Tasty. Lots of bold flavors. Each item has a distinctive dressing. Big portions. Nice people. Friendly and happy. Not five stars because: Plate presentation is sloppy. There are so many ingredients that are smothered in various salsas it's impossible to see what you're eating. Tacos are so overloaded that unless you are a magician it's impossible to eat the thing in hand without dropping half of the contents. I know, it's not really a problem because you do get a plastic fork. Three tacos for $16 seems a bit steep. Relax, it is a full meal that even this hungry man with a canine appetite was satisfied upon completion. Are there better fish / seafood tacos in Santa Rosa? I haven't discovered any. Located on exceptionally noisy Sebastopol road in the heart of "downtown" Roseville. Ambiance is loud and the eating area is kind'a grimy. My husband was excited to try Charro Negro based on all the 5 star reviews. I was not familiar with this food truck, so after also reading the reviews, we decided to give it a try. I will say that the seafood is very fresh and tasty. However, someone in that kitchen is very heavy handed with the tasty sauces for each item that I tried. I ordered the fish tacos and the shrimp tostada. First, the serving sizes are very impressive. But when I bit into my first fish taco after only 5 minutes in the take out box, it was so wet with sauce, that it made the entire taco soggy and a huge mess. Immediately the tortillas fell apart and instead of a nice crispy piece of fish, it was also a soggy mess. The shrimp tostada was also a disappointment that way, just drenched in a green avocado sauce. So much sauce that you could not taste anything else. There was a good size portion of shrimp but I couldn't even get to it because of all the sauce. I tasted hubby's calamari from his taco (he ordered the "mixed tacos", 3 tacos). It was still nice and crispy. He also had the octopus taco and a shrimp taco and he seemed to really like them. I am sorry I can't give you 5 stars Charro Negro and I hate to ruin your 5 star run, but someone needs to ease up on the sauce so that you can actually taste the good quality food that you are preparing. read more

YUM and double YUM. We each had the Coctel de Cameron - huge, lots of big fresh shrimp and wonderful flavors. We also shared the Fried Calamari 3 taco plate - also huge. The food delicious and the truck is sexy af. The chef used to be at Willis, and the menu is very seafood centric. He takes this super fresh seafood, and adds amazing flavors that compliment to create New Mexican plates that are just so damn good. It's garnished to the T, so you are totally eating with your eyes first. I highly recommend the calamari tacos. It's a flavor and texture bomb in your mouth, in such a refined way... but I did messily gorge myself very quickly with the tacos. The tostadas are also so good! The octopus is cooked so perfectly, like you know that is so fresh because of the texture when you bite into it. It's crunchy and chewy and so good. The shrimps are the same. They are bursting and plump and just waiting to be munched on. I keep saying I'm coming back for those aguachiles and I totally am! They look amazing! Wowwwww. So good! This is why California is just the best. First, this truck gathering is super fun and on the drive home from up north, swinging through Santa Rosa for tacos is a great idea. Second, there's music, kids, it's socially distant and you can even eat in your trunk. Charro Negro is delicious. The ceviche was so fresh and flavorful, packed with fish and avocado. Wow! Incredible! Just incredible! By far, the most extraordinary Mexican food truck cuisine I've ever experienced. The food is so delicious, so gourmet, and so complex that one has to do a double-take to remember that the food was prepared in a truck! We ordered the pastor and shrimp quesadilla and three tacos involving some combination of fish, shrimp, and calamari. I felt like I was dining on a terrace in a Mexican seaside village, cooled by the gentle ocean breeze, and surrounded by gorgeous Mamacitas! The ladies who frequent this parking lot oasis are, in general, worthy of the cuisine - much to my wife's chagrin. Just beautiful food and beautiful people! That kind of says it all. One final note - - the tortilla used in the quesadilla was heavenly. It seems that they roll it in egg and infuse it and, perhaps, even marinate it in some delicious melange of ingredients. It reminds me of the Sweet Bread (cow's brain) I ate in my youth during the summers I spent in the Basque Country north of Spain! This is probably my favorite food truck I've ever encountered. This takes into account my time in Austin, Portland, and The Bay. Head chef for this truck used to be head chef at Willie's Seafood. This is a passion project and it shows. They have a wide menu and all of it comes super fresh from the sea. They have shrimp tacos, fried oyster tacos, fish tacos, and calamari tacos as well as some cool ones I probably don't even know about. Pro tip: They sell them in 3s, but I usually just ask for 3 different ones and they are happy to accommodate. Beyond this there are lots of ceviche options, Costel de Camarones, and all kinds of goodies. Never had a bad bite here. This spot is in the Mi Tote food truck park over in Roseland and well worth a visit. Or two. Or three! read more

I revisited this food truck since they took a winter break a couple of months and was very disappointed what they served was nothing like my experience the first time I went there. First off let me say they changed owners as you can tell with there menu. Second I believe they should remove all the pictures from the previous owners offering because the quality of food they serve does not even come close to why the previous owner offered. So my experience I ordered fried calamari nothing like what I had before second thing I ordered were fish and shrimp tacos look like they used fish sticks and breaded shrimp out of the frozen section of your local Safeway. Wow! Just wow! Stopped by for the first time yesterday. Had the aguachile with the green sauce and that is one big ol cup of yum! Loaded with shrimp and veggies, and rimmed with chile salt, the flavors really pop. And the oyster tacos were even better. Absolutely gorgeous presentation and they tasted even better than they looked. This is not your typical taco truck. This is elevated world class food in a humble location.
