I had not been a fan of trotters, but this was absolutely delicious. The small delicate locally grown white beans that accompanied the trotters along with caramelized onions that were equally tasty. Our other selection was the fried eggs with a honey drizzle and pork sausage infused with paprika which was delicious. The olive oil drizzle on eggs, I'm going to steal. To the hard working staff, you are incredible. La Pubilla and the very talented chef, congrats! I don't generally eat or want breakfast, but today you got me to eat a trotter's terrine and to appreciate a new way to celebrate eggs. The beans with onions and pork with paprika were delightful.
