It's been several years since I bought a frozen pie from a store, I now know why. At $12 this is overpriced for one, secondly.... the ratio of toppings to cheese is disproportionate. Dough, meh. At this rate, you can get 8 Totino's pizzas for around $9 and reminisce of your childhood, maybe get food poisoning, but at $9 that's a pretty cheap diet! I appreciate their attempt at being a handmade pie, local, etc.. just fails. Credit to the sausage though. 1.5 read more

I prefer this frozen pizza over a large majority of pizzerias in town. It's hands down the best frozen pizza I've had: go-to flavors are The Texana, Daisy (I add fresh spinach and then bake), and the sausage/pepperoni. The key is to let the pizza fully defrost per the instructions. I purchase these regularly from H-E-B and Central Market. The only time I was ever even slightly disappointed is when I tried to put it straight from freezer into oven: follow their instructions, and you should be good! read more

I'm so sad to even write this post! Bola pizza used to be our favorite pizza treat, bubbly delicious crust, pretty good toppings and just delicious. Well ever since they changed the packaging all has gone downhill! We were bummed about the boxes because it was so charming and special, but now the crust is completely different! No bubbly crust and no special flavor or texture. We tried 4 different times just because we were hoping it was an off production day, same sad flat pizza, sparse toppings, and one time like a quarter was completely burned. Not sure what happened but looks like we need a new go to, bummer. read more

This pizza is amazing from the start. The key is to let the pizza defrost completely and then cook for the cook time suggested time for that pizza. They have several types of pizza like: lamb, mushroom, sausage & pepperoni; and a couple of other flavors. you can serve to your family, individually, groups, or large groups of people. Best. Freakin'. Pizza. In. Town. Hands down. First of all, the crust? Eet ees perfect. Just a little bit chewy, just a little bit crunchy, and just a teeny bit sour - in other words, delicious in every way. The owners of this business spent several years developing this crust recipe, and it shows. I've had lots and lots and lots of Bola pies. I'm hard pressed to choose a favorite, but Garlic Two Times makes me want to. It should be renamed 'Gasm Two Times. But then the Texas Board of Education would probably try to ban it, and vampires would take over the state. Olive oil poached garlic cloves are mixed with shaved garlic and arugula atop sweet ricotta and mozzarella. Garlicgasmic. You can hire them for private catering (wood-fired pizza oven on wheels! wheee!) or snag one (or two, or three) of their pies at the downtown SFC Farmer's Market on Saturday mornings. Their menu changes seasonally, and they source many of their ingredients locally. Eat well, feel good. Full disclosure: I am friends with the fine folks who gave birth to Bola. But not such good friends that I would lie for them in a Yelp review. I've got a Yelputation to worry about, here. Fortunately, I don't have to... If you want to eat pizza nearly guilt free this is the pizza for you. They are a local company using organic tomato sauce, hormone and antibiotic free cheese and use local ingredients. I first tried their frozen pizza delivered via Greenling. The pizza was their GodMother and made of their organic tomato sauce, smoked mozzarella and caramelized onions. The cheese was absolutely delicious and the smokey scent lingered in the house for hours. The issue with the frozen pizza was the crust. It was too chewy and broke in the middle causing cheese to spill onto the pizza pan and oven. The second time I had Bola Pizza more than made up for the first go around. Bola Pizza had their wood fired oven on site at the East Austin Urban Farm Tour and was serving a roasted fennel pizza. The ingredients included Parmesan, smoked mozzarella with roasted fennel and baby red onion from Springdale Farm. The 3 day fermented dough came out of the oven perfectly baked and with the gooey cheese and flavorful fennel it was absolutely delicious. The employees were friendly and explained why the name Bola. Bola was the owners' gorgeous Blue Lacy (Texas state dog) who was also the crust taster. read more

