    Crafted Kitchen is a great concept for chefs/cooks or those in the food/restaurant business to prepare dishes as well as have presentations. On January 13th I attended the session sponsored by LACMA featuring James Beard awardee, Michael Twitty. The kitchen we were in held approximately 20 and Michael spoke about spices. Additionally, he prepared his famous matzo ball gumbo. I had never had matzo ball but the dish was well prepared and very tasty. Crafted Kitchen is an excellent venue for those wanting to showcase their talents without having the expensive overhead to secure a brick-mortar venue. There was plenty of street parking on Sante Fe.

    I've worked in plenty of kitchens over the past ten years of my life. From quickservice to fine dining, home kitchens, and industrial bottling facilities.....nothing has compared to the experience of working in Crafted Kitchen's shared kitchen. The most impressive thing about this place isn't the sheer massive amount of space that is hidden behind a brick wall in DTLA. It isn't the ridiculous amount of new and well kept equipment that was available to me. It isn't that somehow, even though somebody is almost always cooking (or baking or prepping)24/7, this facility is still the most immaculate I have ever been in. The most impressive thing to me was the huge community of other tiny businesses that came together under one roof. No matter how close I came to missing catering delivery deadlines, or realized I didn't have a crucial ingredient, or wanted to trash a recipe because one customer didn't like it...there was always someone else to push me to the finish line, swoop in and give me some onions, or tell me that maybe that customer wouldn't know good food if it bit them (or why they might be right!). The companies that I worked alongside became trusted colleagues and friends. We all shared that unspoken kitchen bond. Running the culinary side for a tiny, brand new, independent catering company in LA is more than a bit daunting. Crafted Kitchen was the place that made everything possible and made everything easier. The amount of work that Cindi (the owner) puts into Crafted Kitchen is mind boggling. I have seen her get up to the roof with a technician like she's spider woman. She has climbed ladders to help me reset a ceiling outlet. She has helped me find the equipment I needed because I was too frazzled to realize that the blender was right in front of my face. She has layed in puddles of dish water to stop a leak. She has given me some of the best advice that a young woman needs to hear...about staffing, marketing, self-evaluating, and most importantly knowing that you are just as worthy and strong and experienced as any of your counterparts in this business. And I literally never saw Cindi not somewhere at Crafted, whether it was 8am, 6pm, or 2am. She's a real superwoman. Oh! And let me tell you one more thing. THE KITCHENS ARE AIR CONDITIONED! You heard me right. As somebody who has been stuck on the grill when it's 100+ outside and the air blowing in is just as hot as the fire in front of you having air conditioning in the kitchen was the ultimate luxury. Thank you Crafted! For this and so much more.

We learned essential cooking techniques, kitchen basics, and so many delicious recipes that I'll continue making at home. The class itself was equally special because we had such a great group of students and truly enjoyed learning and cooking together each week. Five days later and no contact from Pam. I was so excited to take my mister to their Father's Day class. We're empty nesters and this was meant to be a special treat for both of us. He's not big on cooking classes but the posted menu was appealing and I promised to do all the heavy lifting. Ribeye Steak -- thought we'd learn some new techniques to elevate our steak prep game. Mexican Street Corn Dip and Homemade Tater Tots -- summer corn is a family favorite and the thought of making homemade tater tots was intriguing. Smash Burger Sliders -- wanted to learn to consistently nail that crispy exterior. Inexplicably, we were paired with another pair -- a single dad with an 8 yo kid. Neither the mister nor I wanted this but we didn't want to make a scene or hurt anyone's feelings. We didn't even realize we were paired with them until the chef pointed out that our mise en place tray was setup for four. Why?? 1. The Mexican Street Corn Dip which I think was supposed to be an appetizer, was completely omitted. However, we did make a grilled corn salad as part of the meal. There was no appetizer served when we arrived. 2. Instead of homemade tater tots we made potato wedges. 3. The team we were paired with was lovely. However the class was well beyond their skill level. So instead of taking on the bulk of the work for 2 people, I did the bulk of the prep for 4 people. The course description says there may be seasonal substitutions but these substitutions utilized the same core ingredients. This was more work than I anticipated and left me feeling a bit overwhelmed and behind schedule. This threw the timing off and my mister enjoyed his steak alone while I was still standing at a hot stove prepping food for 4 people. Not the fun afternoon of "us" time I'd envisioned. Overall this was a subpar experience in so many areas that mattered to us. Left me personally disappointed and apologizing to my mister for the poor planning and execution. Could have spent the same amount of money without the hour+ drive and had a better experience.

The kitchens have numbers, that are essentially room spaces where numerous pop up and culinary hopefuls reside. There is no dine in or seating. It is strictly a carry out operation. Not sure how many businesses even have websites. That is okay, and not a problem. Text and messaging are omnipresent and are powerful tools. And so far, that is how I have communicated with them, to pick up my culinary delights. I am strongly in favor to support these type of potential start ups. In my assessment, these are the grass roots culinary seeds that will one day become the awe and highlight of the LA dining scene. But very sadly, they have done a horrible job in showcasing this place or their talents. When you arrive, it is more than confusing, there are no signs to tell you where you should go. Which building? Which Kitchen? And where is the name for the business that I came for? Where is the signage? It is a frustrating exercise. Therefore, I am not surprised why several customers, like me, do not wish to come back here again.
