I am in no way an Asian food expert, but I know what I like and like what I know. Cupbop is at the point of cult status here in the Beehive State. They've done an excellent job branding themselves on social media and come off as a young, spunky, very charismatic, entrepreneurial bunch of foodies. The array of spices and flavors are plenty, but I can see why some snicker at the fact there simply isn't enough meat - a core article of Korean cuisine. My bit here is the Cupbop's food is neither bad nor bad. The noodles are always cooked well, the portion, in total, is a lot of food. I would agree with most that if I'm paying $8 for a Beef Bop, I better hear some "moo" as I pull my out my money. Do you feel me? Sweet or spicy, they have options which is another reason I like them. Same with location; now in Utah County you may reel in their permanence. When Food Truck Thursday's at Gallivan Plaza is a weekly ritual of yours and you keep telling yourself you will support a different truck each week, but you find yourself always waiting in Cupbop's line, there's no question where your loyalty is at. My usual is the B Bop (beef). I need to limit my grain intake so I ask for noodles instead of rice (the Korean style glass noodles are made from sweet potato starch), and Cupbop is very accommodating with my request. For ~50 cents extra, you can get the combo which comes with two different kinds of meat, but the beef is my favorite so I stick with the B Bop. The Cupbop experience is the sauce/level of spicy-ness, which ranges from 1 to 10. When you go with a group of people, there's always a big discussion around what level each person is getting, even when it stays constant for each person each week. Nevertheless, it's fun seeing everyone's reaction when the most fearless orders the most spicy level of the group, and the one who cannot handle any level of spice orders a 1 aka "baby" as Cupbop calls it. I'm comfortable with a 7.5 but I ask for an 8 when I want an extra kick. If you can handle mild/moderate spicy-ness, I highly encourage at least a 6.5 to ensure there's adequate sauce:food. Cupbop offers good food for a Korean food truck. The folks in the truck are always friendly, nice, and highly energetic. They are also speedy when they have 3-4 people operating the truck. read more

