Always love to start with the service, Brittney was our server and she was right on top of things despite having several other tables that popped in right after us. I love it when a host has good recommendations and has actually eaten the food. Brittney came through for us and we all had good dinners after a long travel day. The beer didn't hurt either. My only complaint is that they have no beer on tap, every restaurant that serves beer should have at least a small selection on tap but I made due with the bottles. I know it's a rough life right? The food was solid. Steak burritos were a hit and the green chile rice was a good addition. Slightly too much salt for my tastes but all in all very good and I would eat here again. My friends and I decided to eat here tonight before we headed out to a college football game. Even though it was busy, the service was excellent and we were well taken care of. I had the taco salad and was very impressed with the greens they used because it wasn't just cheap stuff that you would normally get at other restaurants. One of my friends got the chicken quesadillas and really enjoyed them as well. Also, all of us love the salsa that comes with the chips. Food portions are also huge so you will need to pace yourself... Chips are light and crispy... Salsa is more like fresh pico so you might want to get the queso too. But after reviewing the options and searching for possibilities, we decided to give Chuy's at 5501 Legend Lake Pkwy a go. One of the best restaurant decisions I've made, quite possibly could be the greatest restaurant service I have ever experienced. Upon arrival at a busy lunch hour I was seated very fast. Once seated, my chips and salsa arrived at the table in record speed. Faster than one could time. From the get go, it was apparent that my waiter was going to be the star of the show. John made it clear that he was the best waiter in Waco and it was obvious, the joyous and bright character mixed with his energy was second to none. Talking about the food part of my experience, it was a typical, 3-star, what you expect tex-mex meal. But this experience was elevated by a whole star just cause of the amazing and wonderful experience provided by John. This was a record setting day for the restaurant and waiter industry with multiple refill times being broken. 28.45, 22.99, and 21.57 seconds were his cup refill records respectively. Each one breaking the record previously set. That averages out to a 24.31 second wait time for a refill. Remarkable work done at Chuy's today. Too many good things to say about John. Disappointing visit to this location. We took advantage of their website where you can put yourself on the waitlist ahead of time. Problem is no one bothered notifying us that tables were available ‍. After watching the front door and realizing we were the only ones still waiting we decided to check with the hostess. Guess what...table was ready?! After being sat we ordered drinks and apps. One of our apps, guacamole never showed up. We ordered entrees and when they showed up the server let us know they were out of rice. Ummmmmm...you're a Mexican restaurant and you ran out of rice? Also ran out of Hatch Chile sauce too apparently for my son's burrito. Really frustrating because I know Chug's is better than this but this location failed tonight. Their happy hour is from 4-7 and margaritas are discounted to $5.25 for a regular and $8.25 for a grande, so that's where you'll find me on any given weekday. The Stacked Enchiladas are great for a more mild person, the Boom Boom Enchiladas are amaaazing but were a little spicy for me. That doesn't stop me from getting them, though! The chicken quesadillas are some of my favorite quesadillas I've ever had. I tried the Chuychanga this time around and, as expected, it was great! First time visit and loved everything about it. The restaurant has a fun atmosphere with very colorful, quirky decor. We were seated immediately, even though we arrived during the busy dinner rush. Our server went above and beyond, she was so friendly and answered all of our questions and she frequently checked on us, refilled our drinks and kept bringing out chips. Just amazing service. We ate way too much of the chips and salsa, the chips were irresistible, thin and crispy. Food arrived very quickly and was delicious. We had the steak burrito and the enchiladas and the food was delicious and portions were huge. My husband still raves about the perfectly cooked meat. Was busy as can be, had to fight for a parking spot as we came after a homecoming at Baylor. Ordered the Chuychanga with beef, guacamole and queso. It is a chimichanga deep fried with a little sour cream on top. Oven roasted chunks of beef which is delicious. The guacamole was a little sparse and the queso was delicious and ended up eating with the chips. Also had the fajitas and the beef tacos which both were very good. Had never dropped in to the Chuy's alongside Southbound IH-35 in Waco. We were in attendance at a funeral and wanted to visit with a cousin after the service -we also hadn't had anything to eat all day. I had had coffee but the Mr. had had nothing. Anyhow , the four of us went. Of course, I ordered a Mexican Martini because in Austin they are delicious. It was incredibly good. Just the right amount of mix and alcohol and nice and cold and refreshing. One of the best I've had in a very long time. Our guests ordered the pochos which was a loaded nacho with fajita meat and lots of scoops of guacamole. They advised it was the best nachos they've ever had! Since they are from Florida, I was really glad that we could expose them to this Texas home-based restaurant. The Mr. and I both wanted something simple so we could chat, and ordered crispy tacos. The ground beef was seasoned perfectly, not spicy at all, which was a good thing because the Mr. does not tolerate any spice. A nice amount of freshly shredded lettuce, shredded cheese, and diced tomatoes we're loaded in the crispy recently made shells. It's amazing how those homemade shells make all the difference in the world!! It was a really simple meal but it was very good. Our wait staff was overloaded and service was OK, not exceptional. She was very nice, very polite but I just think she had way too many customers to wait on. It It didn't look like there was anyone else in our whole area in terms of waitstaff. So we suffered a little bit, no drinks were refilled, had to ask for napkins, had to ask for a to go container -she just wasn't able to keep an eye on us. I will say she did refill our chips which was very nice, even though we had pretty much stopped noshing at that point because we were all afraid if we ate many more chips we wouldn't be able to eat dinner!! It was right at $50 without the tip for dinner for four with three beverages and one cocktail. Not bad at all and it was plenty of food. Pros: plenty of seating, wait staff was friendly, responsive, and relatively quick. Prices decent. Cons: Nothing about the cuisine said Mexican restaurant except the names of the dishes. The food was alright just lacked the taste of authentic dishes. That being said it is a "Tex-Mex" place so keep that in mind. I wasn't a fan of the ranch dip that was served with the chips and almost left before eating because of it. I guess it's the places signature so maybe I should have done more research. read more

I can finally give Chuy's a high rating! The previous experience was nasty due to poor service, & unflavorful food, & I was hesitant to even eat here again. Service was excellent & prompt, and our waiter was very nice, unlike the other two servers I had before-one literally jigged & pranced around the dining room, & the other an obnoxious woman who laughingly sat down at our table and asked us what we wanted to order. I ordered the chuychanga with the boom boom sauce, and the loaded queso and chips for our appetizer. Everything was extremely flavorful, hot and pleasant to the eye as well.
