I did have a bunch of their sauces and salsas. None really stood out except their green sauce, which was used sporadically. Birria Tacos - These were very good. The consommé was flavorful, while the beef was tender. The tortilla was crisp too even with the consommé added. Elote Corn - This was rather plain. There was only a crema and cotija cheese present. It seemed like chili powder was supposed to be added, but I did not taste or see any. The corn could have been cooked a little better too. Guacamole - This was tasty. It appeared fresh and paired well with the chips given. I really liked the texture of it too. Chicken Flautas - These were deep fried tortillas with chicken, sour cream, lettuce, and cotija cheese I believe. These were solid. The chicken could have been seasoned a little more, but the tortillas were crisp and held up. Choriqueso Con Tortillas Tostadas - This was melted jack and Oaxacan cheese topped with Mexican chorizo over toasted nixtamal homemade corn tortillas. The cheese and chorizo was excellent, with lots of flavor. It did not look the best but tasted good. The corn tortilla was either old and stale or just fried way too long as it was very tough to chew. It could have made for a great bite. Will I go back? Debatable.

The restaurant was open on Sunday at 9, which is late in the Red Bank area. I had huitlacoche…read morequesadillas which was my first time. It was similar to mushroom in flavor. The restaurant is cute painted with murals. They are a byob establishment. I had a fresh watermelon juice, not sure, but I think it had sugar added. It was so large I requested a Togo cup to take the rest home. My friend had the divorciados chiliquillas they were good, but the eggs were cooked well. We would have preferred runny yolks. Definitely will go back.

I want to love this truck because it's such a fantastic idea but the flavors just fell short. I've…read morehad their regular Mac and cheese grilled cheese and it good but not memorable. Today I tried the Mac and cheese buffalo chicken grilled cheese. I know, it's a lot to handle! While the Mac and cheese was tasty the chicken was incredibly dry. The buffalo sauce saved it in a way and tasted good with the crispy bread. I wouldn't get this again. Stick to their basic grilled cheeses. Some items are just priced too much for what they are.

First of all, I thought the prices were a little high for a grilled cheese sandwich (can't remember what I paid exactly, but I remember balking at the prices). They had a handful of options, but I went for one of the mid-range sandwiches. If memory serves me correctly, they range anywhere from $6-$9. Nevertheless, I went for the avocado & tomato grilled cheese sandwich, which had a pesto aioli. The sandwich tasted okay and had good flavoring, but I didn't find it to be anything spectacular. Not sure if I would actively go out of my way to get their grilled cheese sandwiches, but they make for a decent street fair snack.

I had been wanting to catch them on one of the other many Fridays they announced being in our area and finally made it. I did not use there app to pre-order. I decided to make my way to the mall and grab a lunch/dinner and one of the blue berry Maine Root soda. S to go with it. I ordered the Lobster Grilled cheese (which I was pleased to see came with tater tots even though I did not realize that from the menu description). And the Maine roll. The service was rather quick. This was in part to: there not being any line to wait, the use of the credit card for payment, and the kind cashier taking the orders and dispensing them once they were ready. The wait time for the food was about within 10 of placing the order. Maybe less. The grilled cheese was luxurious. The chunks of lobster meat and the quantity of gooey cheese were the right ratio to my taste. The tater tots were crunchy. I decided to add my own Mike's Hot honey to switch up the flavor a bit. But, there really is no need. Later that evening, I took my cold Maine roll out of the fridge and this was equally well stuffed and flavorful. I would definitely consider making the splurge again. It was a beautiful sunny afternoon. The wind was brisk so not the best for hanging around to enjoy the meal outside if you'd bring a folding chair. Still, worth the round trip ride to grab what turned out to be my lunch and dinner for the day. Thanks to the @Cousins Maine Lobster -Freehold for adding our area to their culinary rounds.
