    The most incredible beef, pork and chicken! These guys are masters of their craft. The ribs are to die for and so is the ribeye.

    The Adobo-Q sauce is the best BBQ sauce I have ever tasted. Will make trip to Fort Calhoun just for a couple bottles of Adobo-Q.

First the Pork, I had breakfast sausage, bacon, and the other typical cuts done. The maple smoked bacon is absolutely phenomenal. Not very salty compared to store bought and the smoke flavor was really good. All the other cuts were done as I expected and packaged well. For the 1/2 beef I had quite a few cut instructions and they followed them perfectly. I was very pleased with the packaging too. Being a novice at selecting cuts they did a great job walking be through what I could/couldn't do. The store itself is pretty run down. Not that it really matters, but it could really use a makeover. One nice touch is they sell craft beers that are brewed all over Nebraska. Probably had 30-40 different beers you could buy all a cart.

They only have a few items on display in the deli case, that would be a few frozen pork chops and some brats. I mean if I'm paying $18/lb. (+) for steaks I'd like to see some on display. Prices were very high, nothing like I've seen on their FB page which made it seem like all types of items were on sale, all the time. I was also informed that all of the meat is previously frozen, so much for being fresh. There were 2 female clerks, one being much more friendly and helpful than the other. I asked for a recommendation and didn't receive any useful advice. The only remotely interesting thing about this store is that they have many, many bottles of liquor from local distilleries in which apparently you can sample for a possible purchase. Unfortunately, I was not there to sample booze, perhaps they have their priorities misaligned. There are so many other butcher shops around, I have no need to return.

    What a gem of a butcher shop. Family owned and run for several generations, apparently grandpa came…read moreover from the old country and didnt speak any English but boy could he make sausage. a shop was born and its been in the family ever since. We spoke with his daughter who now runs the store and she was so incredibly nice. Everything is made in-house and the love and care shows. We were just passing through but knew our next hotel had a bbq so we bought several varieties of sausage to try (fresh polish, smoked polish, garlic and fennel, german, hot dog plus some bacon, jerky and snack sticks). Our favorites? We loved both versions of the Polish sausage and the bacon....5 stars for those. 4.5 stars for the Italian fennel and garlic and 4-stars for the remaining items. If we lived here, we'd be regulars for sure. Apparently there is a huge festival that make all the sausage for. Its amazing that they hand make all those sausages for this festival. What a treat! If I am ever in town when that is happening, I am going! Sorry I don't recall the name of the festival. I had planned on taking pictures of the grilled sausages but I forgot until after I cut them up. The next day I cooked up the remaining sausage and completely forgot to take pics. The best (and most flavorful) way to experience this post is to go the the butcher shop, buy, grill and eat these sausages and bacon...:-).
