From the moment we started ordering, it felt like we were constantly being told "no." Multiple dishes on the menu weren't available to order, with little explanation or effort to offer alternatives. It was disappointing, especially when we had specifically come to try several of their signature items.
The most bizarre part of the evening was the drink service. We asked for wines and liquors that were visibly displayed behind the bar, only to be told they were "reserved for the owner" and unavailable to paying guests. If bottles are on display in a restaurant bar but aren't actually available to customers, they shouldn't be presented as part of the experience.
The staff wasn't rude, but the overall attitude came across as unaccommodating and dismissive. Instead of feeling welcomed, we felt like we were inconveniencing the restaurant simply by trying to order from the menu.
Unfortunately, this was a disappointing experience from start to finish, and we won't be returning. With so many incredible restaurants in Amsterdam that are happy to serve what's on their menu and behind their bar, it's hard to recommend Sebastian.
Bar and restaurant staff continuously said "this is the worst day of my life."
