The meat is made of a blend of seasoned lamb and beef meat molded around a vertical spit. The spit rotates and the outside is exposed to a heat source. As the meat broils, the chef carves off slices or chunks from the sections that have browned. Typically the gyro meat is cooked to "well done." The meat in my gyro was not browned; rather it was lighter colored and had a mealy mouthfeel. I've eaten gyros in traditional Greek restaurants and casual eateries in Chicago, Austin, San Francisco Bay Area, and now Denver, and this was the first time I've tasted the meat cooked this way.