I went in to Cupbop fully expecting a "Korean Fusion food truck" experience, and that's pretty much what I got. First off, what the place has going for it is that it's really convenient. I walked up, placed my order, and it was out to me as soon as I had swiped my card. They have free wifi (just ask for the password) and a TV. It seems like a fun place to go. It's gives off the vibe of a place for teen girls to go with their friends to feel like they're cultured because they eat modern fusion foods and go to a university. The portable boxes make it easy and simple to take home, which I ended up doing. The staff was really nice and communicative, and the whole system seems built for an on-the-go experience. As far as presentation and style, I would rate it highly. As far as the food goes... It was standard fare for this kind of thing. I ordered the "Hot Bop" which is their version of a Deiji Bulgogi (spicy pork) style dish. It included their spicy pork, some cabbage (not kimchi or picked cabbage, just cabbage), rice, and chapchae noodles. I ordered at "Spice Level 8" which the lady at the window said was her favorite spice level "because level 10 is gross". Of course, being a white person in Utah, they asked me if I'm absolutely sure about my spice choice because it's "really spicy". Yes. I'm sure. By spice level 8 they mean that they make the meal and then slather it in a red pepper paste (it looked like Vietnamese chili paste) and Sriracha mayo (which is Americanized Thai). So don't expect a particularly Korean taste if you're used to the traditional style. Also, my meal was about 10% rice, 10% meat, 20% cabbage, and what felt like 60% chapchae noodles. I may consider asking for chapchae on the side next time. It was maybe a realistic spicy level of 5 or 6 on my personal scale. If you're sensitive to spicy food then I assume that you don't eat a lot of Asian food. Which the people working there probably assume of everybody that goes to Cupbop. I felt slightly let down by Cupbop, but at the same time I would probably go back to try more of their dishes and see if I can hit a sweet spot with spice level and food choice. Cupbop is a fast, delicious and a cool vibey place. They have a pretty simple menu briefly describing their ingredients and options. I am a die hard fan of the Toc Bop. One of the things I love most about Cupbop is their levels of spiciness that go from a 1-10. For me being raised eating spicy food since I was a little one, the 8 is a great option if you want to have it be spicy but still be able to enjoy the food comfortably. Every once in a while, I'll go with a 9 and it is a very noticeable difference in heat and flavor. I once made the mistake of getting a 9 and requesting extra sauce. If you're in the mood to teach yourself a lesson I'd go with that. I love the overall feel and vibe of Cupbop, they have some of the nicest employees who will a lot of the time start conversations with you and are always friendly. I LOVE the energy! This was my first time visiting the Copbop truck and I'm sure I will return. Since it was my first time, it was suggested that I try the combo with an order of the mandoo (dumplings). I had wanted to visit the truck for a while now, but never had a chance. Until now. Honestly, I wasn't sure exactly what to expect as I don't eat a lot of Korean food. Maybe that's why it was so good. The order of mandoo was several dumplings covered in their sweet/hot sauce. They were really good with a great consistency and a nice heat level. The combo bowl was tremendous. If you haven't had it before, it's the meats with a mix of a glass noodles over lettuce with some rice on the bottom of the cup. Although I normally like things pretty spicy, I wanted to have a chance to taste this, so I ordered with a medium heat level. In retrospect, I should have ordered it a bit hotter as it was pretty tame. Everything mixes together in such a great way that everything compliments each other. The rice on the bottom does a great job at collecting any and all juices to help finish everything off. I am certain I will be returning. Oh yeah- I was a little over anxious as I have heard about long lines and I didn't want to wait out in the cold today. But not as much as the bowl. So far I have tried the beef, pork, and chicken and I don't think you can go wrong with any of them. The only thing I would change would be to not get the noodles and just stick with rice and lettuce (or extra meat), but that's just because the noodles aren't rice noodles. I feel like there are no distinct flavors in the bowl -- it's all kind of a mush. There are very limited options (rice, meat, lettuce) and the sauuuuuuuuce...so mayo-y. I went into my first Cupbop experience with really high expectations. I'd heard so much about it from my friends, and thought that I just had to give it a try. Now, I do LOVE Korean food. I have eaten quite a bit over the years and have found some good places along the Wasatch Front to pick up some delicious, fairly authentic Korean food. So, going to Cupbop, I figured I would have another one of those amazing experiences. Well, after all the hype, I was slightly underwhelmed. Don't get me wrong, the food isn't bad, but it's definitely not authentic Korean. My wife, kids and I stopped by on a Friday night and picked ourselves up a couple bowls. The weather was great, so we were able to sit down at one of their outdoor tables to enjoy our meal. I got my bowl fairly spicy, and made sure to get the one that has a mix of noodles and rice, along with chicken and beef. That's where things didn't go exactly as I had hoped. I was expecting a beef that had that bulgogi taste. But...it didn't. Again, it wasn't bad at all, but not what I would have expected. Same with the chicken...good, but not what I would have expected. Anyway, if you're not familiar with traditional Korean food, give this place a shot. And if you are, you should still give it a shot. Just don't go into it expecting authentic Korean, that's all. Cupbop is offbeat comfort food. It's not exotic or pure or transcendent. It's not even shamelessly decadent, like the deep-fried sushi dishes it takes condiment inspiration from. It's simpler than that: a soft, warm, sweet Sriracha bowl with a few minor elements of texture. "Food truck" is the perfect setup for this kind of thing. You wouldn't take someone here on a first date, nor is it the place for a weekly lunch with your buddies. But it would be nice as an occasional working lunch, a break from the normal places inside your 2-mile radius. I ordered the Hot Bop (pork). The guy working the truck, who was very friendly, asked what spice level I wanted between 1 and 10. Which begged the question: are we on an Indian food scale or a Taco Bell scale? As it turns out, it's somewhere in between, but closer to the Indian food scale. He said that if I'm used to eating jalapenos/habaneros, then a 7 or an 8 is about right. I went with the 7 just to play it safe, but I think I will get an 8 next time. It was comfortably spicy. A few things could be improved, I think. More vegetables would be welcome (maybe some bok choy, for authenticity). The presence of two starches (noodles and rice) was distracting, and one of them could easily have been left out. I wasn't sure all the sauces were pulling their weight--spicy mayo fades into the background of almost any other flavor. And something crunchy or flaky would have been nice, to counterbalance the general moosh factor. But for the price, I won't complain too much. It's a nice carb splurge and probably the spiciest thing I'm likely to find during my lunch break. read more

Oh how I love Cupbop. It's crazy how much Cupbop has grown in popularity in Utah. While they aren't the most authentic of bibimbap's, it is fantastic and always hits the spot. This review is specifically for the Provo location but the food in all locations and trucks are mostly all the same. Service here is always really friendly. Though there's typically a huge line everywhere else, I've never had to wait super long here. The outdoor seating may be more inconvenient than a normal restaurant, they accommodate for your comfort as much as possible. We came on a rainy day and sat in the enclosed seating area and it was equipped with heaters. I always get the Combo bop so I can a little bit of everything. Sometimes they include free mandu, sometimes you pay for it, sometimes they run out. But mandu is a nice treat on top of the entree if you have the chance to try it. It is a little overpriced like others have said but not enough to steer me away from coming when I am craving it. The only complaint I have is that sometimes they sauce too little and sometimes they sauce way too much. Depending on which, the meal is too bland or too overpowering. It seldom happens but when it does, it puts a damper on the meal. read more

