Have been to this restaurant a bunch of times, for lunch as well as dinner. The food overall is good though not everything I've had was spectacular. For lunch the chicken fajitas is the way to go. It's a HUGE portion for the price and it's really tasty. Enchiladas and tacos are also great but the tamale I tried was dry and bland. The service is always great and you get seated quickly. This place has the best mango margarita I've ever had. They use like a thicker nectar type juice and it's phenomenal. Not to mention they have happy hour all day Saturday and Sunday! My boyfriend always gets the chili Colorado. It's incredibly flavorful and a dish that's hard to find, let alone done well. I came here with my friend to celebrate our birthdays and was pleasantly surprised. The restaurant is in a little strip mall but you wouldn't know that after walking in. They have plenty of seats and the room is very colorful. Our waiter was very attentive and they weren't aggravated over my need to cut out cheese. They were very understanding and let me know they would make my food however I wanted. I tried a meal I've never had before. It was shredded beef in scrambled eggs and tomatoes, served with rice, beans and tortillas. It was very tasty and filling. First off, I always enjoy a place that gives complimentary chips and salsa with a meal. Also, a friendly wait staff is a huge plus. Casa Mexico did not disappoint. You can easily get one of their combination plates and a water and spend under $10...and these aren't dinky portions either..there's PLENTY of food. I had a carne asada taco, chicken enchilada, and a chili relleno with rice and beans. The asada was very tasty, but would prefer in a tortilla rather than a hard shell. The chicken enchilada wasn't anything special, but still flavorful and satisfying. The chili relleno wasn't too great, but this may be because it was the last item on the plate I attacked so it had been sitting for a few minutes. Regardless, the cheese was in that 'waxy' state-not quite melted so it was awkward to cut and had a slightly unpleasant texture. I can see this being a popular lunch spot for local businesses-there's enough selection on the menu to make everyone happy, doesn't hurt the wallet much at all, and the service is quick and the staff is friendly. I don't think this is the kind of place that people would get excited about-as in "Yes!!!! We're going to Casa Mexico-soooOooo good!!" The service is excellent - fast, friendly, and efficient, and they are always willing to customize anything to your specifications. They bring piping hot, homemade chips and salsa out immediately upon your arrival, and their queso dip is amazing! They also are very on top of refilling your drinks. Their lunch specials are awesome! My husband loves the fajita platter, which for $7.99 you can't beat! We've both got it with beef, steak, and chicken; all of which are seriously fantastic! What's more is that on top of their already inexpensive lunch deals, they always offer a daily lunch special which is even cheaper than the other lunch options. We just had dinner there for the first time and were pleasantly surprised to see that even for dinner service they offer a daily special! Was in Belton for the 1st time. This was amazing. Their cheese dip with chorizo for me had a little zip to it. Was soooo good I could not stop eating it & ordered another sm dip w/ chorizo. Recently moved to raymore from California. We were afraid we would not find authentic Mexican food here like we do in Cali. We were very wrong, not only was it authentic it may be the best burrito I ever had. I had the carna Asada, my wife had the shredded beef. Was the best shredded beef I Ever ate. One further quibble: my grandmother grew up in the basement of El Charro in Tucson where the chimichanga was invented - if you don't fry it, it's not a chimichanga. They didn't fry their chimichanga. It was a burrito. Maybe they figure in Belton they can get away with that: I mean Jose Peppers is the highest rated Mexican restaurant in Belton, and they're a joke: This place is good at least. Meh. I should have known it was just another yuck Mexican restaurant. Cheese sauce doesn't need to go on every burrito. My husband's margarita wasn't good, his taco salad was merely adequate, my seafood chimichanga was super weird and greasy (there was a puddle of grease on my plate).