I used to LOVE these pizzas. Since the new packaging, the pizza is smaller and has less of everything on it. I have bought my last pizza from Bola. I understand costs of everything are up. All of those individual ingredients on a pizza I took a chance on. Worst frozen pizza I have ever had bar none. Tasted like bean dip on cardboard. Absolutely gross. They list all these great ingredients on the label but I guess they have no idea what to do with them. I've brushed my teeth twice gargled with hydrogen peroxide baking soda and Listerine and I still can't get the nasty taste out of my mouth. It's actually insulting how bad this pizza is. The oven that powers these delicious pizzas takes 6 hours to warm up to cooking heat. It makes sense, it's imported from the land of slow-food, Italy, and it takes that time to make sure that the cooking situation inside the oven is perfect. How perfect? Pizzas take 3 minutes to cook. You can't beat that with a stick, and in some cases, that'll beat your microwave. The pizzas are eclectic. I had a chance to try their basic margherita pizza, which they garnish with truffle, instead of olive, oil. Despite this nod to the latest culinary fad, the truffle oil enhances and doesn't ruin the flavor. Part of the flavor is informed by a dough that took two years to "perfect" in the minds of the owner-chefs. A cross between crispy and soft-crusts, you taste the slightest hint of sweetness in the dough which makes everything better. My personal favorite, as a meatosaurus, is the Godfather. A not-subtle hint at its ingredients, it is actually the caramelized onions which are the star of this pie. Give it a moment to rest before you dig in. It's very, very hot. :-) PS I didn't have a chance to try the breakfast pie - but they break a couple eggs on top of the pizza before putting it in the oven. It doesn't just sound like a great idea. They had sold out of all of them before we even got to their booth at the Farmers' Market. read more

