An extremely negative, inaccurate and vindictive review was posted yesterday and I felt compelled to offer some Truth to the matter.
I started the culinary program at EDCC in Spring of 2013. I will be completely done (except for a 2 credit class) mid December. If you are considering attending classes at EDCC here are some things that you can expect to happen:
Food Safety:
This is something that is drilled into the students from the get go. Starting with having your Food Handlers License before you start to identifying danger points, how to use thermometers and so much more. It goes beyond book learning as the teachers (and the upper class men) are always around to coach, teach and correct to ensure that food is handled and prepared safely.
Leadership:
The program is designed to help students learn how to be leaders. Students of different levels work together in different areas of production. The adage goes " if you really want to learn something, teach it". Though I have loved learning from my instructors, I have also learned so much from the students who were in the "lead" position of the area I was in. Most of them were young enough to be my children BUT I came to learn and I was humble enough to allow myself to be taught and wise enough to allow them to teach me! Everybody gets to have an opportunity to be a "lead" at different points throughout the program. This is a valuable skill that also can NOT come out of a book.
Preparation for employment:
This program is set up so that students receive the tools and skill necessary to become gainfully employed. This includes learning and understanding all the different aspects of food service such as; dish washing, food costs, front of the house, storage and receiving, cooking techniques, punctuality, accountability and teamwork. Just like the food industry, this program is not for the faint of heart. A successful chef, restaurant manager, sous chef ect HAS to know the intricacies of the whole business in order to be successful. Even if you own your own business, being knowledgeable and skilled in all these areas is invaluable. On a personal note, because of this program, I have a really great job (great pay and benefits) literally waiting for me even though I won't be available for another 6 weeks.
Respect:
Whenever you have a diverse group of people who have different types of learning and communication styles there is bound to be conflict. That said, in the past almost 2 years I have seen (or been part of) very little. The instructors promote respectful interactions amongst all students. They do this by modeling it, empowering students to work things out (like adults) on their own but also being available when intervention is necessary. Between my age and a physical condition, that often leads me to feel a bit of confusion, I have made many mistakes (and sometimes tears of frustration). I have never been made to feel stupid, bad or wrong. I have consistently been patiently guided towards success, encouraged and lifted. And I have seen this over and over towards all the students (the instructors have the patience of saints cause sometimes working with this group of students can seem like herding cats).
In closing, this I know to be true; Whatever you put your attention on you will get more of. I am finishing this program with so much more then I ever expected to gain.. The truth is that this program isn't right for everybody but sadly some people have to make something else wrong just because it isn't right for them.. read more
