    receipt for burrito
    Austin R.

Burritos 101: when a customer asks if you have Chile verde burritos - Chile Relleno is not the same thing... saw it on my receipt but figured what the heck I'll give them a try... also ordered the standard Asado burritos. FOUR BURRITOS FOR CAME OUT TO ALMOST $25! Thought, wow I guess maybe they're really good burritos. Nope. Chile Relleno tasted like it had been in a freezer too long and then fried and the Asado was anything you could expect from a crappy gas station.

Nachos - half order. Kids loved it!

I rode in half expectin' a little more alien flair maybe a green fella slingin' hash behind the counter but that ain't the hand they deal. What you do get is a clean joint, friendly service, and a plate that shows up honest and hot. That patty melt? Solid. Crispy, greasy in the right way, and worth the stop. Breakfast holds its own too eggs done right, no nonsense, just good fuel for the road. And for the record, the whole UFO business traces back to the Roswell Incident, which actually went down a ways outside of town but Roswell's been carryin' that legend ever since. End of the day, Cowboy Cafe ain't about gimmicks it's about doin' simple food right. Clean place, good service, strong local backing. Not quite outta this world... but a dependable stop all the same.

Pulled over to get a coffee before long shift. Super cute and clean. Young girl at counter was very friendly and nice when I took a little extra time trying to figure out what I wanted. On the large board behind the counter was the special drinks and food for the month of February. I decided to get a chocolate cherry iced latte with white chocolate instead of milk or dark. I also got the white chocolate strawberry scone. The scone came warmed , it was so good I should have gotten 2 of them. My iced drink was good, even with swapping out of white chocolate it was tasty but a bit on the sweet side. They also have milk alternatives, I got oatmilk. I like that they use paper cups to help with the over use of plastic cups and not a lot of places to recycle them.

The second you walk in, you know this is the coffee spot in town. The music, lighting, people, and overall energy made it clear why it was packed. Aliens everywhere, local art and curiosities lining the walls, and that effortlessly cool, eclectic vibe where you don't know where to look first--but in the best way. The food and drink held up just as well. Coffee and teas were solid, with a local tea vendor on site doing samples and selling loose-leaf blends, which was such a great touch. I had a vegan hummus salad that was genuinely good, plus some food bites, while my husband loved his burrito. I also stumbled upon handmade origami earrings (cranes and roses!) that I was obsessed with, along with books, swag, and random treasures--at one point I picked up a Japanese art book I would've bought instantly if it had been for sale. And just when you think you've seen it all, the space keeps going: a wine lounge in the back, a roasting operation, more rooms to explore. Huge credit to the staff--only a handful of employees holding down a nonstop crowd, all with great energy. If you're passing through New Mexico, even if Roswell is slightly out of the way, Stellar Coffee is absolutely worth the stop. The hidden wine lounge with speakeasy vibes is named Interstellar - SO CUTE !!

Service was great and I loved our waitress, she was super friendly and made sure our coffees were full and our meal was good. This was our first meal at Roswell and it was SO good for a small-town breakfast cafe. It was also our first daytime experience with the touristy Alien decor via their window painting. Breakfast Quesadilla: With hashbrowns and beans. My friend loved this and destroyed it. I tried a quesadilla and it tasted amazing. Carne Asada: I got this plate and just based on the high quality of the rice and beans I knew the meat would be good. The rice and beans were seriously some of the best I've had in awhile and when the tortilla came in its own container I knew the meat and tortilla would be amazing as well. This was a decadent breakfast for me and tasted great.

This was a nice portion of food with a good amount of flavor in each dish. The beef enchilada was probably the best item out of the three - well seasoned beef in a tortilla, covered with good chile sauce. The service was just okay - it seemed like we were almost inconveniencing our server, but at least the host was friendly. Despite being fairly empty, it did take a little while for our food to arrive. After some research, this seemed to be one of the better options for New Mexican food in Roswell, so I'd probably go back on my next visit.

A little bit less common yet, we find restaurants that provide this space over a long period of time. Martin's Capitol Cafe would be such. We ordered a tamale, carne adovada and a chimichanga. The chimichanga wasn't deep fried but pan fried, which was not common and already a red flag. We got our food and it was just OK. The chips and salsa were good, but the food was OK. My portion was also small, and the rice was a bit dry. Maybe we ordered wrong... The restaurant is also a bit well worn. It adds charm but I think charm that is not backed up with good food is like a band-aid over a bleeding wound.

It's a reasonably sized patriotic diner on the side side of the alien-themed town. But the service on November 29, 2025, was wonderful. Very down-to-earth. I popped in to get a table for 5. I warned the first waitress I had that my company would be much later and I could wait elsewhere if necessary. She wouldn't have it. She asked what I was drinking and brought out an orange juice to me promptly. I had great conversation with her afterwards. Once my party finally arrived, my waitress's shift was over so we switched to a younger much less experienced girl, but she was still fine to me. My ex was less impressed and proceeded to speak negatively about the "people of Roswell," but I'll keep it positive... at least he paid for lunch. I covered the tip since I appreciated their welcoming, warm attitudes. All of our burgers were juicy - not overly greasy. The portions were huge. If you're law enforcement or military, you will be especially appreciated here - and thank you for your service. Ample parking out front.
