    CHUYs is delicious and fresh! I ordered the shrimp taco, birria taco, and carne asada taco. All three delivered a fresh taste with good flavor. I also really liked their healthier beverage options.

I like to refer this place as "that big orange building on the hill". They take reservations; call the restaurant directly to make yours. It can get busy during peak hours, so if you can't find a parking space in the parking lot, you can park on the street along Carnegie and walk over, which is what we did. We made our reservation at around 7:30pm and arrived on time, but we had to wait an extra 5-10 minutes for a table to open up. We got a table that had a great nighttime view of The Strip and other parts of the city. For drinks, I ordered a Raspberry Margarita on the rocks and my LTP ordered the Golden Road Mango Cart beer, a drink known to be very popular in other restaurants and bars these days. It did take a long while for both drinks to come out, but we passed the time by enjoying complimentary endless chips and dip. The dips were salsa and beans, but the salsa was incredibly spicy, so I stuck with the beans. Our food also took a while to come out - I think we waited about 10 minutes. A bowl of soup is offered with every meal. We shared a quesadilla appetizer (4), which was excellent and included a mix of sour cream and guacamole dip before moving on to the entrees. My eye caught the Torta (aka the Mexican sandwich) on the back of their menu, and I got this with grilled chicken breast as my choice of protein and fries on the side. The Torta was HUGE. It was really good and packed with sour cream and guacamole inside, but at the same time it was so big that I had to take the rest of it home with me. My LTP had the carne tacos, which were also huge and also had to take home with him. Service was a little slow, but the food and drinks were excellent. I also really enjoyed the view from our table.

My wife finally practically walked toward the kitchen asking if anyone was even working, and one of the bussers looked confused and asked where the hostess was. Turns out the hostess had been sitting hidden in a booth on her phone the entire time before finally getting up. She then told us there was a 10-15 minute wait for a table, despite there being at least 10 clearly open tables right in front of us. To make things easier, we agreed to just sit at the bar but asked for it to be wiped off since it was covered in food. In response the hostess looked at us with a disgusted smug look, like I asked her to do something that's not her job. Then it somehow got even worse. We finally sat down at the bar for another 15 minutes, while two bartenders completely ignored us the entire time. No greeting, no "be right with you," nothing, not even a water. Avoided eye contact the entire time but served the people around us. It honestly felt intentional by the end of it. For a place we used to genuinely enjoy and support regularly as locals, this was unbelievably disappointing. Service has completely fallen apart and the atmosphere feels nothing like it used to.

How can you beat that? The taco I use to gauge a good spot is the Al Pastor, and I thought they have one of the top 5 I've had in Vegas. I know pineapple isn't always a thing with Al Pastor, and I didn't come across any in my taco, but honestly the meat stood on its own so well with the onion and cilantro tossed on top. My wife had the Pollo Asado taco and I took a small piece of the chicken to try for myself (yes I let her have some Al Pastor too!) and it was great. Seasoned well, juicy, and although I wouldn't order it with cheese, she enjoyed adding it. Now, to the hot taco right now, the quesabirria! It was awesome. Flavorful to the max, lots of cheese, the tortilla held up well (I'd probably order extra crispy next time, my preference). Consumme was good but I've found a few in town with more flavor and a little less oil. Service was fast and friendly while the space was relatively clean. I will say that the tables are placed close together in spots so expect to play Tetris with the next table to get everyone seated haha. I will absolutely be back soon for more tacos, maybe even a hot dog, loaded fries, or some churros!

Because of those positive experiences, I chose to bring my family, who were visiting from California. We arrived while it was still light out, and the ambiance was lovely--the open doors, fresh breeze, and sunset created a very pleasant setting. However, as it got darker, the lighting became insufficient, making it difficult to see our table. Unfortunately, this also prevented us from taking a group photo. Our server appeared to be overwhelmed, which may have contributed to some communication issues. For example, I ordered sweet tea for my five-year-old son, but was not informed that it was unsweetened brewed tea, which he did not enjoy. Additionally, my daughter and my son's girlfriend ordered the enchiladas but were not advised that the sauce was sweet. This was unexpected, as enchiladas are typically more traditional in flavor. As a result, one dish was returned and replaced with ceviche, and the other was left unfinished due to dissatisfaction. one of the enchiladas remained on the bill. I want to acknowledge that I did not raise these concerns during the visit, as the server seemed either new or very busy. On a positive note, the ceviche was excellent, as it has been on my previous visits, and the birria tacos had generous portions of meat. My family also enjoyed the music and overall vibe of the restaurant. That said, there were a couple of additional concerns. My children were disappointed that horchata was not available, and the restrooms did not appear to be well maintained and had an unpleasant odor. I hope this feedback is helpful.
