The beef in this dish was very tender We also ordered the mapo tofu and it had the familiar mala numbing. Flavor was authentic and spicy. We also ordered the xibei braised beef noodle soup, mild. Although it wasn't spicy, the broth was very tasty and the beef was tender. I was disappointed a few dishes were not available like the tomato egg dish and the cauliflower dish. Oh, and my husband wanted me to mention he wasn't happy paying $3.50 per bowl of rice. He said that is the most he's ever paid for plain white rice. Me? I'm on low carb right now is so doesn't matter to me. Ha!

Ultimate Lanzhou beef noodles: My brother said this noodle soup was not spicy at all. In fact it had too much of the black vinegar taste instead. The beef was cooked thoroughly, and the noodles were just all right with nothing special. Lanzhou beef noodles: The soup base for this noodle soup was very bland as if it was just soaking in water. The beef did not have flavor but was cooked thoroughly. The noodles would have tasted a bit better if the soup base had a little flavor to it. Overall: I might give this place a try again if I ever come back down to the Princeton area. Otherwise, I probably would not take the 1-hour drive down here just to dine at this noodle shop. A suggestion would be that they should try to perfect the soup base as the noodles are already good.

Tiger Noodles stands apart because it offers generous portions, honest flavors, and a price point that feels almost out of place in the neighborhood. Overall a true 3.5 star rating but since halves aren't possible I had to go to 3 because it certainly wasn't a 4.
