Cinnabar is the main sit-down restaurant in the Hyatt Crystal City, located on the second floor. I came here for their breakfast buffet. The name Cinnabar sounds lie cinnamon and bar, but it actually refers to the mineral, mercury sulfide. Interesting name for a restaurant! The breakfast buffet is typical Hyatt quality with the usual items. Omelet and waffle stations are made to order. Three items that stood out for me are the vegetable hash, tomatoey waffle, and blueberry yogurt parfait. Their black coffee was also strong. Immediate service. It can get very busy and the 2 servers are member frazzled and top notch. The food is above average hotel food. They offer a grand buffet $25 including smoked salmon and omelets. With easy access from both the lobby level (escalators) and any floor in the hotel (elevators get off at floor 2), Cinnabar is a good place for breakfast and lunch if you are staying in the hotel. Although $15 seems high for lunch, the portion size is equal to what you pay. The food is extremely flavorful, the coffee is decent, and the noise level is average-low based on the open concept of the hotel's first 5 levels (Ballroom, Event, 1, 2, and 3). Every time I've eaten here during this stay, the servers are quick to seat you and take care of you. The food has always come out hot and quickly. read more

The over arching question I had was why they had only 2 servers for the entire restaurant... yet there were about 8 individuals in suits milling around seemingly unoccupied for the majority of the time - although every so often they brought food out. This misuse of staffing resources resulted in frustration and poor service. The food was cold, and despite asking multiple times for sauces... it came without sauces, and when we were told they would be back with them... that never happened. The food was fine albeit cold. When we asked for a spilt check our server Amal said yes, and then 15 minutes later she had made multiple trips out to deliver checks, and ours did not come. I had to go up to the front to ask for the check, where I was snapped at by one of the suited individuals and told to sit back down and wait which I did. Ultimately, Amal did the best she could, I feel bad for her Having management that worked her and one other individual so hard while there were multple unoccupied workers who should have been helping. read more

Had a difficult time communicating with servers - they couldn't advise of the allergens in the items marked a vegetarian versus vegan on the menu. Ended up ordering the Beyond Burger (even though it was marked as vegetarian), the food came out quickly and I thought the patty was undercooked. I was staying at Hyatt on business and since we had limited time, we chose to eat here one night. Service was excellent. Very well trained staff and manager made sure our dinner was enjoyable. I had rock cod fish for my dinner. It was presented very well with good flavor. As expected for a hotel restaurant, price was high for what's being served. There are several restaurants within walking distance. I am glad they have restaurant onsite at the hotel, but if I have time, I would walk to others nearby. read more

A disappointing visit with a long wait to be seated. There is a wait list but the hostess and servers allow people to cut into the queue. They are very busy today due to a conference but the main reason service is so slow seems to be because of poor organization. There are more than a dozen empty places that haven't been bussed for at least 15 minutes. However, when not overwhelmed it is a good place for breakfast. The buffet is very good, with a large selection of hot (including bacon!) and cold items as well as omelettes and eggs cooked to order. The buffet staff is very friendly. Bartender has a bad attitude serving up bad drinks! Disappointed. Here at a conference and the bartender is either having a bad night or is not happy with us as a customer, either way, the drinks are made in a way that makes one think there is no professional training involved with her talent. Yes, this place is in a hotel. But a super fancy hotel with an awesome lobby (restaurant is on the second floor, but it is open concept). Fast and friendly enough service. Some of the best fried chicken & waffles I've had in the city! Ultra juicy chicken and the bourbon maple syrup was superb. Great salad options and beautiful presentation. Only con: lighting was too dim and had a red sheen that made it difficult to read the menu... Tons of Dessert choices but The flourless chocolate cake was OK and the caramel hazelnut cake was not good. Ample wine and local beer selection (and reasonably priced for a hotel). They have a managers happy hour in the lobby every day, I believe from 4 to 7 PM. No need for a reservation, there's tons of seating and it's never too crowded. read more

