Here are the notes I took during my recent dining experience at Uformel on my trip to CPH…read more inventive and inspiring - red wine, light, semi sweet but modest - Potato bread: crunchy crispy, lightly pan fried exterior (reminds me of a dumpling exterior but incredibly rich interior. Butter deliciously salty. If they served this with ice cream or something sweet for dessert it would be the perfect sweet/ salty combo - Hiramasa dish: light, refreshing dish. The cheese foam bottom is reminiscent of a whipped, light sour cream and adds depth to the light fish. The shaved asparagus and fingerlimes add the perfect touch of crunch and acidity - Witch flounder, so delicate and mild in flavor, the purée adds depth to this dish while the bread topped outside creates structure.I've never had such a light piece of bread topping Love the garlic dollop and radicchio topping. Every part of this dish feels intentional - Sweetbreads: perfect cook on the meat, I love the light sherry paring with this since the main part of the dish is fried. I loved the combo of pickles and caramelized onion but I'm an onion lover. (Call me shriek) Definitely a nice contrast in texture and more of a main dish than the other 2 - Lamb: the only dish that didn't nail it for me. Cooked well but Felt under seasoned and I didn't have a distinct flavor profile or direction. A bit plain and forgettable - Dessert: tangy, creamy, a great cozy way to wrap up the meal. Unique but simple in design, refreshing and zingy

Amazing meal in a very cozy environment!…read more We opted to sit by the open kitchen (front of the restaurant) so we can chat with the chefs...it was the best decision as we learned so much about the cuisine and the culture on our first night in Copenhagen. We chose the 3 course option and my friend and I picked 2 different choices for each course so we can try different food. For appetizers, we had the salted cod and the veal tartare. Both were equally delicious and the combination of ingredients were very creative. For entrees, I enjoyed the fish (fried plaice) a lot while my friend liked her pork belly. I am more of a seafood person and the fried plaice was definitely up my alley! For desserts, both choices (sorbet and apple trifle) were simply amazing. The presentation for all the dishes were very well done and each course showcased all the fresh and local ingredients that Denmark has to offer! The bread and the butter were so yummy that we couldn't stop eating. We happened to be there when the restaurant was celebrating their 7th birthday so the sommelier poured us extra wine and gave us a shot of schnapps! The staffs/chefs were all very friendly and funny! Not to mention, the price for the quality that we received was very reasonable! We had a blast there! Make sure you ask about the story behind "pony".

We were early for our reservation but was no problem to get seated right away as the restaurant wasn't too busy on a Tuesday evening. Service was friendly and professional. It's a small menu with 3 choices each for appetizers, mains, and desserts. We chose 3 courses for 425DKK which I think was decent value. The food was very good. I think I'd describe it as elevated comfort food - dishes were filling and delicious but flavour combinations were unique and there were some more 'modern' touches (foam, dots of sauces, etc), which added to the dishes rather than overwhelmed them. We started with delicious, hearty bread served with a huge pillow of airy butter (the server told us it had been whipped with buttermilk). The Danes really do great bread! I also had a delicious glass of sparkling wine. We were able to taste the wine before the server poured the whole glass which is always a nice touch. Unlimited water (either still or sparkling) was included for 15DKK (although I only found this out later when we got the bill). I started with steamed mussels which were served with carrot puree, red onion, fennel, and celery. Mussels were served on a plate without the shells, with garnishes mixed in. For the main I had roasted cod, with spinach and potatoes on the side along with celeriac foam, topped with bacon and crisped potatoes. For dessert I chose the raspberry dish, which was a scoop of vanilla ice cream surrounded by raspberries, toasted meringue, and crumbled almond cookies. I don't think this was the best meal I've ever had, but in terms of value in such a pricey city and the great service, it's definitely worth a visit.

Ordered "Six Favorites" and "Fast Four" courses. The staff helpfully suggested that they could replace lamb with monk fish for one of the courses on the "Fast Four" for my spouse. The starter stole the show: Zander with aromatic blackcurrant wood oil, finger lime, kohlrabi infused in dashi, bright citrus herbs and topped with sauce of fresh apple, celery, dashi. An amazing dish, unlike anything we've tasted: light, refreshing, clean-tasting, illuminated by aroma of blackcurrant wood oil and citric accents. A delight for the taste buds. Homemade sourdough bread (brushed with smoked bone marrow) was very tasty but seemed slightly burnt on top and quite salty. We enjoyed the texture contrast of the puffed carrot skin pre-starter snack: this contains carrot with elderflower purée, topped with fermented carrot, pickled thyme gel and roasted hazelnuts. The combination was unique and complimentary. Dessert was sea buckthorn sorbet, mousse with parsley crumble: well conceived, exquisitely composed. The sorbet was unbelievably smooth absent of any trace of iciness. ****.5

Most of the dishes contained contrasting flavors and textures. Although all dishes were good, there was not any that made me want to return to have another serving (1/2 star off). I did think the squash sorbet with parsley crumble was a notably unique dessert and wanted to highlight that as the favorite course of the meal. Staff was friendly and service was attentive. I wished they provided spoons with more dishes though (1/2 star off). Most of their dishes came with a decent amount of sauce or foam. I wanted to scoop them up, but didn't end up bothering because I didn't have a spoon. Yes, I know I could have asked for an additional spoon each time. I just wanted to dive into the dish right away. I was very hungry!
