The service is fast and impeccable, the food is delicious and filling, and we highly recommend this establishment at Dry Creek and University ... near the ARC. That's what you expect when you're paying barbecue prices. Sadly, none of that showed up here. The brisket and burnt ends were the biggest disappointment. Instead of having that dark bark and beautiful smoke ring you expect from meat that's been smoked low and slow, everything looked gray and lifeless. There was no smoke flavor, no seasoning, and worst of all, the meat was dry. Not slightly dry, but the kind where you need sauce just to get it down. Burnt ends are usually the highlight of a barbecue meal, crispy outside with juicy, tender meat inside. These were just dry chunks with no caramelization or flavor payoff. The sausage didn't help things either. Overall, nothing about the meal felt homemade or smoked. It felt mass produced and rushed, missing the flavor and texture that make barbecue special in the first place. What made the experience even worse is the price. Spending around $40 on a pound of meat, expecting quality barbecue, and getting dry, bland food instead. For that price, you expect memorable barbecue, not something you regret ordering halfway through the meal. The food was so disappointing that I ended up throwing most of it away and going somewhere else afterward just to get a decent meal. That's something I almost never do, especially after paying premium prices.

I would have walked out and gone somewhere else except I had two disabled folks with me and one ornery sibling who would have balked. That being said, the place itself has been designed pretty great. Excellent tables and chairs and even some high top ones. Very, very clean. Area where there was BBQ sauce and some garnishes was alone by itself and coulda been dressed up a bit more to look more enticing. Now, the food. The burnt ends, unbelievably, were not true burnt ends, at least in my book. They were cubed meat with either side burnt but they were not ends. Burnt ends need to be almost all burnt around except one edge. There were only SOME of them like that. But, ok, fine, how's the meat, how's the cut? Most of my pieces were very tough. Cut wrong or with some gristle. Not a tender bite. But I also ordered brisket. Although not as good as I'm used to, at least it was tender and flavorful. But it was sliced thin and shoulda been thicker slices with more burnt edges. My sister liked.her chicken although it looked a bit dry, my uncle seemed to really enjoy his ribs. My brother didn't seem to be as picky as me about his burnt ends, he said it was good. So perhaps my standards are too high. Sides of Mac & Cheese, creamy Cole slaw, rustic fries, and loaded mashed potato were decent, but the charred corn wasn't at all as I was expecting, just corn in a lot of spicy sauce and I would skip it. The toasted bread on the side was altogether uninteresting. My uncle did like his Breckenridge Beer Amber Ale. And the fellow at the front was really nice, although interesting it was just him, and then two cooks in the back, not what I'm used to at most bbq places which usually have a bustle of people behind the counter. But then, again, the place was empty, although had a decent amount of "to go" business. This place feels like it may not last -- it's in a great location and should have had way more people dining in -- and I think the owner needs to invest in another bbq chef who can bring a bit more magic to the food, especially the burnt ends, the brisket and the sides. I was torn between 3 and 4 stars -- were it just me it would be 3, but with the rest of my party, a 4 -- plus the cleanliness and bright atmosphere and great service, a 4 is deserved.

The Hubs ordered the Smoked Pulled Pork Sandwich that comes with bourbon bbq sauce, creamy coleslaw and pickles, and is served with fries (although he swapped out the fries for more slaw). Everything was delicious! I had my burger cooked medium-well and it was perfect; it was still slightly pink inside and moist. While the burger was very tasty, one major plus was that it was also structurally sound (all the ingredients stayed inside the bun and the bun didn't fall apart)! The Hubs also enjoyed his pulled pork sandwich. I tasted the bbq sauce and the slaw that came with his lunch and both were amazing (I dipped more of my fries into the extra bbq sauce that came with his sandwich than I did into the comeback sauce). The fries that came with the burger were crispy, not greasy and not overly salted. While I only had an iced tea with lunch, I did peruse their specialty drinks menu. Wowza, is that a read! We'll be back sometime soon for dinner so we can check that out. BTW, their food menu is more than burgers and sandwiches and there are some nice sounding items that appeal to me more for dinner than lunch (two examples (1) Hoisin Ginger Tuna: Sashimi-grade tuna seared rare, parmesan risotto, arugula slaw, (2) Pesto Cream Salmon: Pan seared salmon crusted with parmesan breadcrumbs, penne pasta, pesto cream sauce, cherry tomatoes, roasted red pepper). Despite this restaurant's location next to a boarded up vacant restaurant and being right next to I25, the interior is surprisingly nice and welcoming. And our server was friendly and helpful. So no complaints here!

It was delicious and a great departure from a typical burger. Even though the restaurant was full at 6:30 PM on Saturday, the atmosphere remained pleasant and not too loud. I sat at the bar to watch the Avalanche game, and I was very impressed by the bartenders, who were friendly and engaging with everyone. I look forward to returning soon to try another item on the menu. Keep up the great work!
