On a trip up to Mt. Rainier we stopped at Chimi's for lunch. It was pretty good for a small town Mexican restaurant. I had a chicken enchilada and a shredded beef tostada served with beans and rice. The tostada was crispy and flavorful cut the enchilada was a bit bland an tasteless. I kept wishing there had been something besides shredded chicken in the filling. Maybe some cheese or onion? It was pretty bland. I would have liked more sauce as well. The beans and rice were quite bland as well. It was a filling lunch though and we were hungry. Food was great, best combination platter I've had in a while (Chimi's Combination Plate). The carne asada was cut nice and thin so it had crispy caramelization instead of most places that it's a little hard to chew. The big surprise? The dish that had shrimp, scallops, and mushrooms - the foods weren't surprising but the mushrooms were cooked to perfection! I believe my wife got an enchilada and enjoyed it. The lady was incredibly nice when me and my friends car broke down, she let us sit in here without having to worry about ordering and let us wait for our ride. (We ordered anyway) She made us feel incredibly welcome and the place had a nice vibe to it. Their chips and salsa are also really good the salsa being a bit spicy but still nice and the chips tasting home made gave it an extra touch. The food overall was good though and I am satisfied. The plating of my dish was interesting, they put a crunchy tostada atop a gooey enchilada making it impossible for me to eat. My husband and I came for our anniversary, ordered dinner and drinks and were shocked when she told her she was charging us when we asked for more. So there's a new Mexican place in town. Anyone who loves Mexican food will say "Great, but how's the ....?" For me, that something is mole poblano or pollo con mole. It takes hours to do right, a boatload of ingredients and a lot of practice to get just the proper spicy/chocolate level of yum. The one at Chimi's is definately yum. We've searched cowlitz county and my wife and I love this place, it checks all of the boxes. Good food, good service, clean, good margaritas, good prices...not necessarily in that order. I see many people comment on the rice and how it's dry, I guess it's a matter of preference. I find it to be light and fluffy in lieu of dense and sticky. I am very disappointed. I have an onion allergy, and I very clearly told my waitress I do. She led me to the enchiladas on the menu and told me the beef enchilada has no onion. So I ordered it. Got the food, inside the enchilada was dozens of onions. We called over the same waitress, and she told us everything in the restaurant had onions. She knew I had an allergy, but still told me to get the enchilada and said it had no onions. By then I was about ready to leave, but she offered a burger, so I accepted. She gave me a burger for takeout, and assured me there are no onions, and quickly opened the container to try to prove it. I said okay and left, and when I got home and started to eat, I found several chunks of almost raw onion inside. My mother went back and confronted the lady who owns the restaurant, and the lady denied everything, saying the burger was not theirs and said there's no onion in it, and refused to look. We're never going back there again. They could have seriously hurt me, and they were very very rude and denied their mistakes. Definitely disappointed. read more

For a small town like Toledo this is a 5 star place. Service was friendly, prompt and attentive. Chips and salsa were spot on. Chips crisp and warm. Salsa, perhaps the best I've ever had in a restaurant. The meals: best Mexican I've had in this part of the country with the possible exception of LaTarasca in Centralia. I lived in San Antonio for three years and the food at this restaurant compares favorably with what I found there. read more
