The pulled pork was on a grilled bun. The pork was a little dry to me. They have two sauces that you can have. Both are homemade. The regular was a little sweet and had a nice taste to it. The spicy had a little heat to it. Both were homemade and great. The mac n cheese was of the baked variety with plenty of cheese in it. They utilize spiral noodles in their variation. The baked beans were made with brown sugar and some pepper added, very tasty, great texture (will return just for them). The cole slaw is of the sweet variety, was made with several types of cabbage, carrots, celery salt and pepper.

The young gal manning the window was polite and friendly. I went with a Chicken Torta, and took it back home to eat, because there are no tables to eat in this parking lot; it's basically a to-go operation. The Mexican sandwich was made fresh to order. Like how they chop the chicken up into smaller pieces. Could have used a tiny bit more filling, but not gonna complain. I liked the sandwich, and double-points for the foil wrapping inside the styrofoam container - held nicely for the ride home and was easy to eat.

His family has owned a number of restaurants and he decided he wanted to try his hand at a Food Truck. They have a very limited menu to begin with testing the interest of the customers. They're smoking with hickory and apple wood. I ordered The Squealer. A pulled pork sandwich with onions and Smokin Sweet sauce. It came with chips and a drink. The pork was a bit dry BUT had a ton of flavor to it. I will definitely return when they get a full menu going. Emily, the owner/chef, just opened for business last week. The Violet Festival was her first customer experience. New, bright green truck - can't miss it. She was in the process of the last steps before opening on a consistent schedule. Out and about again today with my niece, we noticed the truck's sign was on. Two picnic tables were added, so there's room to sit and eat. Chatting with Emily, she's super friendly and personable. We ordered two Spring Rolls and 8 Potstickers. We had to wait a little longer than usual, but the truck is new, and operated by one woman. First out was the Pork Potstickers. The potstickers are sold individually - $2/piece. A side of what tasted soy/teriyaki dipping sauce. They were full of flavor! Hot. Solid consistency. The pork was a delight! As we waited for the second dish, we were given Crab Rangoon to try. A bit too much cream cheese for my tastebuds, but not bad, nonetheless. Want to add that the triangles were filled full, so that's always a plus for getting your money's worth. Great crispy fried taste of the wrapping. Oh, and Emily offered us a free bottle of water to compensate for the delay. The truck did not have cooked noodles (for the Spring Rolls), so Egg Rolls it was. They were fantastic! Chicken and veggies. The dough was cooked to a slight crunchiness. Satisfying! The owner set up a picnic table and gives you red trays to carry your meals. The only draw back can be the weather and the traffic. The only suggestion they had for us was to give us some of the sides we asked for FROZEN on the day of the wedding so we can cook it ourselves. We also wanted to rent a hot box to keep the food warm during the day they also said we could not use it because they needed it themselves and suggested we just put the food in coolers because "it works the same." As you can imagine right before your wedding this was extremely stressful and I don't wish this happening to any bride. I do not recommend them.
