I haven't been here in months and a friend decided we should meet here for lunch. Overall experience was that this place is just ok.... would not need to come back for a while. I had the enchiladas and the taste was very bland. nothing like the enchiladas I get when I go to La Pasadita in town. The chips they bring to the table were good, it came with a ranch dipping sauce that I liked and the salsa had a good kick, but not too much. Overall, it wasn't bad, but they could definitely do better. The service was okay as well, nothing great. If you get anything from this review, it should be that you will have an okay experience if you go to Chuy's, nothing stellar... just basic. I have been to Chuy's now a couple of times and this is a chain restaurant but they do a pretty good job with the food here. I have been twice and both times I left not really that impressed. Here is why! First, the margaritas are not very big but they are expensive. I do like that you can get different flavors of margaritas but I do not like that they are small and you really do not get that much rita. The fact they ask you if you want the normal size and the large and the large is really small I wonder what the normal size looks like. Several times we have gone here the and the service has been mediocre at best. The first time we noticed that everyone else had chips and salsa but we did not get any. We had to ask if you get chips and salsa after we got our drinks before she brought them over. The second time the same thing happened. Most places bring these out first. I understand if you want people to buy drinks first but it was strange. I always get the same kinda bland item at Mexican restaurants and that is the taco salad. I did really like the Southwest Ranch sauce that comes with this. My friends have gotten several other items and they have looked good and they say they have a lot of really good tastes. I will most likely go back, but I think that Gainvesvile does have some better Tex-Mex places to try out! read more

The first time I asked if I could get new guac because mine was old he said yes they brought me back guac It still had brown in it. If you are looking for good food cooked with love do NOT go here. I don't think I've ever had a truly terrible meal here, but I definitely have never had a great one here either. It's chain Tex Mex. The portions are generous but the flavors aren't spectacular. Having heard many good things on Yelp and elsewhere regarding Chuy's, I was keen on trying it myself. The first thing to note is how impressive and plain fun the atmosphere is: the renovations have produced a bright interior with overlapping themes of Elvis, Texas, the 1950s, and American culture in general. It's simply fun and you cannot be in a bad mood in a place like this--you just can't. The service is, if anything, seemingly over-staffed, but this means as a customer you get a lot of attention and things like refills for your drink are not neglected. So the business model from design to the training and performance of the staff is quite good. The only aspect I disliked about the atmosphere was the music: maybe this was a one-time thing, but they were playing rock/pop hits of the 1990s (yeah really: Paula Abdul and B-52s!). Why not Mexican music or at least some Elvis or Reba or something that would seem to fit in better? Why? The choice of music made the whole place, despite the loving attention to the interior, seem patently fake or, just as bad, like whomever was in command simply didn't care how the experience came across. The food however, I'm not sure about. Perhaps it's because I'm much more a fan of authentic Mexican over Tex-Mex, but I just wasn't all that greatly impressed. The chips are as good as anywhere, but the salsa, while fresh, was a bit bland. They also have a queso which I got and found to be also quite bland and had a taste that I would not want to call "stale", but wasn't as fresh and up-front as I would expect. Honestly, Moe's queso I think is better. I'd ordered the Baja tacos with fried shrimp and the size of the platter and the shrimp themselves was beyond ample, and the tacos were fresh and warm. However, the Mexican rice and refried beans were a bit lackluster--especially the rice. The sauce that the Baja tacos are served with lacked a strong enough flavor and they'd not put enough of this sauce on the tacos really to flavor them in any case. Moreover, it was more like a ranch dressing than the classic Baja taco sauce you'd find at most places serving fish or shrimp tacos in California (and I've lived in San Francisco) or even many taco stands in Florida. The dish just was too heavy on fried flavor from the shrimp and not enough balance from a sauce that should have added both spice and a creamy coolness. I will try Chuy's again and it's clear the chain has serious desires and goals for their restaurants and the one here in Gainesville is off to a good enough start, but the food wasn't quite up to the level I'd expected per the other reviews on here. Perhaps because I eat a lot of authentic Mexican food and Chuy's is, without a doubt, more Tex-Mex, that was part of the issue. I realize that most Mexican restaurants in the States do follow more of a Tex-Mex or New Mexican approach to Mexican vs a straight-on Mexican one. If you DO like Tex-Mex, you might like Chuy's a lot. I would recommend it overall over any other Mexican place in Gainesville with the exception of La Tienda, but I will still want my La Tienda tacos and other treats you don't find on an Americanized menu, regardless. read more

