    In 1967, Larry Lavine attended the first Terlingua Chili Cook-off hosted by his father-in-law. He fell in love with the concept and decided to open a restaurant that he hoped would capture the same experience. The first Chili's opened in Dallas in 1975 in a converted postal station. The menu included burgers, tacos, fries and chili along with Schlitz beer because they were the only brewery who would supply on credit while the restaurant was growing. The second Chili's opened in a remodeled flower shop in Houston in 1976. Today there are over 1,200 Chili restaurants through the country. The majority are in Texas with Florida in second place with 138 restaurants. Our family ended up at this Chili's on Mother's Day in Vero Beach because it is halfway between where we live and Orlando where my daughter lives. We ended up having to go to several auto parts store to do minor repairs on my daughter's car so we scrapped our original plan and looked for somewhere we could eat quickly. Chili's to the rescue. This Chili's looks exactly like every other Chili's I have ever been to. The restaurant is in a U shaped configuration with wood tables and booths and Southwestern decor. We decided to start with a round of their $6 margarita of the month, Tito's Watermelon Spritz. They were very refreshing and the perfect Mother's Day cocktail. Meals ordered included the brisket burger, a crispy chicken salad, and my daughter and I had the ribs with chicken crispers, Mexican street corn, and seasoned fries. Chili's always does a great job on ribs. It was a lot of food for the money and we had leftovers to take home. Service was prompt and attentive bringing the food and drinks quickly. It wasn't the water view I originally planned on but the food was enjoyed by all and everyone left satisfied and happy.

    It took forever to be seated, but afterwards everything was OK. I think chili has really stepped up their game with their value of their food and the quality.

    I wasn't terribly hungry. Good thing! I ordered a bowl of chili but what I got was a bowl of meat and cheese floating in grease. I couldn't even take a bite. The server took it off the bill. Drinks were good, service was good.

    Taste horrible.

For starters, they never asked for our IDs. Now, my husband and I are old enough to drink, but the fact that they didn't check them should have been a red flag. It's clear they just don't care. As the night went on, it became even more apparent. The staff didn't seem to care enough to cut people off when they had clearly had too much to drink. At one point, a man approached my husband and me while we were sitting on the couch and started a bizarre conversation, making strange comments and pointing at us. We tried to ignore it, but then his "friends" had to pull him away. A little later, he came back, now more aggressive than before. I started yelling for help from other patrons or the bartender, and they only responded by pulling him away. The bartender didn't intervene at all. At that point, we decided to cut our night short. I wouldn't recommend this place to anyone, not even on a quiet Wednesday. If they're not responsible enough to check IDs, they clearly don't care enough to ensure their patrons' safety or comfort.
