Possibly the best sandwich I've ever had was the eggplant parm from Burdy, with the Calabrian chili mayo. The thin slices of eggplant are fried, but not oily, and bathed in a herbed tomato sauce that has you wondering whose soul was sold to the devil in exchange for such a recipe. Worth it. The bun contains what could be a messy situation and does it with grace.. an enriched, but again not oily bread. Every bite is followed by minutes of contemplation and suggestive, meaningful glances at the sandwich you are consuming.. This is good. This is very good.
