    Housed in Rosewood Hong Kong hotel, Darkside takes its name from the colloquial moniker for the Kowloon side of Hong Kong. Taking inspiration from all things dark, Darkside focuses on dark spirits, cigars and chocolate which, when combined with the live music, makes for an altogether elegant experience. A fantastic view over Victoria Harbour and high-end art adorning the walls works in synergy with the bar's soundtrack of nightly vocalists of varying genre. Classics are the name of the game here, tried the Gibson with your choice of a vodka or gin base, Riesling wine, Mancino vermouth secco and bianco, sherry and onion essence. The vesper drink is also fantastic!

    Darkside is the lobby bar of the newly opens Rosewood Hotel. Love the live performance. The music can be a little loud for conservation, so be sure to request a table near the bar area at the back. The ambience is classy as match with the hotel image. Surprisingly the cocktails are reasonably priced compares to other hotel bars. Service could be more attentive but you can always wave one of the staff down to receive immediate service. Being not an in house guest, I was denied access from the ground level lobby which has an elevator going directly up to the bar area. The door person told me to walk up using the outside walkway which is unpleasantly long walk in this humid weather.

They walk you through each drink when they serve it, explaining the ingredients, how to enjoy it, and the inspiration behind it. It felt like more than just drinks.. it was an experience... The bartenders were super friendly, and several of them spoke English, which made everything easy and comfortable. The ambiance is exactly what you'd want: dim, chill, and upscale with a cool, laid-back crowd... It's the perfect spot to catch up with friends or wind down for the night.. They also serve food, which we didn't order at the time: but honestly, I regretted it later because everything coming out looked amazing (and I was definitely starving by the end of the night)... The vibrant ambience complimented the live music scene and some funky dance crowd. The award-winning design boutique embraces various theme rooms. To illustrate, Safari is a theme room carries African characters with Sahara desert as the backdrop setting. I salute to the Bohemian deco and bold colors when walked in. Their gourmet canapés are refined for sophisticated mixodology. The dim light adds on the chill atmosphere and compensates the Jazz live. Any sofa there can be my favorite, cosy and plenty of room to sit in. Not bad wine selection, though toasting the sexy Metropolitan demonstrates a bit more grace. The mystery tone laid the romance for dating and intimate chat within small groups.

Context setting: I'm Chinese American from the San Francisco Bay Area, where we have no shortage of craft cocktail bars with expansive high end liquor selections and innovative mixology. All that to say, I know a good cocktail. Scene: Came in on New Year's Eve. Was sat at a table away from the bar with my sister and two friends from mainland China. Only entirely-Asian group in the bar. Service: We were sat at one of the tables near the bookshelves. Service is polite but stiff. Might be a language barrier with the servers, since my sister and I are primarily English speaking, with terrible Mandarin and 0 Cantonese. Vibe: The couples at the bar (predominantly white guys...) got much more attentive service and conversation than our group. White guy bartender kept giving us weird looks the entire night. We did get the complimentary champagne cocktail when the clock struck midnight, which was nice. Drinks: Thoughtful and well balanced. Honors the flavors of the primary liquors while adding other subtle twists with nods to Japanese and Chinese flavor profiles and ingredients. 5/5, everything we tried was tasty and well executed.

It is a little hard to find, as it is inside of an old building in Wan Chai, but once you find the entrance to the bar and open the door, you will be surprised to find a small bar that is very much like the classic cocktail and whisky bars in Tokyo's Ginza district. Much like the bars in Tokyo, the service here is authentically Japanese. The Japanese head bartender was very knowledgeable and friendly. We each had two cocktails and I enjoyed both of my fruit cocktails. This bar also has a nice garden out on the deck. We didn't go out there because it was raining pretty hard when we went, but we would love to go out there the next time we visit the city.

They do not skim on the liquor. I had a good buzz after one drink. In case you're wondering, they do not serve food. Just snacks/chips. Our server was wonderful. She didn't hover, but came to our table as soon as we make eye contact. I recommend this cocktail spot. We had a good time. Not fit for large/big groups. Perfect for 2-4 friends.

We arrived around 1030, after dinner in a restaurant nearby. It was our first visit and the experience is nice. We were served by a Japanese bartender who is friendly and helpful. We had some beer, whisky and cocktails: Suntory Premium Malt on tap, B+ Creamy and rich. Of course much fresher than the bottle / can one. Hong Kong Cooler, A-: A vodka based cocktail with some citrus, ginger ale and ... jasmine tea? A very refreshing drink. Scotch Manhattan, A (*caution: this grading is only suitable for Islay lovers. Forget it if you hate peaty stuff): The bartender recommended this when I told him I love Islay and wanted a strong cocktail. Basically Ardberg 10 with Vermouth. The peaty Ardberg and the sweet vermouth match perfectly. One of the best cocktails I have ever tried.
