    We stopped by for lunch and this place has such a vibe - I love greens and this place made me happy! Very nice ambiance with friendly service. We had a couple of drinks and ordered the fish. Although it was mostly my husband having lunch and me planning on skipping mine - I ended up having many many bites from his meal. Recommend

    What an amazing experience!! The atmosphere and design of the restaurant was truly incredible! The food was delicious and the service was superior. All the servers were very knowledgeable and gave detailed explanations of each course. For our menu, it started with a line soaked pear and a puff potato pastry. We then had scallops that were out of this world!! This was my favorite part of the course, as an avid scallop lover, because they were fresh and bursting with flavor. Next, we had homemade sourdough followed by a mushroom soup. Both were delicious! Our main was a cod dish with a side of kale salad. The fish was cooked perfectly and the kale salad was light and fresh. We ended our meal with apple sorbet that was slightly sweet and a little tangy. The whole experience was great. I would highly recommend this restaurant and can't wait to go back the next time I'm in Copenhagen.

    While it may not be a Michelin star restaurant in a city full of them, this place hit all the right marks: classy, intimate, relaxed, attention to detail, and memorable! We enjoyed a 3 course menu in September 2024. We had the steak with roasted corn, which had a rich but elegant taste and wasn't too dense! We also had the cod with pickled greens and white cream sauce, which was light and flaky but flavorful. There was also a great vegetarian crepe, with fresh veggies, shaved cheese, and aioli sauce. Everything on the menu looked interesting and had unique touches. The service was great, as the waiter and drink attendant were attentive but not pushy. They also answered all the questions we had about the menu. The atmosphere was rustic and had dozens of plants on the wall and floor that made it feel like a greenhouse in the best way. Overall, highly recommend this place!

    Came here because of a friend's rec and it did not disappoint!! Everything was so good!! We did a walk-in as a party of 6 on a Monday evening around 8pm and we were seated immediately. The restaurant is very spacious with two floors and lovely decor (lots of plants!). Our whole meal took about 2+ hours but we were catching up with friends so the pacing felt just right :)

    Firstly, to get the good things out of the way, the ambience is nice and the decor is beautiful. Service is also friendly, prompt, and attentive. However, that is about all this location impressed us with. We are from LA, and we came to Vækst after finding it on the Michelin Guide, and seeing how well it is reviewed. I'm unsure if this is just a difference in tastebuds or culture, but we were extremely underwhelmed with pretty much every dish. We got various courses with the set menu and I will unpack each of them below. Potato Cream Cup: This was good. Nothing amazing, but it has a nice robust flavor from the cream and tomato powder. Deconstructed Salad: It was just a leaf of lettuce with a mint and pea chutney-style sauce. Nothing innovative about this and it fell flat for us. Bread: The bread was stale and took force to be able to cut or ripped apart. Like how do you mess up a roll?? Salted Halibut: This was one of the better courses we had. The fish was served with diced pear, a horseradish sauce, and a mussel broth, that all worked nicely with each other. Beef tartare: This was fine. Texturally I thought the crispy rye was a bit too crunchy and hard on the teeth with the soft beef. Mushroom Soup: This mushroom soup looked extremely promising, however it ended up being the worst dish of the night. It tasted like a fan of cream of mushroom soup, which had been salted to the point of being inedible. (And we are all ethnic people from America who eat quite salty!) No one in the party finished this, and when we asked the waitress, she said she agrees that the soup is too salty. No sorry, nothing. Not sure if this has not been communicated to the chef, or if they refuse to take advice, but this course was inedible. Plaice: This dish was good, but nothing great. The fish needed a knife to be cut and was tough. The cream sauce was nice with the burst of ikura. The wilted lettuce was fine, but the sauce that came with it was quite nice. Nothing to write home about. Tenderloin: The tenderloin was nice. The medium rare leaned much more towards rare, but we did not mind. The sauce with mushroom was nice, and paired with the Hokkaido squad, it went nicely. Apple Sorbet: This was one of the better courses as well. The apple sorbet was light and refreshing with notes of lime. Textures and flavors worked well together. Three cheese dessert: The cheeses were okay but nothing unique. No interesting flavor combinations, and all generic (but good) cheeses you could find at a farmer's market. I mean, let's be real, you are spending a minimum of $100 per person, and if you are going to be an establishment that tries to exude fine dining and charge for tap water, your food better be on par. Which it definitely was not. Food was below standard or any restaurant back in LA for 4x the price.

    Great experience, we did the tasting menu and it was absolutely fantastic. The flavor combinations were next level. Everything is organic absolutely nothing is processed.

    I knew that Copenaghen had a great food scene and our experience at Vaekst validated that piece of information. With a reservation made two hours prior we were accomodated to a very cozy table by a window. A couple of waiters alternated during the fixed course meal with multiple wine tastings and a few extra culinary surprises. Impeccable service. Great quality of elegantly displayed food. Very good wine selection. One negative note: the upper floor wasn't well ventilated and we could smell smoky odors from the kitchen throughout the meal. A Michelin guide (mentioned) unique but classy restaurant.

    Beautiful food, cozy ambiance, and kind and considerate service. Everything we ordered was not only gorgeously plated, the flavors complimented each other so well. Seasonal and local ingredients were a major highlight. And don't be shy, give the non-alcoholic wines a try, they're pretty tasty!

    Truly such a beautiful meal. We each got the non-veg tasting menu (they had a tasting menu with meat and one without) but ordered the celery main as well. Everything was beautiful but the fish really stands out as well as the pear sorbet. The meal was perfectly paced, the service was attentive and they made good suggestions, and the interior is beautiful and tasteful. We went in on a Sunday night with reservations. It was full but not packed.

    Vaekst is a Nordic restaurant centered around fresh produce located in a space with an indoor greenhouse and an abundance of plants. We had the three course meal for dinner. The surprise starter was a waffle with brown butter, cheese and watercress followed by fresh sourdough bread and goat milk butter. The appetizer was a salted cod topped with gooseberry. After the starter we had surprise mid course, a potato and cucumber salad with potato crisps topped with a cream cheese cream. The main course was fried hake served with beurre blanc sauce, peas, dried shrimp and served with a side of mashed potatoes. Dessert was a yogurt sorbet with caramelized rhubarb, white chocolate and hazelnut crunch. As a yogurt hater, I substituted for three types of danish cheese. We loved Vaekst for its fresh, clean flavors and focus on greens both in their decor and their dishes

The market, I ordered the Oat Porridge which came with apples, roasted almonds and caramel sauce, my mom had the All In! and my dad had the oat waffle. All of us (mostly) left satisfied. My picky father loved his waffle. And I really enjoyed the porridge I had. The oats perfectly cooked, the apples and almonds gave it a nice textural contrast. Plus the caramel, which was more like a dulce de leche added the perfect amount of sweetness without being too sweet. My mom was a bit ambivalent because the All In was too sweet. But to be fair, All In includes all of their toppings. Including chocolate and caramel so her assessment was fair! The Grød at 7Eleven had this wonderful chia pudding, layered with yogurt, natural peanut butter, a berry compote and nuts and I was obsessed. So simple, yet so wholesome. I found a cup at the airport and proceeded to import it back to the States. Overall, it was definitely worth a visit (or 2) to have my mind blown. Grød may not have intended it but this lil Westerner is now leveling up her oats game thanks to their menu!

In the middle it beef that was cooked perfectly (so it was tender, juicy and locked in its natural flavor), and slices of butter. 5/5 Service was great and attentive.
