Sichuan Pepper Beef Noodle Soup
Allen L.

Chopin Noodle Soup first came on my radar because I saw Raina and Mimi eating here on social media! Located inside 99 Ranch, it's a fast casual type eatery where you order at the counter or kiosk and pick up your food when they call your number. Free to choose anywhere you want to sit. I ordered the Sichuan Pepper Beef Noodle Soup with knife cut noodles. The soup was umami and good but I expected a heavier Sichuan flavor. I'm sure you can ask for it to be extra spicy for more of a kick. There's chili oil (albeit different from what comes in the soup) and black vinegar on the counter that is self-serve. I did add some vinegar for more depth of flavor and a bit of sourness which made the soup even better. I did find the knife cut noodles to be very skinny and thin so next time I would opt for extra wide noodles. I also wish the soup came a little hotter (temperature wise), it was just lukewarm. Overall, looking forward to trying more dishes next time and had a very enjoyable experience!

This restaurant was recently opened in Chino, CA. If you love spicy food and love the hand-pulled noodles. Come check out this location inside the Craving Food Hall. They specialized in red chili oils and make authentic Chinese appetizers, noodle soup and dry noodles dishes. Most of the dishes are cooked spicy. I ordered spicy stir fry knife sliced noodle with beef and noodle. I really didn't like the flavor of my dish. It was just okay. Friendly staff. Ambiance is clean in the food hall.

Amazing noodles located inside the food court at 99 ranch! There are several different types of noodles to choose from, and all of us were happy and satisfied. We ordered: 2 beef noodle soups with thin noodles and regular noodles --the broth was light and flavorful Vegetarian tofu noodle with knife noodles--lots of tofu and vegetables Stir fried noodles with knife cut noodles--incredible flavor My Taiwanese dad can be a harsh critique, but even he was impressed and satisfied with the quality of the food and the noodles. I highly recommend the knife cut noodles! They have the perfect chew to them (hao QQ). Service was friendly and quick. There's even a tub of chili oil and bottles of vinegar available to adjust your noodles to your liking.

Delicious spot located inside the 99 Ranch/Cravings market in the food hall section. You can order from the kiosk, or from the workers in the front. I liked the kiosk ordering since it listed all the different options and customizations, such as what type of noodles you would like; they have a variety you can choose from! I got the A2. Traditional Beef Noodle soup. It came with lots of tender beef slices, delicious radish, lots of aromatic soup and noodles, green onions, cilantro and some chili oil that I would say is more fragrant, than it is spicy. It came out within 5 minutes piping hot. My siblings and I all ordered different things and we all enjoyed our meals. We had our lunch at the food hall and agreed we should return. Only thing is I wish they had bigger soup spoons, they just have the smaller plastic spoons. But overall, can't wait to go back and try more things!

Highly recommended! As someone from Lanzhou, I know how much effort and time it takes to make an authentic bowl of Lanzhou beef noodles -- a dish that has conquered all of China and the world. I was so happy today that I only had to drive 10 miles (instead of hours) to enjoy a bowl this close to the real taste back home here in Los Angeles. The owner is generous too -- the bowl came with plenty of flavorful braised beef slices that usually require extra preparation. What makes this place even more special is the six different types of handmade noodles -- from extra thin to extra wide -- all freshly pulled by hand. So authentic and satisfying!

Noodles were authentic and flavorful! Pricing was great with big portions. We got the traditional beef noodle soup & jajang noodles. Easy self order kiosk, they will call out your number when your food is ready & you go to the counter to pick it up. Lots of seating in the food hall! The food hall is still developing so more choices to come, but we will definitely be back here again!

Decided to eat here and ordered the signature beef noodle soup with knife cut noodles and scallion pancakes. I kid you not, my food came out in under 5 minutes and the bowl was pretty big! It was also super super yummy! The staff was very kind and quick to work without it seeming like they were rushing. The inside is clean and well lit and pretty casual. If I am ever in the area again id definitely come back!

It was just a little odd that they only had 2 servers during dinner time. I felt so bad for them. They were running around, making drinks, seating people, taking orders, dropping food off to customers, bussing tables, collecting payments...literally all the things! The food was really good. I loved the knife cut noodles with shrimp. The beef on rice was quite tasty. Their beef wrap was really good but had way too much cilantro and green onion. The pork and shrimp pan fried dumplings were really flavorful. Overall great food and ambiance. I just think they need to support their staff by adding more people for the dinner rush.

We were seated pretty quick and I ordered the jalapeño bombs as well as the Tonkotsu Spicy Black ramen. Everything was delicious. The ramen was flavorful and the portion was satisfying. You can selct the spicy level. I got to try both levels 1 and 2. Level 2 is on the spicier side and just on the cusp of being too much. I think 3 would be too spicy to enjoy, imo. The noodles were cooked perfectly. Im glad I got the black garlic addition. It added an extra layer of flavor. I will be checking this place out some more.

One thing to keep in mind is that the bowls don't automatically include the salted egg, so you'll have to shell out a few extra dollars if you want that classic topping. While the meal itself was a hit, the logistics of the meal were a bit more frustrating. The service was fairly lackluster and felt mostly absent; we waited quite a while for attention, and the overall pace was very slow. It's the kind of place where you have to be proactive if you need a refill or the check. Additionally, the cleanliness of the restaurant is a major concern. Everything felt "sticky" from the tables to the floors and the bathrooms were definitely not well-maintained. It's hard to fully enjoy a premium-priced meal when the environment feels a bit neglected. On a brighter note, the location is very convenient. Since it's tucked into a large strip mall, parking is incredibly easy and stress-free, which isn't always the case in Chino Hills. If you are a "food first" person who doesn't mind a bit of grit and slow service, the ramen is worth a try, but the management could definitely step up the cleaning

This was the closest one to us, and it definitely lived up to what I was expecting. I tried their new Bolognese udon, and it did not disappoint. It had a really rich, savory tomato flavor that paired surprisingly well with the chewy udon noodles. It's a little different from the usual udon dishes, but that's what made it stand out. I would definitely get it again, especially since udon is one of my favorite types of noodles. My friends got the Nikutama udon, which was also really good. You can tell the udon is freshly made, with that perfect chewy texture. We also grabbed some of their tempura sides, and they were crispy, light, and super satisfying. The workers were really nice, and the whole setup runs pretty smoothly even when it gets busy. The space itself is pretty spacious with lots of seating, so it's great for groups. It has a casual, lively feel with people coming in and out, grabbing trays, and building their meals, which adds to the overall experience.

The nikutama udon was only warm rather than hot, and the broth tasted overly salty with a slight sweetness. I added green onions and flakes, but the flakes quickly became soggy in the soup. I also ordered crispy katsu, which was actually quite fresh and tender, and helped give an extra star. I also tried a battered chickenc tempura shrimp, and battered sausage that was cold and seems left out for a while. I can't say the meal was enjoyable.
