So so so SO excited to have Chuy's open in Colorado! We were seated quickly, attending to quickly, our food came out quickly, and we enjoyed it quickly. I was amazed to look at my phone and see that they had us in and out in under 40 minutes! It took us almost an hour to get there! Our one complaint is that the chips had an insane amount of salt on them, so much so that they were inedible. We told our server and requested that some be made with no salt, but we never received them. If you bring in a framed picture of your dog, you get a free appetizer! We ordered the sampler, valued at almost $12. We can't wait for the Belmar location to open as it will be a shorter drive for us, but we will surely be back to this location in the mean time. read more

It is not too often that I feel compelled to give a review but this place is just that good. Where do I begin? I have driven past here countless times and had always assumed it was a standard "order at the counter" kind of a place, but it is in fact full service restaurant. Everyone we encountered was super friendly. The server was knowledgeable and even brought out a plate with all of their sauces for us to try (and yes there is a lot). You can customize anything on the menu with the sauce you like which is really nice. I tend to be sort of a chips and salsa snob, but they were DELICIOUS! Everything here is house made including the chips and tortillas. You get completely tortillas, which my husband was thrilled about. I got the chicka chicka boom boom enchilada and my husband got the wild burrito (one of the daily specials) and both were again delicious. The meals were a generous portion but too good to leave any behind. I hesitate to give a 5 star review but this place really deserves. Zero complaints here. This restaurant calls itself a Tex-Mex Restaurant, but the flavor is more of the Mexican food that is served in New Mexico, which I never could get use too as its usually less sabroso or tasty as Mexican food served in Metro Denver is. I had the Chile Rellano-Enchillada Combo Plate with beans n rice, which was ok. I didn't like the Chile stem included, the beans didn't have that flavor that could be improved with using some cooking oil, but that me! The enchilada was good. The food is served on a very HOT place, so watch it. They make the Tortillas on the spot, behind a Glass enclosure for viewing and they are very Yummy... Maybe I'll try it once more... read more

Grateful for a Chuy's in Colorado. Fresh pulled white meat chicken wrapped in homemade corn tortillas with fresh grated cheese topped with the handmade sauce of your choosing... Yes please. Stacked enchiladas are the best! Not sure why this has $$ instead of $. Not sure where you can get Mexican food of this quality cheaper?? Bonus tip... New Mexican Martini - spicy and delicious. Only one if you are driving. Also ask for table red sauce instead of the pico type salsa they give you. Its better IMO. read more

Chuy's is famous for being a huge chain in Texas, boasting Tex mex food that's almost more of comfort food. They have the classics; burritos, enchiladas, and tacos. To be completely honest the food isn't great. The ingredients just don't taste fresh and a lot of it just seems flash fried to disguise the taste of bad meat. But I will say that the margaritas, chips, and salsa are PHENOMENAL. I could survive on just those at Chuy's. make sure to get their jalapeño ranch sauce as well, it is life-changingly delicious!! We've been waiting for so long for Chuy's to come to Denver and this did not disappoint. The wait was pretty long, but they had self serve chips and salsa out for everyone waiting! The food was good, consistent with all the other Chuy's we've tried. Love the flautas, margs, and queso! Only issue we had is that the kitchen got backed up and the wait for food was very long, but the chips held us over and I'm sure this will improve as they learn how to handle the crowds...this place did just open so they're still figuring the kinks out! Chuys has been my go to Tex Mex for years. Every time I go "home", it's where we eat. So I was very excited to hear that I could eat at Chuys right here in Colorado! Too bad the food kinda sucked. My food came cold with the refried beans kind of crusty on the edges and had to be sent back. Came back on same plate and now the tortilla was warm but the chicken inside was still cold and beans still not fresh looking, much less warm. The queso is good, chips warm, and my sister's salad was fresh. The ambiance is very much Chuy's so I was transported back home for a moment. read more

Best customer service ever. I ordered something to go and when I got home I found it wasn't what I expected. I called the restaurant and the manager made sure the issue was remedied. I got a new meal and she was very polite about the whole thing. This was the best customer service I've received in a long time. If you are going for the rellenos, you will be disappointed. They are using a very limited menu and rellenos are not a part of it which seems odd. 1st point - this ain't Mtn Mex so not so big on the green chilis-its not "real Mex" either - if your looking for that you will be sadly disappointed. Like many others who have 4+ stars-I'm from Texas and I've trying to find Tex-Mex everywhere only to be disappointed. I had heard they opened one in Westminster and thought it to be an urban legend. I had to go there and try it but I had set my expectations low. Drove up and felt like every other Chuys I had been to, walked in and to my eyes saw the LED palm trees - over the top - like Chuys is! It was my first time here tonight. Living in the area for years my family would consistently go to nearby Hacienda for Mexican food. Having no context of the enthusiasm others have for Chuy's I was wondering how another Mexican restaurant would fair being so close together. The overall atmosphere of the restaurant was very different and fun and one member of my family mentioned it's like kind of a cross between Hacienda and Casa Bonita (we were sitting in the palm tree room). The food was very good, tons of flavor in everything we ate and I can see how people can get fired up about this place. Everything I ate was spicy (as I requested it) and I'm unsure if someone who was sensitive to spice would enjoy it as much as I did. Will be back again! read more

