But The Only kept coming up in reminisces and we'd check if it was still around, and it was. Today we made it back, and wow, they have done really well. I'm sitting in the cafe part of The Only, and it's fabulous; eclectic and artsy and unpretentious with great coffee, baked goods and nice staff. The original space I would have a beer in years ago is closed. So we'll have to come back another time for a beer. In the meantime I'm listening to animated chatter and a great music as I sip my coffee and enjoy looking around this interesting space.

If you are working some regular office hour (9-5 M-F), you might never able to come to experience the Tasting Bar unless it is your day off. But I tell you, it is well worth it if you are an avid coffee lover. Of course you can also just order what you like off the menu. Pour over, Chemex, Espresso, Cold Brew. Talk to the nice barista if you are not sure what to order. But if you have time, I definitely recommend the tasting menu. 3 different roasts with 3 different brewing methods. I miss the original baristas who graced the shop when it first opened. It's great to know that many of them have gone on to open up cafes of their own. There are more than a few Rooster Coffee shops floating around out there. A similar named cafe called Rooster's Coffeehouse was established at Carlton University in Ottawa and has been around since 1960. Not to be confused with Rooster Coffee, a gorgeous cafe-roaster, located in Maribor, Slovenia.