I was super happy that there was healthy options available. I ordered the Ahi Tuna steak and while it was good, I ordered it MR and it came perfectly prepared, but cold. The quinoa was the shining star on this dish. I finished and enjoyed the entire plate. Ultimately, while it was good, I do feel like it is overpriced for what you are getting. read more

For my one and only lunch 'out' during the furlough, we went to Cinnabar, inside the Hyatt Crystal City, directly across the street from my office. Really? Ok. Never mind. I'm over it. A furlough lunch in a hotel restaurant on a rainy day is not completely a bad thing when it's the salmon BLT with crispy hot fries and an iced tea. I was stuffed and more than pleased. The salmon filet was broiled or pan seared to my liking. And the cone of fries (why do we do this?) was plentiful and, like I said, hot, crispy, fresh. Service was swift, yet attentive. This fellow kept our iced tea filled. The décor was typical Hyatt as this restaurant is on a terrace overlooking the main lobby. I would come back to Cinnabar. I'm a fan. read more

We just went to the bar in the lobby and not the restaurant-restaurant...It's one of those hotel bars that kind of merges with the shmancy seating in the lobby. And it looked all swank and upscale and the Hyatt is a pretty nice chain and I've been to good bars in Hyatts before so I figure I can expect this to be at least decent. This is where my friend was staying and it has great ambiance and style until you realize that the throw pillows are stained with what I hope is spilled drinks and attached to the couch with elastic so you can't move them around. I mean, I'm sure throw pillow theft isn't unheard of but...really? Anyway, FAIL 1: My friend orders an amaretto sour. I order a Manhattan, specifying Maker's Mark rather than rye whiskey. He goes away, comes back moments later with no drinks in hand. Tells my friend they're out of Disarono. My friend turns to me and says, "I'm from bumble... Missouri and I have never seen a bar run out of Disarono. It's Disarono. You can get it at the grocery store. What kind of bar doesn't have Disarono?" I agree. What kind of bar doesn't have Disarono? FAIL 2: So now she doesn't know what to get so I say how bout what I ordered and she goes yeah I'll do that. Few minutes later bartender comes back with our "Manhattans." A Manhattan is a classic staple, and it's not complicated. 2 parts sweet vermouth to 5 parts either Bourbon or rye whiskey (thus my specifying Maker's Mark) with a splash of angostura bitters served up in a martini glass, traditionally served with a maraschino cherry. If he had missed the cherry, I would have been fine with it, but that was the only part of the drink he got right. He comes back with two old-fashioned glasses filled with ice. I raise an eyebrow, take a sip, the thing basically tastes like bourbon on the rocks. That's not a Manhattan. And I got charged more than $10 a head for it. I go up to him after I try it (my friend tries it, too and WTFs) and I ask if he put any bitters in it. Yeah, just a splash, do you want more? We were exhausted at this point and it wasn't worth waiting for him to screw up two more drinks so we just took our bourbon and sat down. I have a feeling he did a splash of bitters and a splash of vermouth with bourbon instead of 2:5. Maybe that would have been understandable if he mixed it up with a martini...less understandable given that he didn't serve it up in a freaking martini glass. Seriously. What kind of swank bar (not that dives don't also manage to keep it in stock) doesn't have Disarono? What kind of bartender at any self-respecting bar doesn't know how to make a classic Manhattan? It never ceases to amaze me how the restaurants in national chain hotels are run so poorly. This place is in the Hyatt, Crystal City. Crystal City is a concrete nowhere land if you have not been. I thought I'd get at least a decent meal but I was wrong. How do they mess up a wedge salad? They did. It looks like they might have washed the iceberg wedges and left all the water in. French onion soup was oily and weak. Zero flavor. The general vibe in places in Crystal City seems to be "we know you are only here because you have to be so we are not going to go out of our way for you." The staff here is adept at apologizing. They seem to do it often. This is not a place I would recommend. Take an uber to old town instead. read more