Food truck food sans truck (unless you count the mural surrounding the window), Cupbop succeeds despite some minor​ inconveniences. Full disclosure, I'm not a huge fan of traditional Korean food. The Bulgogi I've had in Utah has been grissly, and the other dishes I've had weren't much better. The exception has been the Bi Bim Bop. Which brings me to Cupbop. Basically they've reimagined my stone bowl standby as a kind of Korean take on ramen (minus the broth). Lots of tasty toppings, noodles, lettuce and rice. Simple, but surprisingly satisfying. The combo I had was pork (which was sort of like a spicy, moist, jerky) and spicy fried chicken (which was snappy and flavorful). The sweet potato noodles we're a nice departure from wheat (my wife is GF). The noodles gave the bowl a nice bit of texture variation, and the lettuce and rice bulked it up without making it too heavy. Any level of sweet or hot is available. My wife had the B Bop, with beef that had a similar texture to the pork. She liked the kimchee, which she described as pleasantly tingly and spicy. My dumplings were chewy and a bit nondescript, but glazed with a sweet sauce that worked for me. I doubt I'd get them again, mostly because the combo is pretty filling. Now, about those minor inconveniences I mentioned, they have entirely to do with the alfresco dining situation. Think patio furniture and an ice machine. No free tap water here or fountain drinks; bottles only. Certainly not a deal breaker for me, but be aware. Solid recommend. read more

PROs: tastes good, I enjoyed the ingredients of my dish (barbecued pork, lettuce, rice, and mung bean noodles). Also, the flexibility of the spiciness and the speed of the food prep is excellent. CONs: definitely overpriced. As someone who's worked in an Asian restaurant, I know that those ingredients are CHEAP. The dish was small enough for me to hold in one cupped hand, but cost $8. If that's in your budget, then this won't be an issue, but you can get a lot more Asian food at other joints for that price. read more

Shhh,, My second review.. It was my second visit to cupbop. I was following the cupbop page on facebook and saw their schedule updated saying they'll be at Galivan. Me, and my friends were so mad for cupbop. We had a ride which made us able to decide to go for cupbop right away. When we arrived there, I saw one of the longest lines in my life. It took us almost an hour till it was our turn to order. We were so tired and starving... One of the guys asked us ' What can I get for you?' Since we all decided as combo from the beginning, I said 3 combos please. As always he shouted '3Combos!' and the rest inside shouted along. However my order today had basically no sauce on it so it was pretty bland and just blahh also I asked for a spicy level of a 5 and my food had no spice or heat to it at all. Don't know if today was just a unique situation but I might just skip this place and go somewhere else next time if they are going to be so skimpy with their sauce. Overall not impressed at all with the food today. Hopefully today was just a one time deal and won't keep happening. Also the rice is gross, it just disentegrates in your mouth and had the consistency and texture of mashed potatoes. I'm not coming back to this place. i finally managed to make it out to cupbop last friday! i use to live in austin, texas and food trucks are really big there. utah does not have that many food trucks, but i'm so glad i found cupbop! i went around noon and was hoping that it wasn't too busy (after seeing pictures of really long lines). after parking i realized that there was no line so this experience was off to a good start! after looking at the menu i ordered three b-bops (beef bowls). my friend asked for a spicy level of 10 (the hottest) and they asked him to taste the sauce first before ordering it. it's a good thing they did that cause it was pretty spicy. we ended up ordering a 1 (for me - yes the weak one), 3, and a 6. afterwards when looking at yelp pictures i noticed they have a combo bowl. i'm not sure if i missed it on the menu or if they don't advertise it, but i really wished i had known about it so i could have tried it. now on to the food itself. it's layered with rice, lettuce, and then the beef. there is so much beef in there that i didn't feel too bad about paying $8 for it. it was seasoned perfectly and so delicious! there was enough sauce for my rice and lettuce, but not too much where things got soggy. it was so yummy and much faster than eating at a korean restaurant. i also tried the mandoo and it was good. it was a bit spicy, but not too much that i couldn't enjoy it. overall i really liked cupbop. the employees were very friendly and enthusiastic! the advantage of a korean food truck vs korean restaurant? 1) no more waiting forever for my food and 2) you don't leave lunch smelling like korean bbq. try this place - it's delicious! i only wish that they came to the south side more often so i don't have to drive so far. come to draper more please! i will for sure be back to try out the combo! read more
