This is for my money the best Mexican restaurant in Colorado. The food is amazing and simply the best authentic Mexican I have had. So many wonderful dishes with large portions. Great prompt service and a festive happy atmosphere. A pleasant patio out back when the weather is good. I've had a half dozen different entrees and each one has been superlative. We had to ask the receptionist twice to find our server and have her come by our booth. 30 minutes later our server finally showed up, took our order, and was never seen again at our table, although she did take care of other tables in our section. Visiting Salida for a few days with a friend and had a craving for Mexican. This little spot is easy to find right off of highway 50 and was hopping on this Saturday late afternoon. The decor is as you would expect for the fare and full of vivid colors. Seating was quick and friendly into a comfy well padded booth. As you would expect, there was a quick delivery of warm tortilla chips and delicious salsa and to go with that, we ordered a very tasty and pleasantly spicy jalapeño margarita to share. Opened the menu and was happy to see more than 2 vegetarian options and decided on the spinach and cheese enchiladas. Everything was well prepared and plated so nicely -the enchiladas were nicely balanced with the amount of spinach and cheese, the beans and rice I normally don't eat much of but, these were both done so well, I could not resist eating more than just one bite! On the way out, we took a peek out back on the patio to check out the fun Halloween and Day of the Dead decorations. Really glad I picked this dinner option on this visit - the experience was very pleasant, I could see this is a local favorite and was treated like one of the regulars with friendly conversation with our greeter and server. The parking lot was full and there were several people in front of us. But we only waited for about 10 minutes. The service was excellent and the food was even better. We went here based off of positive reviews and it was terrible. The waitress was rude and gave a dirty look every time she came to the table. The adult beverages were lackluster and not refreshing at all. We had to wait 20 minutes for bbq sauce to go with the kids meal chicken nuggets that were brought out- which was really a frozen chicken patty cut up. We ate here several times and it never disappoints. We love the queso fundido and big chips it come with. My husband and I split the burrito calica. It come with chicken, beef, chorizo. It was so good. It comes with three sauces. The pineapple was refreshing in it as well. Highly recommend. The service is top notch. Everyone is so nice and always smiling. We were driving back to Denver from Pagoda Springs and made a small 10 min side track thru Salida. I read the five star reviews for Casa Calaca and can say, they weren't lyin'!!!! It has the BEST FOOD I've ever had outside of Mexico. It was so delicious and super authentic. The shredded beef enchilada was made from tender brisket, juicy with a fabulous red sauce. The chili relleno was so fantastic and better than any I've ever had. It almost melted in your mouth. We also shared the carnitas which were tender and flavorful. The staff were so wonderful and welcoming. It was a great find. read more

Wow, Yelp led us here and we were very pleasantly surprised. Our lunch was excellent and we both ordered off the ala carte menu. Crispy Chili Relleno brought back memories of my childhood. Our home is in Colorado Springs, and we have a cabin in CRESTONE Colorado. So that puts us on Highway 50 going back-and-forth quite often. We discovered this place about a year ago, and we have been going there at least once a month ever since. We have yet to have anything less than a fantastic meal. My daughter enjoys the Carne Asada, which is always extremely tender and perfectly cooked. I get the Carnitas plate, and it is likewise fantastic. My wife and other daughter order a variety of things, and we have yet to have anything less than delicious. The only problem we have is that we can't go there when our cat is in the car! I'm not sure if this place allows cats inside. But we are sure our cat Calypso would also enjoy the food. Highly recommended, possibly the best Mexican restaurant I've ever gone to. read more

After eating here last night I see why there are only five star reviews for this place, We had street tacos and the queso, both were AMAZING! The service is attentive and food came out quickly. The salsa was fest and the chips perfect. The carne asada and shredded beef street tacos were fantastic. The meat was tender, the corn tortillas soft and they were loaded with the perfect amount of cilantro and onions. The queso was made with white cheese and green chilies, something we haven't been able to find since we lived in Missouri, and was served with the most amazing flaky chips unlike any chips we've ever had. read more
