Yes, the wait time to have 2 sandwiches made was pretty ridiculous. Now i'm not expecting Subway speeds or anything, these sandwiches are intended to be higher quality that that, but still. We were probably in the shop for close to a half hour with no one in front of us. That's a huge problem. My hope is that this is just about new staff learning the ropes and it'll change. As to the sandwiches it was a 50/50 split. The carne was quite good, my wife and I both agreed. Good ingredients, well made. The ham sandwich was where things fell down. The roll was tough and the ham seemed like the kind of ham you'd buy in a plastic pack in the grocery store, like sub-Boar's Head quality. (incidentally, this is a complaint I've also heard from another local) I'd say to the owners that the shop is a great idea and as a local I really want it to be awesome. A high quality artisan sandwich place (which is what I feel you're going for) with more forgiving hours than Homespun would be great for all of us. Hope you listen to folks and make some changes. They put some pickled peppers and onions on one and fig jam on the other and thats what i think they believe makes it worth ten dollars each sandwich! I'm an optimistic person i thought ya know they just opened maybe they just have to get their sea legs going but honestly every single person i've talked to since then has had similar experiences. First impression means so much in a small community, carne could have been a huge hit if they just put a little bit more tender loving care and wowed us. Casings are not properly closed, they don't taste the same and their Wienerle look wrinkly and outright unappetizing + they are oversmoked. Very sad to see an institution go downhill and change that quickly from being an authentic German butcher to being a subpar spot that has none of the craftsmanship and quality that they used to have. So while I was looking wondering, "This is it!?!" the lady at the counter may have saw the confusion on my face and said that if there is something I'd like that I didn't see they could cut it fresh in the back out the freezer. I asked for a cut of ribeye and sure enough they came out with a cut to the thickness I requested. I'm glad she told me to ask for something. During my purchased I inquired about other cuts I'd be interested in as the holidays approach and sure enough they have it all in the freezer 100% fresh to be cut. This makes complete sense to not have too much out because we all want the cuts as fresh as possible so if I have to ask for a certain cut every time I visit I think that's perfect because then I'll know it just came out the freezer as fresh as can be.

Many years ago there was a place called Casa Moneo on 14th street in Manhattan that catered to the Hispanic community. Now there's an on line place called La Tienda that does the same thing. We were surprised to see the variety of pan-hispanic foods and utensils there. And no wait or the inability to examine what you want. Their produce displays were impressive.
