I've gone here for many years. It's a marginal place at best. I've overlooked many faults over the years and not even complained about all the mistakes this place makes. Tonight, I mentioned a mistake that the website allowed me to order for delivery. I callled. The girl who answered said the food was number one and on the way, It wasn't. I called 40 minutes later and the girl who answered said I ordered pick up. I did not. She said I could cancel the order. I did. Then I ordered from a legit place and checked to see I wasn't charged from here. They did. I called and the girl said "Chris" the owners said "fuck him" ... you got pick up. Food is barely edible. It has survived by being the only place around. But it isn't anymore, This place sucks. I usually won't post a negative review but for the third time, I ordered bone in wings and got chicken nuggets. DoorDash always credits me, but that doesn't take care of dinner or my cravings. And the meatballs my husband had, in the spaghetti and meatballs, were teeny tiny. Not like the photo on the website menu. To be fair, we had a delicious pizza from here last week. I ordered delivery on a Tuesday evening (Pizza sandwich special) 2 for $12-one topping. When I called it in, I specifically asked for them to be saucy. I ordered 1 pepperoni & one sausage. I always tip well so with delivery fee and tip I gave the delivery driver $22. I'm going to be completely honest; the pizza sandwiches had hardly any sauce next to none. They were all dough, and between the toppings of the sausage & pepperoni on each sandwich it was about a tablespoon of each. TOTALLY DISAPPOINTED! The quality was next to none, and this has happened several times in the past. But I'm that guy that says I'll give them another chance. I have noticed the quality of the food being put out gradually getting worse. I'm one who doesn't care of the prices go up, but the quality of the food should not GO DOWN. Carbone's Pizzaria is okay - average - I probably wouldn't go back again. Carbone's is mostly setup as a takeout place. My experience as a sit down restaurant mostly sucked. The food was okay - mixed results. I'm probably being overly generous and I'm calling them out as a 3 out of 5. First and foremost - the pizza. The flavor of my pizza was very good. I really loved the sauce and the generous amount of cheese. On the other hand, my thin crust was so incredibly soft, soggy and soaked with grease, I couldn't eat any of it with my hands. It was like trying to pick-up a wet paper towel. I was forced to use a fork for my whole pizza. The rest of my food was pretty lame. My fried pickles were okay, nothing special. I suspect they were purchased pre-made from some wholesale company. Disappointing. My hot hoagie was okay. Frankly, I could have done a lot better at home. (I could have bought a small bag of Lays potato chips myself too.) My chocolate brownies were sad. They were dry. They tasted like they were made from mix in a box the day before, left to dry out for a day, and then thrown in a microwave for 30 seconds. A waste of money. I could have done better buying some pastries from the Holiday station across the street. No soda fountain machine??? They only have cans and liter bottles. (Again, setup for takeout, not inside seating.) I actually had to buy 2 cans of soda to rinse down all my food. Last but not least, the owner was super grumpy, never smiled, and acted like he just sucked on a lemon. Someone with a smile and a nice demeanor would have cheered things up considerably. Best delivery pizza n Hudson. The sauce and toppings are always consistent. This is not true with other pizzas in the area.

The pizza is great when they get your order correct. It's just seems that they are getting worse and worse at quality control. Sometimes the pizza arrives cold as well. Kind of stuck though they are only 1 of 2 that deliver to our area. read more

This pizza was just like I like it. Salty pepperoni and olives with a bunch of vegetables and cheese so thick, your teeth squeak when you bite through it. Crust was thin - crispy at the edge but flimsy and soft towards the middle. The pizza gets a 5 star review but the atmosphere was a major disappointment. It's a former subway restaurant with the yellow street scape wallpaper still up... But (Can I have permission to speak the truth?) they hung a bunch of gaudy 'art' - evenly spaced down the entire wall to spice the place up. Something else that bugged me - I counted five security cameras. We were the only diners there. So I asked the server- "is this a dangerous side of town or something?" She explained the liquor store next door brought in seedy folks and there was a shooting recently next door. All that said - the 'carry out' guys were flying in and out of there with orders... And people were coming in steadily for carry out. To sum it up - this is a great place to get pizza; I'd recommend getting it to go. read more

