Their baguettes are to die for. Everything about that sandwich was perfect. I was intrigued, and since I can always go for some carbs I decided to head in and check this place out. Unlike most bakeries I visited, Boulangerie Guillaume has a much more modern look, and is larger than a standard bakery. Walking in, I was immediately greeted by stairs which led up to the main production area. All of the bakes were arranged on the back-wall perimeter of the space separated from the pedestrians by a glass wall. The color scheme was mostly black to contrast the bright yellow of the bags and signage. The arrangement of the bakes, combined with the color scheme and modern aesthetics, resulted in a stunning, visually striking presentation. I wasn't too hungry, but I can always go for some sweets and their date square looked good. I went with that, along with a cappuccino. The square was delicious - the dates were high quality, and the crust underneath was moist while maintaining its integrity. The cappuccino was also good, a great complement to the bake. Service was efficient, and overall I had a great experience at Boulangerie Guillaume. I definitely want to return to explore more of their menu - I noticed they had some savory items so perhaps for some lunch. Definitely one of the best bakeries I visited in Montreal.

The focal point of the bakery is of course, the counter. There is a paper ticket system for service on busier days. When I went in, it was quiet so ticket optional. The maple roll was densely packed and so much more than a snack. It's really bready so you could have it for breakfast. Slightly sweet and covered in a light glaze. The tart was light tasting and the pastry was full of buttery goodness. Texture is a little bit interesting because it's a cold tart, the juice from the pears soak into the almond paste and make it a little bit cold and slightly mushy. Some people might not like that but I found it ok. Service is friendly and attentive. Pastries are good but a bit expensive.

Others on the other hand, do. Choose between window stools or the shareable high-top tables+stools in the middle of the shop to sit a bit and enjoy your coffee or pastry. Service was outstanding and price was reasonable. The energy isn't rushed but do be mindful that this location is small. The sourdough Baguette we got was anything but 'chain' and had that perfect crispness and soft inside that said, 'homemade'. My Matcha Latte was good and hubs liked his decaf Cap. My Chocolate Croissant had a wonderful glob of dark chocolate goodness in the center and wished I had another. Their kouign-amann was heavy; considering what I've read about its light interior, this one fell short.
