    Chile de Gulfo

I'm still in disbelief that one of the best Mexican restaurants I've ever eaten at was in Redmond, Oregon. Coming from Arizona, I am still in denial. The grilled octopus appetizer was the most memorable to us. Our friend, who doesn't even really eat much seafood, ate this and loved it. The knife wasn't even needed because it was prepared so well that even with a fork, you could slice pieces like butter. Heavenly tenderness! I'm not sure if it's always that way, or we were just incredibly lucky that all starts aligned that evening but I still dream about it to this day. My main was the Chile de Gulfo. It's an open face poblano pepper stuffed with king crab and shrimp that's sautéed with onions and tomatoes and blanketed in a creamy chipotle sauce and sour cream drizzles. There was also rice and black beans but they were hidden under the pepper and chipotle cream sauce blanket. The cocktails are something they're known for since they house a diverse variety of Mexican liquors. We enjoyed some of their cocktails as we discussed our awesome day climbing at Smith Rock that weekend and this was our last meal in the area. What a perfect way to finish the adventure off! If you're down for some Mexican food with a modern twist and a blend of amazing cocktails and great service, look no further. You've found the "holy grail" right here in Redmond, Oregon.

Stopped by for a drink and appetizer. Margarita was great but can't remember which one we ordered. We tried the shrimp and halibut ceviche- it was amazing and I can't wait to go back for it again! Service was friendly as always!!

The very best Mexican food, customer service, and small town ambiance you will find. Family owned, as authentic of Mexican Cuisine as food as it comes in the Pacific Northwest. Order a margarita and the carnitas.

Awesome spot with tons of unique mezcal drinks and authentic Mexican dishes. I was even served by the owner who uses her grandmothers recipes for many of the dishes. Can't beat that!

Super welcoming. The special was chile releno (I can't spell. It was recommended. Exceptional flavor. The meat was a bit tough, but still amazing. Drinks were finely crafted. Delicious, and delivered with enthusiasm. I got dessert.... The empanadas were house made and fantastic. I'll be back.

We decided to give Carnaval a try after landing in Redmond on a trip to visit family over Labor Day weekend. We had a group of 7 so there was a little bit of a wait because they were BUSY. The restaurant inside was packed full. It was really warm inside and quite noisy. We started with the Chicharrón's. When they came out the were still crackling and the hot sauce was tangy and a delicious addition. My husband and I shared the fish tacos and the carnitas plate. The tacos were fresh and super tasty. They had a real crunch from the cabbage, and the sauce added a Smokey spice to them as well. The carnitas was so savory. Perfect amount of salt to accentuate the actual pork flavor. We are so glad this place was suggested to us. We will definitely have to come back next time we are in town.

Taco Tuesday which is really code for margaritas. Came here with family as it was their recommendation. Great margaritas, the zesty chaser salad was really good, and the other dishes we had were awesome. Can't remember the names of them. One of those meals where everything was just great. Would come here again for sure

2.5* Ive been here once last year and decided to finally write a review. I found the menu to have quite a few options but prices are a bit steep for what you get. What we ordered: -fried calamari: decently made but came with so little, it was probably $1.50 per piece of cut calamari.. -seafood stuffed pepper: i ordered this at their sister(?) Restaurant in Redmond where it was delicious. Here, the sauce straight up tasted like plain cream .. unappetizing. -my son had the alambres w carnitas where the bacon resembled bacon bits almost. I thought the dish didnt meld as well together as other places where weve ordered it. Carnitas itself was tasty though. -my husband ordered a breakfast dish which he said was good. Overall, i wouldnt return. We had leftovers to bring back and my husband asked for more tortillas to bring back and we were charged for those.. i understand theyre homemade tortillas but when all entrees are pretty much $22+, i think asking for more tortillas shouldnt be included. (My husband also ordered alcohol and I had a hibiscus drink which came in a small glass).