BOLA! Bola, come get some dinner!! I was chilling and relaxing a weekend at the farmer's market when I started to get a little rumbly in my tumbly. I have to admit, I was a little skeptical about paying $12 for a small pie (which is definitely a smidge smaller than the boxes they come in), but we got the breakfast pizza and it was definitely worth the hype. Gooey cheese, oven-fired crisp but soft crust, bacon and onions with two gooey, runny eggs cooked JUST right on top. I'd recommend going early since we got the last breakfast pizza around 10:30, and probably skip the extra egg for $2 (1 is enough). Totallyy can't wait to try the other winners. What I'd love is if they were a little bit larger for $12 a pop, but a yummy little indulging luxury easily split among friends. I do remember one of my friends casually scraping the excess egg off the box. A secret lol, but is that proof of how lip-smackingly satisfying Bola is? Bring cash. Great with a refreshing peach ginger lemonade a few stands over. We also had some ample discussion on considering them for catering our friends' weddings. The boy has a picture of Bola's Truffle Daisy pizza pie on his phone. He gazes at it with worrying frequency. He even thought it prudent to joke that he has found someone new and would leave me for it, showing me the picture on his phone while saying as much. I karate chopped his smartphone to the ground. It is no longer so sage. We tried this spot as part of the downtown Austin Food Tour and have been hooked since. The owners told us about their 2-day dough-making fermentation process - and you can easily taste that this is not your average dough, not even your awesome dough. It is divine, and so complex that the best way to describe it is to eat it, and then when you want to remember what it tastes like, just eat it again. And so on. But it's SO HARD to get a fix. We plan our Saturday around getting to the Republic Square Farmer's Market. It's the only place we've seen them, with us flocking to their oven like 60's teens to a Beatles concert. We can find them nowhere else. This weekend we tried the bolognese style pie. It was good but a bit oily - nothing beats the Truffle Daisy. The pie with sausage is a strong contender, but somehow that TD is the quintessential pie. The crust shines in all it's chewy, flaky perfection, the mozzarella glistens in it's gooey glory, and the... Excuse me. I had to find a napkin to clean up my uh slobber. Thank you, Bola. My search is finished. We all love pizza. I've traveled through various "HAVE YOU HAD _________ STYLE PIZZA?!" places and have tried what was considered 'the best." On my Downtown edition of Austin Eats Food Tours, I sampled the most perfect pizza I've ever had. And I have no regrets saying that. They have their own fire oven, covered in blue tile. The staff is constantly making pizza, serving pizza, and announcing pizza. When I saw my piece of pizza stringing from the box I knew I was in a good place. I had their Truffle Daisy pizza (mozzarella, tomato sauce, shaved garlic, and all the love in the world). It's obvious their crust was tested over a long period of time. They made sure it was right. I've learned that they cater private parties. With pizza this good, we all now have a reason to throw a private party. Will someone at this company please date me? I'm normal, I promise. I first heard of Bola Pizza via Michelle C.'s blog a while back and was so envious her friendship with the couple who throw these amazing sounding Pizza Parties and thought I would only get to live vicariously through her food porn pics:) Until I discovered them at the downtown Republic Square Farmers Market a couple weeks ago. They were serving 3 different pizzas from their mobile Wood Fired oven and we decided on the Breakfast Pie since it was 10AM. The Breakfast Pie had the perfect ratio of chewy to wood fired crunchy crust topped with a tangy flavorful sauce, cheddar cheese (Full Quiver if I recall correctly) Speck (a salty smoky cured ham) from Antonelli's, red onions with a perfectly poached egg. All pie ingredients are locally sourced and budget friendly at only 12.00 for a 12" pie made with all local and organic ingredients! This review is... almost three years late. Bola Pizza catered our wedding and did so in splendid fashion. The owners are very easy to work with and make some of the best pizza you'll ever have. We ordered three types: savoir faire (roasted fennel, red onion, smoked mozzarella), lamb (garam masala, lamb, cherry tomato, red onion, piave), truffle daisy (tomato sauce, mozzarella, black truffle oil). Each was superb. If you have an event you want catered by friendly and talented pizza perfectionists, book your event with Bola. I was fortunate enough to attend the first event since the launch of Bola Pizza"s Wood Fired Mobile Oven last night. The mobile wood burning oven made its maiden voyage last night at National Night Out, and it was a major hit. Holy cow. Margherita with Truffle Oil. I'm sorry, WHAT? Let's break it down: perfect mix of chewy and crunchy crust with a wonderful red sauce - not too much, not too little - topped with the most gloriously gooey mozzarella and then just BATHED in truffle oil. I'm pretty sure I licked a paper plate. I'm pretty sure I pushed someone to get another slice. And I'm pretty sure I'd do it all over again for more. Honestly the $12 price tag on this frozen pizza lead me believing that it might be good, worth a shot. Let me tell you, spare yourself and do not buy it. I would have given it two stars if not for the fact that it was the most expensive frozen pizza by at least $3 from Central Market. I don't mind paying a premium for good food, but their Tikka Masala with cauliflower (great idea / miserable execution), was dry, with barely any sauce, crust had the texture of cardboard, and the cheese tasted fake. Maybe because I am a native NY'er with reasonably high expectations for pizza. It's a shame. They tout excellent quality ingredients on their box, seemingly make the dough correctly, but skimp like nobody's business on the toppings. Wish I had taken a picture so you could see how miserable it looked. And lest you think I cooked it incorrectly - I did not! read more

Bola Pizza catered our wedding, and we had a great experience. My husband was initially skeptical when I raised the idea of having pizza at our wedding. It was a relatively casual wedding, and we were considering food trucks, but he wasn't convinced that the pizza would be special or yummy enough to beat out his preferred fare (as a Texan, he was hoping for Tex Mex and/or BBQ). Once we tasted Bola, though, he was sold. They were very easy to work with throughout the planning process-- the first time we sought them out at the farmer's market, they were taking that week off, and after I emailed Christian he told us where to find him and put us on the list for the event so we could taste. In additional to all our informal "tastings" at the farmer's market over the course of the year, Christian and Jamie also hosted us at their commercial kitchen for a "formal" tasting (and we took leftover pizza home). Everyone at the wedding loved the pizza, thought the brick oven was so cool, and best of all, they left us with leftovers. I promise you, after your wedding, you will want to look in the fridge and find 5 pizzas. Seriously. Only thing to consider was that there was a bit of a line because, well, they're cooking the pizzas right there! If we'd thought about it, we would have coordinated when folks went up to get food so they didn't have to wait in line. (But you can't rush greatness.) (As a sidenote, we also get their frozen pizzas at Whip In and Farmhouse Delivery, and they're pretty darn good that way too.) read more

