A friend told me about this two weeks ago. I have been twice now. It is a tasting room and they make their money mostly selling bottles of their bourbon. I have tried most of their stuff and personally I think they are amazing. My favorite is the critical batch, followed by their Meticulum and white. Of course the owner and master distiller are great guys and very knowledgeable of the products. This distillery was the perfect place to visit on Monday. They have a private parking lot with free parking. We arrived with the intention of just sitting and enjoying a flight of whiskey with good conversation but we were treated to a free tour of the distillery and told about the great whiskey that is made here in small batch. The distillery is small but the place has a big heart with owners that care about everything that they produce. Husband and I each purchased our own flight which is usually only 4 pours but they wanted us to taste the award winning Critical Batch 110 proof whiskey, which was Delicious. Full disclosure - I know the owner My husband and I had an opportunity to visit Chapline Distillery while we were in town. I didn't know what to expect other than knowing I'm getting a tour of their distillery. I drink cocktails but haven't tried anything with whiskey yet. The distillery is easy to find and I can imagine hanging out with friends on a nice evening with music playing and enjoying the scenery. We got a nice tour of the place and got to sample a couple of cocktails mixed by Mike himself. Boy, they were so good and refreshing! I now know what the hype is all about. The distillery doesn't have a kitchen yet but I know they have chili for special days. Follow their social media account for details. Chapline Distillery is veteran-owned and you'll see submarine caps donated by some of their visitors and customers displayed. If you're in the area, please make sure to check them out. Another visit to Chapline Distillery warrants another 5 Star Review - I LOVE this place! Yesterday, I saw a post on Facebook/ Instagram about an upcoming St. Patty's day event happening at Chapline and I thought I should go out that evening (and again for St. Patty's day). I grabbed a friend and off we went to Chapline for their happy hour! Happy hour is offered from 4-6PM and includes drink specials that make the drink prices very reasonable! In addition to the drinks, they also offer homemade chili and cookies (complimentary). I have to admit... this is still some of the best chili I have ever had... I wish I could buy it and have it on hand at home.. so good! Around 6PM, they have a life music performer come in and they're always great (and not too loud which I appreciate). While the drink is being phased out currently, the peppermint patty cocktail is my absolute favorite - sweet and delicious! I also sampled one of their upcoming St. Patty's day cocktails that'll be released at the next event... another one to not be missed! My favorite thing about coming to Chapline though is still the people and atmosphere. Not only is the owner, Mike, walking around chatting and making sure everything is going smoothly but the bartenders (especially Gesiana) make it a great experience. Each time I've visited, I've felt like I knew everyone there and like I'm part of the family. Will be going next week again (and then many times after that). What a fantastic little gem! After a 5K hike in the nearby state park, my family and I needed a little pit stop and were so glad Chapline's was open. My husband is a huge bourbon and whiskey drinker, so we knew we had to try something. After sampling a bit, we ended up walking away with a full bottle of their classic Texas critical batch, some limoncello, and a small bottle of their honey pecan whiskey. We stopped in around 4pm. Mike was there. Told us all about how he got started in the bourbon/ spirits business. Gave us a tasting of 2 bourbons and a whiskey. Had a cocktail and bought a bottle. Got to meet Pearl. Enjoyed the visit and will come back again. Definitely worth stopping by and trying it out. Went here after mountain biking at Guadalupe State Park on a cool winter day. It was close to closing time, but they still welcome us to their distillery. Order a flight to taste the different bourbons/whiskeys that are mostly corn based. Started with the White Dog that had a smooth taste and then moved on to the Critical Batch Texas and Straight Bourbon. Finished with the Beez Nuts Honey Pecan Whiskey. Texas whiskey/bourbons can taste rushed and have a harsh after-taste, but not at this distillery. The father and son duo has made some good tasting drinks and they are located right outside of San Antonio. This place is on the Whiskey Trail and worth the stop. Great hosts, incredible drinks, and a nice little sipping room. read more

I recently had the privilege of meeting Mike and experiencing Chapline Distillery firsthand. While doing the entire Texas Whisky Trail, I found out about Chapline and was excited to hear what they were all about. Mike greeted us as if we were family and told us his story of becoming a distillery. He prides himself on his bourbon and making quality spirits that are true to their name. His bourbon is certainly of great quality and excellent taste. In addition, his limoncello is to die for. I ended up getting a handful of gift bottles along with limoncello for my wife and I on the next cocktail night. His location is welcoming and perfect for a quiet sit down with a nice drink. It was awesome to see his support for the military, especially the Navy. I could 100% just sit there enjoying an evening talking story with some vets and sipping on some fine bourbon. What a cool place. A legitimate grain to glass Bourbon distillery right here in Bulverde. Everyone was very friendly and inviting, from the family ownership to the regulars bellied up to the bar. As an avid bourbon fan, I can say that the flagship bourbon 'Critical Batch' was balanced well with dark rich flavors that complimented the corn. No flavors overpowered one another , and all worked together nicely. Even at 110+ proof, the whiskey had the expected spice of a higher proof spirit without the intense heat/burn you get sometimes. Chappy and Mike are good people out there , very knowledgeable and kind. Can't wait go back and support them . This place is a gem A++ P.S. I saw a review saying Chapline Bourbon wasn't as good as Ezra Brooks. To that person , I say be quiet please, that's insulting. I've tasted countless amazing bourbons. Some of the most beautifully crafted spirits ever created. Chapline and Ezra Brooks aren't even in the same class, or league. Ezra is entry level and Chapline is craft. Nothing wrong with Ezra. A must visit in this area! Some of the best bourbon I've tasted and small local batches only! Top of the line distillery and top of the line service. Came here for a submariner meeting and got met with amazing hospitality, free chili, amazing company, and amazing drinks. It's the place to go if you are looking for a small town distillery with world wide distillery tastes. When you step inside you can smell the chemistry working. This place is a hidden gem and the young man, Barrett Paul that performs on Friday is amazing!

A great little start-up distillery that I believe is going to do well. Stop by on a Saturday afternoon, and you will not regret it. Today was my second visit in about a month, and it will become a regular place to visit. Mike is a great guy, and he makes a great product. On my first visit I purchased the Kentucky Straight Bourbon, which is distilled in Kentucky and bottled locally. This Time, I purchased Mike's Texas Bourbon, which he distills himself and ages in 7-gallon barrels, and look forward to drinking it as well. The Kentucky Straight is very smooth for a 110 proof, and prompted me to go back for more. They also mix some wicked concoctions. Today I had a fantastic Old Fashioned, and a bourbon-based Mule. My wife, who is not much for hard liquor, loved the Old Fashioned as well and she also tried a heavy creme or milk-based bourbon drink that she absolutely loved. Give this place a try, and I can pretty much guarantee you'll be back. Oh, and you might want to go around lunchtime, as he always has some chili simmering on a wood-fired kettle outside!
