I had to try it. The owner John said it was his second day open for lunch and had everything baked and ready to go. I had the beef enchilada and couldn't believe the quality coming from a truck! This rivals some of the best Mexican restaurants I've ever been to. The beef quality was amazing, the sauce was bursting with flavor and even the beans were exceptional. It just did not have a good flavor. The man that seemed to be doing the waiting and cashier and hostess, was not very friendly at all. He was pretty attentive and I got served pretty quickly. He just didn't have much of a personality. The chips and salsa were pretty good. I think it's the only Mexican food in the town and so it's fairly good considering.
