and liked it here. Even the corn tortillas are vegetarian. The flour tortillas are not, but they are made FRESH on site. I have found that I have come to love their "Big as yo face" burritos smothered in the Ranchero Sauce. The Ranchero Sauce is a milder sauce, but I like the flavor, and I just bring some of my own Ghost Pepper Powder to sprinkle on, and perk it up to standards! I love that I can eat Mexican rice and beans again and not worry about lard, or chicken broth, but with the SAME EXCELLENT flavor. Chuy's has become the only burrito I actually crave.