This was our second Easter brunch at Cinnabar, and we'll probably be back next year. The brunch buffet is really good, with omelet and carving stations, a lot of shrimp, salads, waffles, a kiddie bar, desserts, and much more. There are plenty of vegetarian options. Coffee is strong and is quickly refilled. Mimosas come with brunch. The service is attentive and pleasant. We've arrived around 11, and it doesn't get crowded until noon. Even then, there's plenty of food. Based on Easter brunch, we keep meaning to eat here on a regular evening to see if it's as good. read more

Came here a couple weeks ago because it was in the hotel I was staying in. The place was dead, it was 2 pm and they closed at 3. When me and my friend sat down, we were waiting for a third to come down the elevator. The waiter told us right away we need to order fast because they were closing. I asked if they closed in an hour and he said yes and walked away. 2 minutes later, still waiting for our friend and he came back and wanted our order right then saying the kitchen staff needed our order right now because they needed to close. We were still waiting for our friend and he was very irritated we weren't ready to order This was 2:05ish and again we had 55 minutes. He came by again and was not happy with us even though it had only been 5 minutes. At this point I went up to the hostess and asked if we needed to leave since it was obvious the waiter was upset we were there. She assured me there was plenty of time and I explained the waiter was telling us that they were closing and she said no we still had time. The hostess, bless her said she would speak to the manager, then she came back out and said she would take over our table. Our friend joined us and we ordered. We got the burgers, medium well. I guess the kitchen staff was mad at us or something because those burgers were still moo-ing. Bright red meat and a dry, hard bun. Our hostess was so so nice and could tell something was wrong but at the point I was sure someone was gonna spit in our food or something, so I took it as a loss and barely ate the food and left. Which by the way we were out of there 5 minutes before 3 pm, so I don't know what that original waiter was so upset about. I guess he wanted to go home early or something. I would never, ever come back to this restaurant. I would rather each at the convenience store in the hotel that charges $3 for a tiny bag of pretzels. Plus, we should have just done uber eats. I was staying at the Hyatt Regency, and ate dinner here with a large party. Despite the large numbers at our convention, Cinnabar wasn't crowded and we were given a wonderful round table with a slightly secluded setting, so we were able to talk and laugh at ease. Several of my companions were pleased at the gluten-free options. As for me, I was all for gluten, and along with other friends, I opted for the buffet. The selections were good, though this was by no means a massive buffet. They had about three different meat courses, including fish, beef tips, and freshly craved turkey with fixins. There were a few different combinations with green beans and salad. It was all good with the exception of the bread roll. It was like a round brick. One bite and crumbs shattered every which way. The big reason a number of us chose the buffet was because of the desserts on display. This, my friends, was a night to eat cake AND pie. They had a layered lemon cake and a chocolate creme pie. I had small pieces of both and couldn't finish either, but wow, were they good. Seriously, this place was worth visiting for dessert alone. read more

Great breakfasts here. Varied menu, but I like the breakfast buffet ($18). It is set up very well with a large variety of offerings.  Made to order omelets and eggs are excellent.  Outside of breakfast, I cannot testify to Cinnabar as there are a multitude of fantastic eating destinations within very close walking distance of the hotel. read more

The breakfast buffet looked good, but was very pricey ($13 without eggs, $20 if you wanted an omelet). Opted to order off the menu. Scrambled eggs were good, English muffin was under-toasted, fruit"salad" was good. Biggest issues were the prices and the service. I've been surprised at the unpleasantness of much of the staff... Quite disappointing... Update: I returned for dinner (the next day), and was pleasantly surprised. Lifen, our waitress, was absolutely adorable, efficient, and friendly -- she redeemed the restaurant in my eyes! Dinner was fairly pricey ($24 for fried chicken) but it turned out to be 4 pieces of bone-in chicken, along with a modest serving of mashed potatoes and glazed carrots. It was a lot more food than I expected, and the chicken was delicious! I'll give it an average of 4 stars: 3 for my breakfast experience, but 5 for dinner (and for Lifen!). read more