Chuy's is a clear example of what happens when a great restaurant goes corporate and grows too fast. Once you get past the pico de gallo (which is still quite tasty), what they put in front of you is unrecognizable from what we'd enjoyed since the early days of the chain back in Texas. My enchilada wasn't so much an enchilada as it was just some meat rolled up in a flour tortilla (flour??) and served bare, without sauce. Accompanying that was the skinniest chile relleno I've ever seen, stuffed as much as was possible under the circumstances with flavorless, unseasoned ground beef. My wife didn't fare much better with her order, and the fact that it didn't appear that anyone on staff other than the bartender was over 17 certainly didn't help. We live in New York now, where the dearth of good Tex-Mex is legendary, but there are places in the Bronx I'd recommend well ahead of this... thing... that Chuy's has become. read more

Tried this place out last weekend on the way to Boulder and so glad we did. I love chips and queso, and these are some of the best. They are light and crispy - perfect in my opinion. We had the Saturday special wild burrito. It's got plenty of kick and way way more than I could tackle. Great, fun atmosphere with lots of good music playing, but not so loud you couldn't hold a conversation. With a movie theater right there you could definitely have a full date night. I can see parking getting tricky, but we were lucky with a spot right up front. The other really sweet thing is the fundraiser for St. Jude. Pictures of the kids on the walls really prove there's a face behind those donations. Maybe someday there won't be a need because researchers have found a cure, but in the meantime it's places like this that help fund such important work. read more

I think Chuy's is such a great restaurant with consistent delicious food and awesome margaritas! But what really makes Chuy's great is such wonderful bartenders and wait staff and hostess. My review. We Two adults and a child) were seated promptly (2:50 PM on a Sunday) The restaurant was pretty full and a little loud. The music was excellent for my taste (Classic Pop/Rock hits from 60's - 70's). Here is what we had and my thoughts on them. Free Chips and salsa was first. The salsa had a pretty good bite to it. Definitely looks fresh. No lame From a jar here. The chips looked great but without the salsa are lacking in flavor. Next up, I ordered a Long Island Ice Tea. It was pretty good. It had more of a lemon flavor than I'm used to, but I really enjoyed it. We ordered Steak Fajitas and Steak enchiladas. The food was served in a very timely manner. I'm really impressed. The Steak fajitas were outstanding. The steak enchiladas had their signature Tex-Mex sauce on it. It came with beans and rice and Pico de gallo. The sauce tastes a lot like your traditional red chili with meat. The beans tasted a little over cooked. In my opinion but not too terribly bad. The Fajitas were the real winner here. Went there for lunch on a random weekday. Busier than I expected and people continue to show up at 12:30. I had the Baja tacos and my friend had a chimichanga. Chimichanga could have come with more green chili and we had to ask for more. Baja tacos with fish tasted good also - your standard Tex-Mex food. Get your note pad, people! We had such a great experience the first night in Denver, we came back for the next three straight days. Service was excellent and the food was mostly consistent. Although the refried beans were different on each day. The first evening they were too runny and tasted very salty. The next day, they were perfect. On the third day, they were not quite runny. Daughter and I dropped in on a whim, were seated very quickly given the place was hoppin'. Lots of visual ambience, tons of clutter, photos and artwork to look at on walls, ceilings. Charming in a Tex-Mex sort of way. The staff was friendly and service was quick. Food pretty good, though a little bit on the tame side; all that sort of thing is subjective I think. The creamy jalapeño sauce is unusual and very tasty, recommend giving it a try. I've only seen it mentioned in one, maybe two reviews but I thought it worth bringing up. We were seated in a center area of the place and maybe other rooms have better noise handling acoustics... but it was really super LOUD in there. The two of us could not hear each other across a small table. We literally had to yell to each other and we noticed that everyone else around us was doing the same thing. Just sitting there eating we could hear the volume levels keep rising in waves as people out-competed other voices to be heard. Crazy... I've never experienced anything quite like that in a restaurant before. Not sure that we will go back based on what was almost painful. You might consider asking if any areas of the building are less noisy when you go. read more
