The menu includes flavors and fusions of El Paso style fare. Enchiladas, tacos, and uniquely French fried potatoes. The one thing that makes it short of amazing, and maybe unfair considering the carefully crafted fare, is the excessive saltiness. The portions are huge. Enough for two. The aguas frescas ARE homemade. None of that powdered stuff, here. I encourage you to go and support this local restaurant if and when you can.

The Main Event: Pitmaster Excellence The true test of a Texas BBQ joint is the holy trinity, and here, they nailed the fundamentals: * Brisket: This was Texas BBQ as it should be. The brisket was super juicy, delivered a profound, deep flavor, and possessed a flawless, great bark that spoke to hours of skillful smoking * Spare Ribs: A study in contrast and texture. The ribs offered a satisfying "good pull"--firm enough to bite but still falling cleanly off the bone. We got the chopped beef sandwich and decided to share it between three people since we just wanted a taste. Gotta say it was darn good & I'll definitely go back to try more. The beef was so tender and juicy that it really did melt in our mouths. The bun was soft and fresh and held the sandwich together well.

I enjoyed the drink even though plot twist I am not a big red velvet fan. I had never had a beignet, so we got the 3ct one not the valentine one. I will say it was hot and fresh and great. From what I read online Later Gator has Louisiana roots so basically you can say this was the closest I will get to one til I make it to Louisiana. The food truck manager provided different combinations of Matcha lattes made with (Oat, Whole or Coconut Milk) topped with Black Cherry cold foam. My latte of choice was with coconut milk. Wow...the combination of flavors had your mouth rejoicing. I found the latte so enjoyable to drink. The food truck manager was extremely prepared and incredibly personable. The food truck was quite eye-catching in vivid purple with their lattes even more memorable. Overall, Later Gator customers exuded a very chill vibe... Whenever I am in the area, I will definitely be trying more of their latte offerings.