As always, they did not disappoint! We love the ceviche, carne asada, and margaritas! They are the best! Service was excellent and love the fun music of decades past. We visit every time we are in this area...thinking about relocating just to be near the goodness

Carnival Mexican Grill came highly recommended -- and it did not disappoint. My husband and I were traveling from Southern California and were craving Mexican food. I was expecting traditional Mexican food, but the menu was a pleasant surprise! My husband ordered the carnitas and they were cooked perfectly. I ordered the prawns in crema de chipotle. Incredible! I couldn't believe how delicious it was. It was happy hour, so we ordered blood orange margaritas. OMG! Best margarita EVER! Service was also great, our waitress was very attentive, and the restaurant was very clean and decorated nicely. My only regret is that there isn't a Carnival Mexican Grill in Southern California. If there was, I would be there weekly.

This was the first time I had been here, and it was FANTASTIC! The shrimp quesadillas may have been the best that I have ever had. They were fast and very kind. I wish that the restaurant was a little bigger, it was quite noisy, but that was the only complaint. Very cozy feel.

Second time eating here. Still top notch service, food and atmosphere. We split the Crema de Chipotle with chicken. I forgot to get a picture, but it was awesome. We savored every bite. Highly recommend. Also recommend making reservations.

Food is very good, but she's way overcharging by a mile. She raised her prices after COVID & what was $60 for 2 is now almost $90.

Love that they're branching out with more locations. More and more I have come to love this place…read moreeach time we visit central Oregon. I'm a huge fry guy. I know most people are, but I'm definitely a place that will wind me over if they've got bottomless fries they just absolutely big baskets. This place we always get a full order of their loaded fries and they always tried quite a few. I think the blue cheese and the poutine are our favorite. The poutine has a very good gravy now normally people slap any kind of gravy on and call it a day and for me a sub standard gravy will absolutely ruin the french fries. Luckily, the person working, there was super nice, and when I asked him his personal opinion on it, he ran back, grabbed a few french fries and a little bit of gravy to give us a try super cool Also, they got really good beer, selection, and sours and other fun things like that. This is one of the few places that I've had such unique over the top original kind of drinks. I really mean just I can't even describe to you until you look at their list there's just stuff you could never imagine. I will say this is something that we have written down before to try to find when we traveled back up north. Always laid-back always clean always easy parking. It's a no-brainer and they have a great happy hour.

The everyone is family vibe. We don't get that vibe in Redmond. In Bend we used to get a little bowl of bread Cubes and a small sampler dish of their homemade chimichurri that they were so proud of, and we loved. They don't do that in Redmond, not sure if they still do so in Bend... I think we've given Redmond 3 chances but staff are pretty indifferent, and the food doesn't wow us anymore. The brats and bangers are still good, but we feel it's not totally worth the prices anymore. Last time we were in Redmond location the women's restroom was out of tp. I told the staff twice and they were not busy, scrolling on their phones in between customers and they never re-stocked the to in the restroom.

We did not eat there as we had just come from another restaurant and we were there just for drinks and listening to live music. My cousin had told me that he and his wife really enjoy coming here and I can see why. There's a very fun vibe here . We got a table right up next to the side of the stage so we could really be part of the the action and feel the music. We . ordered drinks and they had a new band play there for the first time and they were fantastic. They sang a lot of great cover songs from the 80s that we all knew and sang along with , and they even sang an original song that the lead singer and his father had written . As they are finishing up that song, the singers, elderly father and mother had just walked into the pub to listen, and so the band played the song again for his father it was a really cool moment! My cousin introduced me to the owner, Vance, and he is very genuine and down to earth cool. The fine young lady bartenders were super nice and helpful and were always a pleasure to interact with. The 7th Street location in Redmond looks like an older log cabin, with a large patio out front. It's conveniently located to downtown Redmond, easily walkable from other restaurants, bars, and breweries if you're staying nearby. They have a number of core staples, plus a bunch of small batch beers you can read about on the chalkboard near the door. The bartender was immediately friendly and welcoming; I said it was my first time there and she told me it's the oldest not-for-profit brewery in Oregon, donating all their post-bill/payroll profits to local charities. I was also here at lunch time and ordered maybe the best tuna melt I've ever had - rich, buttery, and delicious. They have lots of beers packaged to go as well.
