My personal benchmark for any coffee shop is their Americano. There's nowhere to hide when it comes to the quality of the beans and extraction, and Six Over passed with flying colors. The aroma was floral and really distinct - something you don't really get from larger chains or even some specialty shops. It had a slight bitterness up front, but as it cooled, it mellowed out beautifully and became incredibly balanced. We also ordered a vanilla latte, and everything about it was on point from the silky texture of the foam to the simple heart poured on top. It struck that perfect balance between milk and espresso. The pastries (from Ad Astra) were a great addition. We ordered a kouign-amann to share, which had an amazing crème brûlée-like bottom. I do wish it could have been slightly warmed up. What really stood out, though, was the atmosphere. The staff were laughing, joking with each other, and engaging with customers the whole time we were there. It felt genuine and welcoming. Pretty sure they charged an extra dollar for each cold brew even though the vcb already had the syrup up charge in the price. May not seem like a big deal but that certainly adds up in a day and is certainly dishonest- maybe a mistake but one that shouldn't happen IMO. Left me feeling a little "bitter" when I walked away and drove my kids crazy talking about it lol.