The portions are huge and the chips are never ending, which can be a good or bad thing depending how one looks at it. Chuy's is a destination place for many people that are just looking to have some good ol' family fun. The décor is over the top, and the service is great. Sometimes I wonder if they are owned by Disney, because the entire experience reminds me of dining in Epcot. That simply hint to; if you are looking for authenticity, look elsewhere. This is a Tex-Mex joint, and rightfully so, there is nothing wrong or misleading about that. For example, my favorite dish is the fish tacos. A dozen dollar dish comprised of two white fish filets covered in a thick layer of crunchy crust with cornflakes in there somewhere. That is then slathered in a ranch dressing sauce with the option to roll it all up in some flour torillas. It is a texture-versus-tang-fest all up in your mouth. After reading all of the articles about Chuy's before dining here for the first time, I was expecting some of the freshest Tex-Mex I have ever eaten. As a chain hailing from Texas that prides themselves on their freshly made sauces and salsas, I could really not taste a difference in freshness from the local Mexican restaurant down the road that is half the price. Garlic, cilantro, and the brightness of fresh tomatoes are some of the many missing pieces of the puzzle. The portions are slightly larger, and the attentiveness of the servers is better. I've been eating at Chuy's at least once a week since they opened. As Mike mentioned in his review, they seem a little over staffed. I think this is a smart move to make when opening a restaurant, if it can be afforded. From day one they have been great about getting you in and out quickly. I haven't experienced the kind of lag I sometimes experience at new restaurants. My wife and I think the decor and atmosphere of Chuy's provides a positive and happy place to eat. I'm a fan of the paintings in the middle room which my wife translates to me over dinner. I'm turned off by restaurants that hang a garage sale on their walls as decoration, and Chuy's decor, while busy, avoids that appearance. The thing that sold me on Chuy's on my first visit, was knowing that they make fresh tortillas. Since I've been trying to make homemade ones this year, I've grown to appreciate a fresh tortilla. Because of my love of their tortillas, I haven't tried anything here than doesn't come served in/on one. I generally stick with their taco dinners. The ground beef is good, but not great. The chicken tastes fresh, but is too bland. The fajita steak tastes good, but tends to taste like it's been sitting around a bit too long. If you can spend a few more dollars, get the steak fajita dinner. Whatever they marinate their steak in, produces a tasty tender steak, better than I've received at any other Tex-Mex or Mexican restaurant in town. With most meals you can choose between two different kinds of rice, Mexican or green. I'm not a big fan of either, but if you like things a little spicy, go for the green rice. They also serve two different kinds of beans, charro or refried. I'm not a big fan of either of their bean selections, as they are a bit heavy tasting. I generally go with the charro beans. I think I got ahead of myself here. The chips and salsa are some of my favorite in town. I wasn't a big fan of their house salsa at first, but it has grown on me. It has a bright sweet citrus flavor that causes me to eat way too many chips. They also have a variety of other free dipping sauces you can request. My wife enjoys the creamy jalapeno. The prices for dinner are fine, and are in the range of $8-$15. For lunch however, they don't provide lunch size portions and prices. This leaves other Tex-Mex and Mexican establishments with an advantage serving cheaper meals. With the addition of a lunch menu, and the refinement of some of the dishes I think Chuy's has potential. read more

Went to this place originally when I was at Dell new hire training in TX. I enjoyed it but we also ate outside in the middle of TX summer -- so I think I was distracted by the situation to fully appreciate the food. Chuy's is really good. They are expanding and opened up a restaurant in Gainesville so I had to stop by and check it all out with one of my Dell collegues. We gorged on appeptizers of assorted dips, salsa and I then got a salad to make it all better. It was a great salad, btw! Dipping sauces for chips- the creamy Jalipeno was smooth and tasty. They have several sauces to choose from. Now, I am here again! I went out of my way to come back. This visit I am still loving their thin, crispy chips! My steak burrito has a wonderful marinated flavor with a spicy green chili sauce. It was accompanied by a Mexican rice that was well flavored. I have been here about 3 times and my experience with food is quite different every single time. The reason I feel this is because they are so inconsistent. For instance when I went last night they got me chips and salsa . I bite and I was quite taken aback with the heat in the salsa. You know you are at Chuy's. I have been alive for 21 years. But I had not truly LIVED until I was a young 19 years old. Before 19, I was naive. I was impressionable. I was a virgin to the Tex-Mex world. Chuy's changed all of this. The first time I walked into Chuy's, it was an accident. The restaurant down the street was too crowded. I remember the day, the stormy clouds enveloping the sky, the gentle breeze carrying in the smell of impending rain. It was love at first sight. Or should I say, love at first taste of jalapeno ranch? Side note. I would infuse jalapeno ranch into my bloodstream as an IV medication if that was possible. Is that possible? The moment I dipped my first chip in queso, I think I saw the heavens open and Jesus himself wink at me. It was a gift from above. A divine experience. I look back on the rest of that night as if it were a dream - one of those dreams that you never want to wake up from. It truly was a lovely experience. I laughed, I cried, I had the time of my life. I recommend you order the fajitas. The fajitas are the type of food that make you feel understood. They make you feel cherished. And you'll come to understand and cherish the fajita as well. I love happy hour here! They have a nacho bar where you can refill your chips basket with ground beef and queso as many times as you want. I always ask for the creamy jalapeño sauce as well, it tastes amazing. But if you don't like ranch, you might not like it bc it tastes sort of similar to it. Their strawberry mango swirl frozen margarita is the best! If you're going with friends, I recommend getting a pitcher of that and just sharing! It's a better deal. read more

Went in today during the grand opening. Sat at the bar, had fajitas. They were fresh, as was everything... but really, their first day, of course it was going to be fresh. They marinade the chicken and steak for 24 hours with Shiner Bock! I also had a Texas Margarita which I enjoyed, and gods do I normally hate olives. When they brought out the food, it had to be spread out so I was suddenly occupying 3 seating areas - which tells you how much food they brought me. I know we don't need no more stinkin' Mexicanish places, but I would recommend this one. If you bring a framed picture of your dog, you get a free appetizer, so there's that.