Cinnabar is a nice place to eat inside of the hyatt regency crystal city. It is close to Capitol Hill. My favorite part of this place had to be the view From your table. You looked over the whole main lobby and other floors. A lot of the people at this hotel were staying for business. I have ate at cinnabar 2 times in the past 2 years. The place has been newly renovated. I went during lunch time. There were only a few people inside eating. I had ate at cinnabar the year before and figured it would be a good place to kill some time before my flight back home to NY. The service was fine nothing to write home about. I ordered a hot tea. I also ordered a grilled chicken sandwich on ciabatta bread. The other person I was with ordered a grilled chicken sandwich with a regular toasted bun. Both of the dishes were good. The only complaint food wise when I bit into my chicken it looked a bit pink. It was not raw. But had a bit of a pink hugh to it. This concerned me a bit, but the person I was with told me it was fine. The sandwich was good. The fries were good as well. The price was a bit expensive. I felt that we ordered nothing special just chicken sandwiches. But at $13 bucks a sandwich I felt it was a bit expensive. Cinnabar is a nice place to go if you want to kill time. food was good nothing special. I would go back if the prices were lower. Staying at the Hyatt in Crystal City, Just outside Washington DC and this is the restaurant within the hotel. First night here I had their chicken wings and caramelized Brussels sprouts, both were very excellent. Second night here, I had a burger and fries. The burger was very good but the fries were room temperature, not very good. Tasted somewhat soggy. Overall, the food was better than average, beer was cold and service was very good. read more

He came and said would you like a coffee to go, I said no I would like a menu. Oh he said I thought you were the other couple that was sitting here. ( I am a single women at a fresh table) Then I order and of course he screw it up but I eat it. Then sit waiting for the check. Meanwhile other staff is just standing around doing nothing no one is in the team sprite I guess. They need a manager to take charge insisting on team success. I saw people just come in be seated by the hostess, go up to the buffet and get what they wanted long be for the server came to their table. I don't eat that stuff so it didn't work for me. It was late, and I couldn't go outside the hotel because I had baby with me. I just needed a snack so I ordered chicken and waffle from the appetizer menu. I expected an appetizer sized portion, but what I got was no where close to $9 worth. Based on the photo I expected two chicken strips and a small waffle. I got two nuggets and a 2" waffle. The chicken was decent, well seasoned, nothing special. The waffle was like a stale pancake had been smashed in a waffle iron. Waffles should be light and crisp; this was dense and chewy, but not good chewy, more like stale chewy. I got the Nutella tart as well. It was fine. The crust tastes like pre-made Oreo pie crust you buy at the grocery store and the filing was good. The hostess was very nice. Like most convention hotels, this Hyatt can seem pretty deserted on weekends. So things were very quiet when the three of us arrived for dinner on a Friday evening. The lack of numbers however did not reduce the attention and level of service we received. Our waiter cleared what he thought was "the best table" in the house and seated us immediately. He described the specials - selections of seafood and shellfish -- and two of us order from that list. We also order salads, a wedge and a Caesar, and they were served promptly. Fresh and delicious. The entrees were excellent. A smoked chicken from the regular menu and two seafood samplers from the special list. Salmon, crab cake and shrimpt. The wait checked in with us at appropriate intervals. We had plenty of food so didn't order dessert, but the waiter brought a complimentary single-serve cake with a candle to help us celebrate a birthday. We enjoyed the experience, including the low volume so that we could converse easily. I'd like to go back, but probably for lunch. Dinner was in fact very expensive. read more

HORRIBLE SERVICE! Do not go here. My husband and I just came here for a business trip and after a long day of traveling we wanted some good food and a couple drinks. He ordered a beer, and I had some kind of tequila drink that was WEAK and $14!! Absurd. We both ordered pizza at 8:32 pm and our pizza came out at 9:42 pm with no explanation and the server didn't even check on us to get refills on our drinks. The pizza ended up being comped and we took it back to our room because at that point we just wanted to leave. Needless to say we will not be going back there for the rest of our stay. read more