Bola catered my Mercury Hall wedding and the pizza was a hit! Jamie was great to work with and they are very detail oriented. When our head count changed dramatically, they were very considerate and worked with us on the final price of their services. They served the Truffle Daisy, Godfather, and Garlic Two Times. Truffle Daisy and Godfather were amazing, but I wish we had picked something other than Garlic Two Times... It was good, but just didn't stand up compared to the others. The wood-fired pizza trailer is great for wedding photos, as is the pizza making process. Pizza is served buffet style on cast iron Dutch ovens that serve as a pizza stand. They bring their own tables, linens and table tops. My only complaint is that the pizza was served a little later than planned. We ran out of appetizers (NOT provided by Bola) due to my own underestimation. After the caesar salad was served there was a bit of a lag before the pizza. The servers were friendly, helpful, and everyone at Bola worked together to make our day less stressful. I would definitely recommend them to anyone looking for artisan pizza catering! Jamie and Christian are great business owners and even sent us a Christmas card. Whenever we move into a house, I'd love to hire them again for a housewarming party. read more

Man we love stories like this. The folks behind the long-running Austin Food blog (http://www.austinfoodjournal.com/) used to host pizza parties where guests would fawn over their creations. They refined their techniques and crust over the course of a few years by doing so. They then purchased a wood fired oven and put in on the back of a trailer and a short time later Bola Pizza was born. These days Bola Pizza is catering parties all around town and even popping up for regular duty at the Downtown Farmers Market on Saturday's and at the Triangle Farmers Market on Wednesday's. A sort of refined version of San Fran's PizzaHacker. We hit them up this past weekend at the Downtown Farmers Market where we found them with their oven ready to rock at 9am sharp. We took a look at the menu consisting of 3 pizzas (damn we love simplicity). We quickly found out as they offer a Truffle Daisy pie which is essentially their own spin on the classic margherita (daisy is English for margherita) in this case with truffle oil instead of traditional olive oil). Because we wanted to sample the quality of the ingredients we also purchased a Daisy pie with olive oil, sans truffle oil. They were more than happy to oblige and also talk shop with us while we waited. About 3 minutes after being placed in the oven our pizzas were ready to be devoured. The crust was somewhere between what you would find at a traditional wood-fired Neapolitan pizza place using fine 00-type flour and a very good New York style crust. Bola should be commended for finding a difficult median between soft/crunchy & sturdy without being too heavy. The webbing on the crust was fantastic due to the highly hydrated dough and 3 day rise they employ. We really enjoyed the simplicity of the plain sauce they utilized as well. Crushing good tomatoes is not overly difficult in of itself, however these pizzas featured a light fresh tomato sauce that had been picked clean of all skins and seeds, we loved that attention to detail. The cheese on both of our pies was clearly high-quality and fresh (and from Texas to boot), however we felt it lacked an extra punch to our taste buds and on the Daisy pizza with the truffle oil the cheese became a innocent bystander of a drive by shooting thanks to the strong flavored truffle oil. Both of our pizzas were also topped with a pinch of salt and a dusting of oregano in place of the typical fresh basil. The operation proudly purchases many of their meats, cheeses, and produce locally. That combined with the quality of the pizza, their attention to detail, and the downright friendliness of the staff and owners make it a likely place for us to grab a pizza from when we venture to the Farmers Market. Bola Pizza may not satisfy all of the uptight pizza purists from Naples and beyond searching for a certified Neapolitan pie, but they never advertised it as such to begin with. In the end what Bola is putting out is a well-crafted, local, and completely original version of what they themselves like in a pizza. Isn't that the very essence of what doing your own thing should be all about? read more

This past weekend I was at my brother-in-law's birthday party and he had hired Bola to cater after discovering them at a farmers market. The owners are a charming couple that shared the story of how they started the business with us while we waited for the pizza, and it was well worth the wait. The crust is PERFECT. I have never used that word to describe food as there is always room for improvement, until now. It's crispy on the outside, chewy in the middle, light and bubbly, but sufficiently dense to satisfy. The toppings were unique and thoughful (I loved the cheese pizza with white truffle oil), and I was able to eat several pieces without feeling bloated.