OK, seriously - everything I have ever had at Carbone's is great - but the pizza sandwiches? Oh man! There is nothing that compares to them!! Similar to a calzone but so exponentially better that you really must taste it to believe it. REAL cheese (I'm talking whole milk mozzerella!) and lots of it, a flavorful sauce with a tang (but not spicy - after all this is pizza - not an enchilada), fresh ingredients and a really good crust . Mmmmmm! Seriously, my mouth is watering as I write this! They are so good, that even though I live in CA now, I make sure to stop by for some when I am back in WI - even though I have to drive an hour to get it!! I order 1/2 bakes that I can then freeze and bring back to CA. Oh heavens - I covet those babies like they are gold! I agree about not being able to find any better in Hudson, but I would venture (if you were considering just the pizza sandwich) you would be hard pressed to find anything as good in the US. ***CAUTION - HIGHLY ADDICTIVE*** There is no shortage of good pizza places in America and I've eaten at a good share of of them, from Mystic Pizza in Mystic, CT to Andiamo in El Segundo, from Di Fara in Brooklyn to Lou Malnati's and Coalfire here in Chicago. Even Sammy's in Duluth is the stuff of legend.... but there is only one Carbone's Pizza. Oh, Carbone's, how we miss your copious amounts of gooey cheese; your tangy sauce and your fresh, hefty toppings. Damn the naysayers who slander you as greasy... we know it as heavenly pizza juice! I have taught a handful of others over the years how to make a proper pizza sandwich in restaurants far and wide - from Iowa to Idaho - but they will never compare to yours. This is the pizza we grew up on. I know I speak for all of us expatriate Hudsonites when I say that you, Carbone's, are the thing we miss the very most... and the first place we go when we come home to visit. The very name causes hunger pangs. Good pizza can be mass-produced; great pizza, however, must be crafted by hand. Carbone's is great, classic New-York-style pizza. I love to sit down in the Carbones in Hudson. It is decorated in a way that makes me feel totally at home. The girls working the counter were polite, and helpful. Breadsticks were great. The 4 stars instead of 5 is because typically I expect Carbones to be a bit more generous with their pizza topping. It tasted great but for a 5 topping pizza it was very very thin. The fond memories I have of the delicious pizza sandwich extend back to when I was a wee bairn, getting to pick where we got our take-out from. I always picked Carbone's. Seriously, I wish I still had the taste buds/stomach of a 7 year old. Unless they're picky little shits, kids will eat anything and I was the former. I was the pickiest little shit ever. And I loved this stuff. Now, I do cringe at the grease pools and regret that I may not poo for a few days after the cheese-splosion in a regular-sized sandwich, but I do it anyway. And by Jove, I do it with gusto. I ordered a small pizza with just a few add items added on and the pizza was not the quality I was use to from Carbone's. So I called them and explained the situation. The manager ran another pizza right out to me that made up for the first one. It was excellent. The manager was kind and apologetic. Always have gotten mostly good service through the many years. Well.... I've been ordering pizza and pizza sandwiches here since 1989... Now it's terrible. Undercooked and barely hot.. the crust Is like dough. I've given them enough chances with their 60-80 minutes of waiting because they can't get it out in time.. If it's always undercooked whys it take so long to get to me??? Very good pizza and wings! My dad said the wings were the best he's ever had from a pizza joint, which is high praise. The staff was friendly and helpful as well. My only complaint (and the reason I docked a star) was that I ordered and paid for extra cheese, and the pizza didn't even have as much cheese as when I ordered Carbones in Burnsville 2 weeks ago without ordering or paying for extra cheese. I get that it is a different restaurant, but both are Carbones and tonight the cheese quantity disappointed me. Pizza was tasty though, and I will return. read more

First time there last night. When we walked in there were only three customers in there but the weather was beautiful outside so maybe that is why. Ordered bread sticks with sauce and they were delish! Also ordered a a 16" pepperoni/green olive pizza. We have been to a lot of pizza places and this is one of the best we had. At the last minute I also ordered wings and they were superb. The only thing that I wish was that they would be located in one of the old historic buildings. When I called to express my dismay with manager "Jen" she said she would talk to her people. Also the price was different on my computer than charge, which Jen also disputed - whatever. i moved to this area over ten years ago. tried carbones hudson two times. pretty bad compared to other carbones. including the old school in saint paul. I usually do woodbury but it is a long drive, There is stillwater but hudson had the XL size for 34.00. Well it was not ready when i arrived which is no big deal because it will be reheted when i get home. When i picked it up the container was surprisingly light for a 34.00 pizza. So ate some and the taste was aweful and very dry. Got chills that evening and around midnight i puked the pizza on my bed. and in the bathroom sink. i get the sausage and mushroom pizza sandwich. every ingredient of this thing is world class! the crust is lightly browned and chewy inside. the cheese is incredible! not too salty. the sauce is full of oregano flavor and not too sweet or too salty... and the sausage had plenty of fennel flavor. wow!! this place blows every other Carbone's franchise away!!! read more

After getting the wrong order and management not fixing it a year ago, I thought I would give this place another chance. Well it is still run terribly! I bought the 10 for 20 deal that is on Yelp here. The staff had no clue what the hell that even was. After waiting around for a half hour for them to figure it out, which they never did. They finally managed to take the $20 off my bill. Meanwhile my pizza sat there getting cold. The pizza was very greasy and the crust was really soggy. I don't think I'll come to this carbones again.
