    Nothing much you can say about carnitas Michoacán other than. They are worth the wait. I tend to go Sunday and if you are not there by 8:30am you risk not getting certain items. Do not let the line that forms discourage you from stopping. The line moves fast service is what you expect at a busy food truck. The carnitas are juicy and flavorful. Very authentic highly recommend this place.

    The best tacos ive had so far in bakersfield a hidden gem... The carnitas have flavor and they are fresh. The salsas are bomb not ro spicey and have flavor. I will definitely will be back for more.

    I'm at a crossroads with this carnitas joint. Do I tell other Yelpers that this is the lost Holy Grail of carnitas and have it's anonymity lost forever? Or do I give it a crappy review in hopes of keeping this place a secret and all to myself? I'll do the right thing....Yelpers, behold; the Holy Grail of carnitas! Best carnitas anywhere....ever! These carnitas come out caramelized with deliciousness....every bite of these tacos is a joy. The carnitas trailer is parked in a cemented patio with a corrugated metal car port for a ceiling. You want an elegant joint to impress the girlfriend? Not for you. You want to impress the girlfriend with the best carnitas in Southern California? Bring her booty over and prepare to get lucky tonight.....

    Oh how I love a good taco truck. And Carnitas Michoacan is a great one. You won't find any rice or beans here...This is strictly meat country! They're only open on Saturdays & Sundays from about 7am until they run out of food (I was told this happens around 1pm, depending). But during these few hours, they crank out some of the most authentic tacos in town. The carnitas are solid, but the birria de chivo tacos are so deliciously tender and juicy, it is in a class of its own. In case you don't know what birria de chivo is, it's slow-simmered goat in a mild chile & spice broth. They'll also give you a free hot cup of consommé if you ask (it's a little like menudo broth but a lot more gamy). It's pretty comforting on a rainy morning, sitting outside under their overhead. My favorite thing to put on these tacos is their mixed slices of red onion and habaneros that's been lightly macerated with citrus. So simple, but pairs so well with their meat. According to the options listed on their truck, they also serve macisa, cuero, buche, y patas. However, I don't know what any of those are, even after briefly trying to look them up (Google needs to step up their international food searches). I'll just have to ask them next time I'm there. The people who run this place are very nice. It's worth a try some weekend. It definitely hits the spot after some swap meet shopping down the street.

    Really good carnitas! But 3lbs get 1/2 free! $45 gets you a feast. The salsa and curtido go hand in hand with the carnitas

    Best carnitas in Bakersfield! You won't be disappointed!! There's always a line but it goes fast. Definitely going back soon!

    Sometimes you'll get the fresh batch but at times you'll get the left overs from the day before, they just reheat them up.

But on a recommendation from colleagues, I was told to make the trip to the central part of town and check out Birria Bros. I'm a convert: It's the best overall place I've had in town. Their menus is simple and laconic without a lot of options: You pick from taco, burrito, quesadilla, and flautas and then you pick the meat: birria, al pastor, or carne. No craziness or Flamin' Hot anything. This is my kind of establishment already. The service is no-frills: It's an iPad with a cashier, and you get one of those pager things that buzz/sound when your food is ready. And then your food gets prepared in the truck and served. This is all anyone needs in life. I enjoy their quesotacos. They're a bargain and a great size at that. But my favorite are the flautas: They're cruchy, creamy, and cheesy. The combos are good too because the rice and beans are tasty. Their orange-colored salsa is smoky but absolutely spicy - definitely use with caution but entirely worth the burn. I think the best thing about BB is the value, as you get a great product for what you pay. I wish they'd open a location on the Southwest.
